Steak night🥰 - and by steak I mean tempeh steak of course💚😅 . Wednesday dinners the last couple weeks have looked like this bowl of beauty and I’m not complaining at all😋 . @woolworths_au stocking tempeh at my local makes it easier than ever to find. From there? you can season, marinade and fry that boi up for delicious consumption🤟🏻☺️ . Hello PPP (Protein Pesto Pasta)👏🏼💚 . Tried a new easy pasta dish in my kitchen last night because they are the best kindaaa ones plus it’s been over a year since I had pesto so I was overdue🥲. Recipe below😇 ⬅️⬆️↗️↘️⬇️ . For the PESTO🍃 You will need: •2 cups of fresh basil •Handful of walnuts •2 big garlic cloves (or 3 regular size should do) •1 lemon squeezed •3 Tbsp of nutritional yeast •Salt and pepper to taste •1/4 cup of water (more if required) •2-3 tbsp of @grove.avocado.oil (otherwise my other choice would be EVOO). ➡️Add all ingredients to a blender and blend on high until thick and just a little runny. I usually add a splash of plant based milk until desired consistency is reached. . What’s next?🥣 1. Get a pot of water boiling and add @sanremopasta chickpea spirals. Their pulse pasta range is packed full of protein and is gluten free. Alternatively you could opt in any pasta of choice. 2. Boil pasta 10 mins or until al dente. Drain water and add pasta into a fry pan or pot on medium heat. 3. Pour pesto all over pasta and stir through. Continue to heat on medium 4. Add cherry tomatoes, spinach and avocado and stir through. 5. Add condiments. I added a tsp of paprika and mint. Salt and pepper to taste. 6. Once the pesto and pasta is warmed through you are done. Turn off heat, plate up and enjoy😋 . Should get you two servings with one pack of pulse pasta. This time I stretched my pesto over two packs and had leftovers.
