Although less dense, these cookies resemble Anzac biscuits in texture. They are easy to make quickly and pair well with a cup of tea.

There are some days I just want to crunch on things and my sisters do not understand. It's not the taste, guys it's the crunchiness. Lemme just put it all in my mouth - crunchy ice, crunchy cookies, crunchy salad, crunchy glass, crunchy pickles, just lemme crunch.
In reference to this post where I talk about baking as a way to handle grief, here is the recipe I use for oat crunchies, gifted to me by my aunt. Note that while this is an American recipe, I have converted it to British measurements. I hope someone enjoys it!
Heat 180g of butter and 2 tbp of golden syrup slowly in a pot. Once it begins to boil, add it 1 tsp of bicarbonate soda.
In a mixing bowl, place 125g of flour, 180g of oatmeal, 80g of white sugar, 170g of brown sugar, 50g of coconut, and 60g of dried fruits/seeds/nuts of your choice. Mix this all together.
Mix in your butter mixture, and press the combined mixture into a lined baking tray. Use a glass to roll it flat, and be mindful of the edges.
Bake for 15 minutes at 170 degrees celcius.
Remove and allow to cool for around 3 minutes, before marking out the squares. Allow to cool for another 10 minutes before cutting the squares and removing from the tray. Once they have cooled completely, enjoy! I like these with a cup of tea in the mornings.
