What makes a soul more delicious for a demon?
⚠️ I end up going off on a tangent! ⚠️
Tasty souls for perverted gourmets
It might differ from demon to demon, but Sebastian seems to like putting his master through painful experiences. Not so much the physically painful kind but the emotionally painful kind. But he's seeking out flavors he's never tasted before -- or are at least still considered somewhat novel to him -- so perhaps his previous masters, who were all much older, lacked such experiences in their lives. Or perhaps they were just more superficial and didn't let things get to them, while our earl has very deep emotions. Judging by what the demon cultists asked for, like money and fame, those might be the more typical wishes people make. Not revenge for the sacrifice of his brother, the torture they endured, and the deaths of their parents and household.
Generally speaking, I'd say that demons who have given up on "messily sampling" souls have developed a palette of sorts and start to seek out the flavors they love best. And, like Sebastian, they might pick up the idea to manipulate the experiences of their masters, so that they can create flavor combinations that are new to them.
Young masters are best for this, because they are still learning about themselves and the world. Demons can therefore manipulate the souls of masters, especially younger masters, and create the souls they find particularly tasty.
Tangential information under the cut, including Undertaker's goals, as well as references to Jujutsu Kaisen and The Promised Neverland.
It reminds me of Mahito from Jujutsu Kaisen because that Curse can manipulate souls, changing the actual shapes of those souls and the bodies they inhabit.
Which is why I wonder if Undertaker got the idea of "aptitudes" for F. O. L. Orphanage from his dealings with demons like Sebastian. Perhaps specifically from watching Sebastian and our earl... and then taking real Ciel along to witness as much of his twin's doings as possible. This makes the twins' souls as alike as they can be. Similarly, forcing all these orphans to fall strictly into four categories that match their star lords -- Pomeranians to real Ciel, Corgis to Doll, Mastiffs to Polaris, and Collies to Layla/Al -- and seeing how well they match their "aptitudes", Undertaker will see which kid from each class ends up matching their respective star lord best. The top student from each class is likely to be used in experiments to see if their souls are the right shapes to be transplanted into their respective star lords. All the "failures" in each class are likely just the blood supplies... until each top student is deemed ready for harvest... when they will likely be bled out just before their soul is harvested.
Even Undertaker has vaguely hinted that his approach might be similar to Sebastian's -- that only their goals are different. At Weston, in ch84, Undertaker says:

And in ch141, Undertaker explains that he's been taking real Ciel to see what our earl has been doing. Real Ciel had a blank stare at Kelvin's Manor, was a bit mindless on the ship, and seems to have been a quiet viewer at Weston, but you can see how he was being "improved" over time. Real Ciel could only take in a limited view of the activities, but he retained them and committed them to memory. And it makes him claim to have been by his brother's side the whole time.

In ch155, Jane talks about the shapes of souls, but she apparently doesn't really understand it and thinks that Heathfield is talking nonsense. Unless she's lying about it not making sense to her....

In Jujutsu Kaisen, Mahito explains that souls are tangible to him, as if they are any other body part. And when he changes a soul's shape, the body changes to match it. We get this scene:

In s2 of the anime, Claude uses various techniques to deepen and emphasize the similarities between "Ciel" and Alois/Jim before putting Alois' soul into "Ciel's" body, despite the fact that "Ciel" still had his own soul. And I'm half expecting Yana-san to eventually let Undertaker give us a scene where he explains how he's been manipulating those children's souls to prepare them for transplant. Maybe she'll even let us have an in-story explanation for why Sebastian looks a bit like Vincent (or more like grown-up Ciel?). Though I'd be happy if she even just got down to the truth of it in a tweet or a future Artworks book.... I figure it's much as Mahito says: the body conforms to the shape of the soul. This could also be used to explain why reapers look the same as when they were human... if they are reborn, as I theorize.
Ch200 has The Promised Neverland vibes all over it, as does the entire F. O. L. Orphanage assignment. In TPN, some children are kept in orphanages until they are fed to demons. In Black Butler, these kids are possibly being kept in an orphanage until their souls are ready for a reaper to transplant them (instead of getting eaten by demons). But the concept is very similar. Sebastian would possibly applaud the basic idea in TPN, as if the orphanage could be used as a demonic culinary institution... or something. (I've also just realized the kids in TPN have tattooed or branded numbers on the fronts of their necks, much like Finny's "S-012" on the back of his.)
In ch200, Theo even says that some "pervert" is "manipulating" the children.

He might actually be talking about Undertaker and not even know it. It's quite possible that none of the kids have met him or even seen him, since orders are being sent by telegram. But they have to assume the person running the place is a pervert of some kind.
And we know that Sebastian and Undertaker are being depicted as foils for each other. Ch111 vs ch200:

So, if Sebastian is a "perverted gourmet", as Yana-san calls him, perhaps Undertaker is a perverted... physician? Perverted surgeon? It takes me right back to the parallels to Dr. Andonuts in the Mother game series... and Josef Mengele, the Nazi "Angel of Death" who had a particular interest in (obsession with) studying transplant technology on twins.
Though Undertaker might actually leave the medical side of it all to the Viscount of Druitt -- and we know how big a perv he is! -- or to someone else, now that Stoker is dead, the transplantation of souls would have to be attempted by a reaper.
Yeah, I definitely think Undertaker is using oddly similar methods to shape young souls -- by the experiences they are allowed/forced to have -- but just with different goals in mind.

Both of them aspired to be the strongest. Erza, for revenge. Midnight’s always been alone, so he needed to be stronger so he could protect himself, so he could finally sleep undisturbed without any criticism or abuse. 
Erza isn’t violent at heart, Erza wants a peaceful life of just living well, comfortable, and free. Midnight just wants a place to sleep, he could care less about wars and chaos. Despite both of them no longer resembling who they once were-- they’re both in the end, pacifists at heart.
They’ve just gone too far in the path of strength to turn back again, so they have to live with their strength now. 
Erza enjoys herself as the strongest because she can protect her family, and honestly, I think becoming the guild master would be the greatest resting point of her character arc. She’ll be able to enjoy her safety and freedom from a place of holding down the fort, just like Master Makarov. She can finally have her quiet peace, and only need to fight when truly necessary instead of constantly being put in the very front to endure the hardest hit first. 
As for Midnight, I do hope Crime Sorciere is better handled or fleshed out for anyone other than Jellal, but I like the idea of Midnight on a journey of self-discovery to find out what he truly wants, without Brain’s influence. If he gets any time to truly have a moment of redemption, he can eventually get to a point where he’s actually the spoiled baby brother of the family, and sleep all day because he trusts the other O6 to protect him. It’d just be really sweet to see someone like Angel or Racer ‘excuse you, don’t disturb his sleep??’ and going absolute ham over enemies. 
(Also, just noticed: Is Midnight able to sleep through noise and battles because he’s bending sound?)

Treading across the ground strewn with exquisite crimson fragments, Xie Lian walked over slowly. When he saw that Hua Cheng’s shoulders were littered with a few red blossoms, he wanted to dust them off for him, but suddenly realized that gesture would be overly intimate. So, he forced down the urge and tucked his arms behind his back, smiling.
“Not only can you bring forth bloody rain, you can also make flowers shower. I didn’t know that. How fun!”
Hua Cheng also walked towards him, easily dusting off the petals on his shoulders, also smiling. “This was just something spontaneously inspired, a trick I only just came up with today. Originally there should’ve been the usual blood rain, but I suddenly remembered gege was also present, and wouldn’t you blame me if you were to be drenched? So I held back at the last second, and transformed it into flowers instead. I’m glad you found it fun.”
However, while Xie Lian wasn’t drenched, Pei Ming was completely soaked.

Ch166, What is Ran-Mao? Really.
Completely out of context, I initially mistook this...

...for Sebastian going into demon form, with black tendrils flying out from his hair. I thought he had somehow kept an eye (or three) on the events taking place at Heathfield Manor, and that he waited until the last possible moment to jump in and save Mey-Rin and Ran-Mao.
But no. In context, it’s clearly Ran-Mao, who must not have truly been knocked out... or at least not for very long. I suspect she completely faked being subdued and knocked out, particularly since she apparently gave Chris Heathfield the beating she told Mey-Rin she would (if she found incriminating evidence) back in ch155. 🤛

And, damn. She’s fast. I mean, we knew that, but so fast that she moved and got into attacking position before Jane could even register it? Jane’s crazy fast, too.... 👀
Now I’m back to wondering if Ran-Mao isn’t entirely human. Maybe any blood they were collecting from her isn’t useful? Idk. 😐
Sure would help explain why Lau rose so fast in the ranks at Qīng Bāng.... 🤔

One day, one maid?
The way chapter 155 presents things, it looks like Annie, the maid the baron took the previous night, disappeared in the morning. The following day, Ran Mao was taken, but Ran Mao apparently also disappeared the day after that. This makes it sort of one day, one maid.

Jane says “the master liked her... and he might not let go of her for several days.” This is suspicious. Why did the previous maid completely disappear, and Ran Mao was “taken by the master”?
My hot take is that her blood type might be one of the rare ones... “Canopus”, I’d say, or maybe even “Sirius”. So, while maids with other blood types could be taken and discarded of easily, maybe it’s more useful for them to keep a maid with the blood type B or AB alive. (Yes, it would be more useful - you could get more blood, but it’s a higher risk of being discovered)
It would explain why Jane also seems surprised and considering “something” when Mey Rin tells her Ran Mao didn’t return in the morning.
Another hint towards this is what Jane said that the baron is looking for in the girls.. the shape of the soul.

To me, this says “blood type”... or there could be experiments done on the girls’ souls. I’d say blood type is more likely, but I’m keeping the ‘experiments on souls’ option for further discussions, because it’s interesting.
The baron also tells Annie, the maid from the previous night, that she wants to see her naked soul. (panels not included for rating purposes xD). As poetic as that sounds, I think it’s another hint to what they are actually looking for from the girls.
Now, if Ran Mao was actually taken with this objective, collecting blood, the way she looks in this panel has me thinking of some sort of drugs... again.

We know for sure they used some sort of drugs to get people to sleep in order to collect their blood.

So, if blood is the objective, drugs should be involved here as well.
However... This is Ran Mao we’re talking about. She should have some significant resistance to some drugs, considering she lives with Lau in opium dens. We also don’t know for sure if she’s a human or not.
So yeah... I don’t think Ran Mao should be that affected by whatever drugs they’re using. Instead, I’d love to see that she would play along and pretend to be affected, so she could gather more information.Yes, I’d love to see that.
Other possibilities as for why she didn’t return are that:
2. Mey Rin (who says is her sister at the mansion) seems suspicious, so they didn’t want to kill her. However, in this case, they shouldn’t even have taken her at all, I feel, or at least let her return.
3. Ran Mao actually attacked the baron... A possibility I am not disregarding quite yet. She did say -

And she doesn’t seem to be the best detective, so to say, so she could have attacked him in some way...  However, I feel like Jane would have known something, in this case. So yeah, keep this in mind.
These are the possibilities I thought of for now. The rate at which they are making the maids disappear is quite alarming, though. Annie is already out of the picture. For whatever reason, Ran Mao was also taken. We have yet to see the other maids’ reactions to whatever happened to Ran Mao, but we’ve seen their reaction to Annie’s disappearance.

This is a clever shot, actually. A beautiful portrayal of useless gossiping done by foolish people. Notice how the maids, who are all so different, become identical in this situation.
It is hilarious how, aside from Mey Rin (and Ran Mao? who were already informed that there might be something wrong about the manor), and Jane (who definitely is involved in whatever’s wrong), none of the other maids are suspicious, even in the slightest, that Annie disappeared. Notice that some of the maids have been there longer than the recently hired ones, if the baron(and/or co.) is going through maids at the rate of one per day(~ish), surely they should have noticed something... however, they did not. Instead, they foolishly wish the master would “summon them once.”
Nonetheless, I liked that detail, and I’m interested in the “shape of the soul” bit mentioned by Jane. That could turn out to be interesting.

When characters have the power to cast illusions to terrify their opponents, the thing about them is that what they’re projecting is most likely what they themselves fear the most. 
Midnight’s impression of a nightmare is an overpowering, large opponent, and a one-sided display of gruesome death and despair. 
And we see right before this, that Midnight credits this fear to Jellal.

So it’s incredibly ironic that immediately, what wins against his impermeable illusions is Erza’s eye, a scar she also associates with Jellal. Not physically, because that was from the guards, but the fact that she lost the ability to cry out of that eye for a very long time because of her trauma.

Erza and Midnight both dwell very deeply in their nightmares. But Erza’s moved on from it, and it’s become her strength-- while Midnight, inevitably, is still stuck inside of it, turning outwards to hurt others with the same pain instead. 
Thematic parallels.

After entering the valley, Hua Cheng had been watching the two tall mountains closely. “What is it?”
“The ‘Kiln’ of Mount Tong’lu, what is it exactly? Is it really just a giant stove?” Xie Lian asked.
Hua Cheng smiled faintly and brought his gaze back.
“Of course not. But, it’s a good question, gege.” He raised his hand and pointed. “It just so happens we can see it now.”
