inspired by a Filipino candy made from dried sweet mangoes and tamarind

Dark ‘n Stormy !
Ingredients:
2 ounces Gosling’s Black Seal Rum (or substitute with any dark rum)
1/2 ounce fresh lime juice (optional)
3 ounces chilled ginger beer
1 chilled shot Death Wish Coffee Vanilla (brewed any way you like)
1 candied ginger slice
1 lime wheel
Directions:
Fill a cocktail shaker with ice.
Add the rum and lime juice and shake well.
Strain into an ice-filled Collins (or highball) glass.
Stir in the ginger beer and a chilled shot of Death Wish Coffee Vanilla .
Skewer the ginger slice and lime wheel and garnish the cocktail.
(Rich vanilla that’s medium-roasted and made with no artificial ingredients.)

Gin Buck
Beautifully refreshing on a very warm Spring day, this Gin Buck is a simple cocktail that allows the spirit to shine as brightly as the sun! Happy Friday!
Ingredients (serves 1):
8 ice cubes
45 millilitres/1 1/2 fluid ounces herbaceous botanical gin (like Wild Burrows)
1/2 small, ripe lemon
chilled ginger beer (like Bundaberg's), to top
Place ice cubes in a Collins glass.
Pour gin over the ice.
Thoroughly squeeze the juice of the lemon halve, and pour over the gin and ice. Give a gentle stir with a bar spoon.
Top with chilled ginger beer.
Enjoy Gin Buck immediately.

Breakfast at Tiffany’s Mocktail
1 serving
This mocktail uses juniper syrup in place of the gin. Top off the mocktail with Ginger Beer.
Ingredients:
3 tablespoons juniper syrup
2 tablespoons lemon juice
2 teaspoons of your favorite jelly
2 dashes of Angostura orange bitters (has a small amount of alcohol)
Ginger Beer to top off
Ice cubes
Garnish: lemon wedge
Directions:
Place the juniper syrup, lemon juice, jelly, and bitters in a cocktail shaker along with some ice cubes. Briefly shake the contents and then strain the liquid contents evenly into a tall glass that has been chilled. Then fill the glass with ginger beer. A lemon wedge can serve as a garnish.
Make this drink to serve at dinner parties, bridal showers, or any gathering with people drinking non-alcoholic drinks.
Note:
Juniper Syrup can be used in place of gin or use nonalcoholic gin.
1 tablespoon juniper berries
¾ teaspoon ground coriander or use 1 teaspoon coriander seeds
1 teaspoon fennel seeds
1/3 teaspoon ground cardamom or use 3 cardamom pods
2 cups granulated sugar
1 cup water
3 tablespoons lime juice
Roughly grind the juniper berries, coriander seeds (if using), fennel seeds, and cardamom pods (if using) or use the ground coriander and cardamom. Place the spices in a pot along with the sugar, water, and lime juice.
Bring to a boil over medium heat and let simmer for a few minutes. Using a fine mesh strainer, strain the ingredients once cool. Pour into an airtight container and refrigerate. If using the ground ingredients use cheesecloth to strain the syrup.

County Clare Cooler !
Ingredients:
2 oz Knappogue Castle 12 Year Old Single Malt Irish Whiskey
.75 oz unfiltered apple cider
.75 oz lemon juice
.5 oz wildflower honey syrup (2 parts honey : 1 part water)
.25 oz benedictine
1 oz ginger beer
Instructions:
Add ginger beer to bottom of rocks glass. Combine remaining ingredients in a shaker tin over ice, shake, and strain into glass.
