OATMEAL COOKIE Experiment Time! To make a basic healthy oatmeal cookie, simply combine a mashed ripe banana, 1 cup of oats, and about 2 tsp cinnamon. Form into cookies and bake at 350 F (180 C) for 30-40 minutes. They're a good high-protein nutritious treat, but I was curious to see what add-ons could make them taste even better. I ran an experiment. Here are the results: · Oatmeal + Raisin = Very Good. The fitting sweetness of raisins makes them definitely worth the add. · Oatmeal + Raisin & Walnuts = Very Good. Adds a bit more texture and variety. · Oatmeal + Mango = Excellent! I didn't know fresh mango chunks could make an oatmeal cookie taste so yummy. · All of the above = Wow! This one was the clear favorite. It was the sweetest, tastiest, and had the best texture. Pumpkin Pie with a Oatmeal Raisin Cookie Crumble Crust

I have been busy writing the third chapter of my dissertation. I know the title of this recipe post is a mouth full, but the way this pie tastes, a mouthful of is perfection! Earlier this week, having the ingredients to do so, I made oatmeal raisin cookies. The next day, the cookies were so soft the basically merged into one pile of brown sugary goodness. Not wanting to chomp on crumbs, I decided to make a pumpkin pie, using the cookie crumbles as a crust. Cookie Ingredients: 2 cups quick oats 1 tsp baking soda 3/4 brown sugar 1 cup raisins 1.5 cups flour (I used oat flour) 1/4 coconut sugar 1/2 tsp salt 1 TBSP vanilla extract 1.4 water 1 cup soft butter Cookie Directions: Heat oven to 350 degrees In a large bowl, beat butter, sugar, and vanilla Add flour and salt Mix baking soda with boiling water, add to bowl Add quick oats and raisins Add 1 tsp of mixture to a parchment paper lined baking sheet, baking about 6 cookies at a time Bake for 10 minutes Remove from oven Allow them to cool overnight Pie Crust: The next day, I crumbled the cookies by hand and them placed the crumbles into my food processor with a little bit of melted butter and more raisins Add the mixture to lightly greased 9 inch pie dish and spread evenly across the bottom and sides Pumpkin Pie Ingredients: Preheat oven to 400 degrees 1 15 ounce can pumpkin puree 2 tsp cinnamon 2 tsp baking powder 1 tsp pumpkin pie spice 1/2 tsp salt 1/3 cup flour (I used oat flour) 1/3 cup and 2 brown sugar 1 cup oat milk 2.5 tsp vanilla extract 1 TBSP ground flax Directions: Add everything to a bowl and mix well Pour over crust Place in oven for 25-30 minutes Set out until completely cool (a couple of hours) Cover and refrigerate over night to set Enjoy!!!
