Tasty Chicken Soup
6 servings
This homemade chicken soup not only tastes great but makes your home smell great too!  It is also full of nourishing ingredients like chicken and vegetables but also has ingredients like turmeric that may reduce any inflammation you might be experiencing.
Ingredients:
1 tablespoon canola oil (or any vegetable oil)
6 teaspoons of garlic cloves, minced
1 medium yellow onion, diced
12 baby carrots, sliced
2 celery ribs, chopped
1 tablespoon ginger, chopped
1 teaspoon ground turmeric
6-7 cups chicken broth
1 pound boneless, skinless chicken thighs
1 teaspoon chopped rosemary
1 teaspoon thyme leaves
½ teaspoon salt
Black pepper, freshly ground
½ cup pearl barley
Directions:
Place oil in a large pot that has been heated over medium-high heat.  Then add the garlic, onion, carrots, and celery and cook for a few minutes.
Next add the ginger and turmeric.  Cook for half a minute to let the spices mix in and blend. 
Add in the chicken broth, chicken thighs, rosemary, thyme, salt, and pepper.
Cook over high heat until the soup mixture boils then add in the pearl barley.
Lower the heat to let the soup simmer for about 20 to 25 minutes to allow the chicken to cook and the ingredients to blend and cook. 
When the chicken is cooked remove from the pot and dice the chicken on a cutting board.  Add the chicken back to the pot and serve with crackers.  If needed feel free to add more chicken broth.
Note:
Canola oil is used as it has a high smoke point.
Jars of minced garlic are available in the produce section of well-stocked grocery stores if you don’t feel like cutting up the garlic.
Jars of chopped ginger are also available.
Chicken thighs are used instead of chicken breasts as they are juicy and tasty.
Pearl barley is available in the rice and dried bean section in well-stocked grocery stores.
Use fresh herbs if they are available and affordable.  Otherwise, use the spices in the baking section.  Of course, if you have the spices already use them.

Growing: (Baby) Carrots

If you are following my gardening adventures, then you’ve probably heard me say (read me write) that a lot of it is learning, often through trial and error. I have grown my first (and only, so far) this year, after two fruitless attempts (well, the second attempt was not fruitless, but the birds reaped the harvest, not I!)
And so, any success, anything growing happily in my Kitchen Garden, is a sheer burst of joy. 
Like with the s, I’ve sown carrots for the past few years, but never had the chance to dig a beautiful orange root out; until today. Thus, if they are rather tiny roots, and my intention was not, at first, to grow Baby Carrots, I am still really happy with them!
I sowed them on the 30th April --perhaps I shall sow them earlier next year-- by the wire fence besides the Nasturtiums. It was one of the things I learned: Nasturtiums repel white flies which are deadly to carrots; and they also improve the taste of any veg they are planted by!
So, my carrots sprouted and grew. One of the mistakes I may have made is not thinning the young seedlings enough, not leaving them enough space to grow. And although I was careful, I may have given them too much water. Root vegetables require water to develop of course, but not too much. If the are just lacking a bit, they will need to dig deeper in the soil to find it, and thus expand!
These are notes I am taking for the next season; to grow proper sized adult carrots. For the moment though, I am chuffed with the Baby Carrots I’ve grown, crisp and truly tasty, with a good snap and sweetness to them!
