Spicy stuffed mushrooms
Rough and ready recipe as I made it up as I went along (as if I ever do anything else!)
Peel some large mushrooms and remove the stalks. Chop the stalks and sauté them in olive oil with diced red onion, crushed garlic and parsley. Squeeze in some lemon juice. Pour in some tomato passata . Sprinkle over smoked paprika, sweet paprika, chilli flakes and sea salt to taste, plus a pinch of stevia if you like. Simmer until thickened slightly and the flavours have melded nicely together.
Spoon into mushroom caps and bake until caps are cooked and the stuffing has browned.
You could add some bacon to this if you were so inclined, or top with cheese before baking.
