Tonight's easy delight: some makeshift Greekish stewed green beans and tomatoes with frozen meatballs thrown in. (Just simmered on the stove, unlike that particular recipe, but the proportions look good.) You can add basically any protein you want, and it'll probably be good. Over some basic onion-garlic-veggie broth Basmati pilaf, with some actually Balkan feta-type cheese and pickled grilled garlic on the side because we had both open in the fridge.
Pretty tasty and filling!

My Mom's Famous Meatballs
Ingredients
♡ 1 1/4 lb (0.5 kg) ground turkey
♡ 1 egg
♡ 2 tblsp chopped Italian parsley
♡ 2 tblsp minced garlic
♡ 2 tblsp grated parmesan cheese
♡ 1/2 cup (25g) potato flakes
♡ 1 tsp salt
♡ 1/4 tsp pepper
Instructions
☆ Place ground turkey in large bowl
☆ Add the egg, lightly beaten
☆ Add all other ingredients
☆ Stir around with a spatula or with fingers. Make sure the ingredients are incorporated evenly into the meat
☆ In a large frying pan or wok, drizzle some olive oil. Turn up the heat to slightly below medium
☆ When the oil has heated, scoop meat into pan using a small ice-cream scooper
☆ When one side of the meatballs are brown, turn them over and cook on the other side
☆ When meatballs are fully cooked (check this by poking the inside with a chopstick and seeing if it is no longer pink), place them on a plate with a napkin for draining the oil
☆ Serve atop spaghetti or by themselves

okay y'all
So I finally found out what's been going on with my digestive system - turns out I have Celiac's disease, which basically boils down to No More Gluten For Me.
Good news is, we already did this whole song and dance with my sister years ago, so I'm not starting from square one.
That aside, I'm trying to make a list of foods and recipes that I want to find. If anybody's got any suggestions, I'd love to hear them!

BALLS!
Not sure this is the most balanced meal ever, but it's certainly tasty and filling enough for no more time and energy than it required. And we do have apple goodness in the oven, to round things out a tad. 😁
The Household Swede also got me hooked on the very low spoons meal combo of packaged meatballs + oven fries + mix/premade Beasås Dearest. Tonight we had the little garlic mashed potato things lurking in the freezer, and both decided that it was a balls kind of day.
Besides the usual tub of plain bearnaise, there was also this in the fridge. Not sure how much I trust old Erik's expression there, but the sauce isn't bad. Not much heat, but a nice little touch of extra flavor.
