This is a perfect example that you can eat a lot of food for lower calories and still so delicious while also losing weight, and the best part is it’s so easy to make! So much flavor coming from every component in this dish, the chicken is juicy & well seasoned, rice is flavorful and that Green sauce brings it all together so well!
For the Chicken marinade:
• Chicken breast cut into cubes (300g raw weight)
• 1 tsp garlic powder
• 1 heaping tsp paprika
• 1 tsp oregano
• 1 tsp cumin
• 1 tsp or 1/2 tsp red chilli flakes
• 1 tsp salt and pepper
• 1/2 or 1 lime juiced
Mix till it changes color
For the green sauce (you will only use a small amount from all of this)
• 1/2 medium avocado (about 50g)
• 100g fat free or low fat greek yogurt (any yogurt works)
• Handful coriander/cilantro
• 1 tsp garlic powder
• 1/2 tsp salt and pepper
• 1/2 lime juice
Quick note: if you want the sauce to be more runny then add water gradually till desired consistency
For the cooking process:
- cook the chicken for 4 mins on each side and set aside. I used cooking spray but you can use olive too
• 1/2 red and green bell pepper
• 1/2 red onion
- Cook for 5 mins till soft
Mexican rice:
• season with the same spices you used for the chicken + 1-2 tbsp of tomato paste
To serve:
• 140g cooked Mexican rice (per serving)
• Chicken pieces
• Shredded lettuce
• Bell peppers and onion
• 40g sweetcorn (per serving)
• 40g black beans (per serving)
• 20g low fat sour cream of yogurt
• Generous amount of green sauce (about 20g)
