OK you know what, if we're gonna talk about Bake Off then fuck it, let's do this.
It used to be this wholesome, lovely show! We used to watch it for the bakers! And the learning! And the light banter and occasional bit of coy innuendo! What happened?
Channel 4 happened. When they bought the show they made a number of changes, most of them Not Good™️. Not just in the sense of them resulting in a lot of 😬 and 🫠 moments, but in the sense of how they changed the show's purpose, atmosphere, and brand.
Look, I know most people are just like, "whatever, it's just a baking show," and yeah, sure. But it's one of the UK's most successful TV exports, and where it once shifted the tone of reality competition to being wholesome and supportive of contestants, it's since moved towards creating tension at the contestants' cost. So aside from the fact that most people watching it signed up to watch a nice show, it has also shifted the goalposts of what that even means. And that, lovelies and gentlefolk, is some bullshit.
I decided to break my rant analysis into four main parts: theme weeks, the hosts, the judges, and the bakers. Let's get to it!
Theme Weeks:
If you watch Bake Off, you know the show's always had a specific theme for each week. The staples that come up in most seasons are:
cake
biscuit
bread
pudding/dessert
pastry
patisserie
Less common but consistent are things like caramel and chocolate week.
Then there are the fun episodes! When GBBO was on the BBC, this started out with things tea week, tarts, pies, tray bakes, basically little tangents still focused on emphasizing specific baking skills. In Series 6 (still on the BBC) they had their first nation-focused theme week with French week -- fairly innocuous given that a lot of patisserie is French, France and England share much more culture than either cares to admit [Norman Flag dot gif], and it was a nice change from watching Paul make the bakers do recipes that involved boiling things while talking about how wonderful boiled doughs are (are they, Paul? Are they?).
The show kept mixing it up with innocuous themes like advanced dough and alternative ingredients weeks, European cakes, Victorian week, batter week, and botanical week. And while it was frustrating to watch Paul Hollywood mispronounce things like the Hungarian Dobos Torta and lecture bakers on babka when he clearly knew nothing about it (or about Jewish baking in general, go off Past Me), the show's general attitude was that the judges had their own opinions, which were separate from the immutable facts around the chemistry of baking (more on this later) and shouldn't affect how bakers are judged.
After the show moved to Channel 4, the number of themed weeks increased and more of them focused on specific countries. In 6 seasons on the BBC, there were only two country-focused theme weeks, and in 5 seasons on Channel 4 there have been five. And while they've also had themes like vegan baking, roaring 20s, the 1980s, spice week, etc. the show has really started to go hard on exoticizing other cultures in outright disrespectful and racist ways. There's been Italian and Danish week, German, Japanese (it wasn't, it was East Asian week), and now Mexican week (which doesn't touch on interspersed Jewish bakes that didn't get a theme week, like versions of bagels and babka set as technical challenges that were borderline hate crimes and mansplained by a guy who has no idea how to make either and once wrote in a cookbook that challah was traditionally eaten during Passover). Each time the hosts played up the theme with racist bits and jokes that can be used as evidence in court if your case is "why should shows with scripted content have a professional writing staff."
Which touches on other issues the show has now...
The Hosts:
When GBBO was on the BBC, the show was hosted by ✨Mel Giedroyc✨ and ✨Sue Perkins✨. They encouraged the bakers! They'd hold stuff for them sometimes! They were interested in them! If a baker had a breakdown, they would start singing copyrighted material to render the footage unusable! When the show moved to Channel 4, they left, though I'm not unconvinced that Channel 4 offered them impossible to accept contracts to force them out so they could rebrand the show. They replaced them with Sandy Toksvig and Noel Fielding. Sandy was a lovely host in the vein of Mel and Sue, and she and Noel had a relatively sweet rapport, but she left a few seasons ago and was replaced by Matt Lucas.
Noel Fielding is mostly known for his quirky brand of comedy, a sort of British Zooey Deschanel who's goth from the neck up, an upperclass British gay divorcee from the neck down, and basically an early 60s Beatle re: trousers. Matt Lucas has almost definitely never watched a single episode of GBBO and his most redeeming quality is his thinly veiled contempt for Paul Hollywood.
The two treat the baking tent as their personal playground. Far from the supportive attitude of Mel and Sue, they tend to get in the bakers' way during the most stressful moments, especially when they try to do hilarious "comedy" bits (I can't not put that in quotes) like Noel's talking wooden spoon thing, or Matt talking over Noel to do time calls. During theme weeks like Japanese and Mexican week, they do culture-specific bits that are both racist ("just Juan joke" and "is Mexico a real place?") and unsurprising, given that both Matt and Noel did blackface on their respective sketch shows and absolutely could and should have known better because it was already the current fucking century.
All this to say, there's now a separation between the bakers and the hosts, as if they're on different shows. The hosts are doing their own thing and the bakers are doing GBBO. The show has gotten meaner to the bakers, and the hosts aren't there to support them anymore, they're just there to be comic relief. Because when you refocus your show on stressing the bakers the fuck out, you need a forced laugh I guess ¯\_(ツ)_/¯.
The Judges:
First of all, a sincere congratulations to Paul Hollywood who managed to squeeze I jUsT cAmE bAcK fRoM mExIcO aNd YeT sTiLL pRoNoUnCe PiCo De GaLLo As 'PiKa De KaLLa' and I aM aN eXpErT oN s'MoReS wHiCh aRe MaDe WiTh DiGeStiVe BiScUiTs AcCoRdiNg tO mE, aN eXpErT oN s'MoReS, just two in a giant pile of astoundingly wrong hot takes, into a short enough time span that they all aired within Liz Truss's term as Prime Minister. A true man of accomplishments.
In the interest of fairness, I need to preface this with a disclaimer that, due to the fact that I've been watching Bake Off for most of its run, I'm biased. Specifically, I can't stand Paul Hollywood's smarmy, classist, egomaniac ass because he's proven time and again he's more interested in looking smart than actually knowing what he's talking about. Since the show moved to Channel 4, they've changed the occasional handshake Paul would give bakers to the HoLlYwOoD hAnDsHaKe™️. It's gone from being an emphasis of someone's skill to a goal, a reward, and one that emphasizes the judges' place above the bakers.
The judges used to function as teachers, imparting their skills and insights to the bakers. When the show was on the BBC, the voiceover leading to a judging would focus on the bakers' work being finished, saying how it will now be evaluated based on their skill and how well they met the brief. The voiceovers now, on Channel 4, focus on the judging (literally saying something along the lines of, "the bakers will now be judged by Prue and Paul"). There is a clear distinction Channel 4's producers have made, to mark that the show is now about whether or not the judges approve, not whether the brief was understood and executed well. On the BBC, it was irrelevant whether the judges liked a particular flavor, as long as the bake was well-made. Now, the bakers are expected to know the judges tastes and cater to them, which is frankly bullshit. A judge doesn't have to like a flavor to know whether or not it was executed well, ie. is it carrying a bake and was it meant to etc.
The judges have been turned into a brand. Cynically, Channel 4 knows that by building them up and focusing the show more on them, they can exploit their image more for profit. In the process, they've become much more biased and their own biases have come out as well. Most recently in the flaming dumpster fire that was Mexican Week, Paul Hollywood tried to intimidate a baker by telling them he had just gotten back from Mexico (which must have been a fruitful learning trip if he couldn't even learn how to pronounce pico de gallo correctly). Where do I even start with this? Here's an amateur baker from England (the show specifically casts middle and lower middle class bakers for the most part??) who likely can't afford trips to Mexico, who lives in a country with incredibly limited access to Mexican cuisine, who is expected not only to understand the cooking and baking traditions of a completely different culture but to do so well enough to play with it and do something creative with it. On top of which, one of the judges is now using his privilege of traveling halfway around the world as some kind of leverage, as if this were a bar that any amateur British baker could clear.
Prue, meanwhile, has openly asserted her biases against cultural flavors and textures, prioritizing her own personal preferences over them, as if they were in any way relevant to the skills and knowledge necessary to execute the tasks she sets to the bakers. She has also been consistently elitist, criticizing bakers for choices they made that were clearly informed by their experiences within income brackets that are too low and foreign for Prue to comprehend. She once had a go at a baker on a Christmas special because his Christmas dinner themed bake didn't have a turkey, even though it was clear from the stories he shared of his own Christmases that his family likely couldn't afford one. "It's not really Christmas dinner without a turkey," Prue said into the camera angrily while sitting on a chair made of live orphans and telling the ghost of Christmas Future to come back when he had another museum gift shop necklace for her to round out her collection.
The show is no longer about which baker has the best skills. It's become about which mortal can appease the gods of Mount Olympus, ie. the judges.
The Bakers:
Remember when the show was about them? Channel 4 doesn't! Because this is a reality competition show, the bakers are chosen both based on their skills, as well as cast-ability. They're cast as characters, distinct from each other, from different areas, age groups, ethnicities. All of them are amateurs. All of them are middle or lower middle class. They've ranged from college students to supermarket cashiers to prison wardens to scientists.
Something I noticed when the show moved to Channel 4 is that the baker who goes home in the first week is always wildly behind the rest in skills. I have no proof of this other than my eyeballs and deductive reasoning skills, but I think that Channel 4 deliberately casts a ringer each season who they think will be an easy send-off in the first week, just to get the audience's feet wet.
Anyway, like I said, this show used to be about the bakers - about them building skills and learning, and having walked into the tent with a self-taught foundation and understanding of the processes and chemical reactions involved in baking. When the show was on the BBC, the end of each round had some (often brief) moments of tension - will they finish in time? Will they get their bakes on the plate before time is up? Did they forget to add sugar to their batter and only remember at the last minute? In the end, they usually managed to finish and we'd all breathe a sigh of relief and think, yeah! You go, Bakers Who I'm Rooting For!
Now, on Channel 4, the end of round drama has been stretched to be so much longer that they've composed extra music for it. The bakers often seem out of their depth, whether because the instructions for the technical challenge are too vague (bake a lemon meringue pie??? As if anyone in the UK under the age of 60 has had one in the last decade???), or because they were expected to bake something that required a more than a basic foundation they weren't told of. Often it seems like they just aren't given enough time, a tactic used by reality competition shows to manipulate contestants into giving the cameras more dramatic content. On top of all this, the hosts get in their way, instead of helping them plate their bakes. As has been pointed out before, when everyone fails the challenge, the real failure lies with whoever set it.
In conclusion:
The show no longer exists to teach the bakers - and the audience - skills or knowledge. It now manipulates contestants for dramatic effect and prioritizes showing conflict over wholesome content. Channel 4 sees the bakers as social media content they can churn out season after season, and don't care about them because in a few months there'll be a new batch to exploit. Meanwhile, the judges are also out of their depth, co-opting recipes from other cultures and butchering them horrendously, while the camera gives them nothing but status as they hold bakers to the expectation that they learn how to make things very much the wrong way. If you saw any of the tweets about Mexican or Japanese week, or read my post on how Paul Hollywood isn't allowed to go near babka ever again, you'll understand.
So what would fix all this? Scrap the current judges and the hosts altogether. Bring back Mel and Sue, and replace the judges with expert bakers who have a love of their craft and want to share it with others. The draw of GBBO used to be its warmth and comfort - if Channel 4 isn't going to start its own version of Master Chef For Bakers, then it needs to stop trying to find a balance of how it can insert that vibe into GBBO. It can't. That's not a thing. Stop trying.

first and foremost — hes half japanese because i remember his aside counterpart being japanese iirc and i thought that was really cool and wanted to implement that into my own little hc (also he speaks like a dozen languages bc of another thing i'll go into detail with in a bit
so many different facial features, scarring (theres a very elaborate reason for this tbh), moles, freckles, etc all bc why not?? (freckles is primarily bc of my bestie crow and now im obsessed)
lashes bc why not, give every man a pair of lashes i think theyre pretty
PIERCINGS. so many piercings. this is primarily because i am a very firm believer that tabi gets piercings done because he wants to feel human again so he finds comfort in decorating himself as much as possible for that reason and also the aesthetic

a lot of tater's hcs infected my brain hehehehehe especially the tail and his hands still being what they were when they were cursed (also. paw beans. /vpos)

speaking of said certain someone, he and agoti do each other's hair a lot simply because its really fun and provides some stimulation, and also because it helps tabi practice with self care and such

sometimes he forgets certain words in english and has to resort to using what theyre called in russian

Hello I wanted to say that all of your art particularly your character designs put in mind for me the image of really pretty desserts and pastries and sweets and things (not candy exactly but sometimes candy, but as i said, mostly just desserts) and this makes me wonder if any of your characters have any treats that they enjoy alot…? Particularly wondering if any of them specifically have any favourites. Iknow i say this very often but i truly love your art so much and it means so much to me. I care about your characters and the writing you’ve done for them so much it is truly a testament to your incredible mind. But to summarize yes my question is about if any of them have any desserts/sweets that they like (or just their favourite foods in general)! Thank you!!!

AKITO: He likes chocolate a lot I feel? Sacher cake maybe, since it has jam as well. Maybe he'd also like fruit+chocolate fondue, but it's too fancy for him he's only maybe tried it once... after moving to Japan he takes a liking to crepes
JUNPEI: poppy seed pie is the only sweet thing he'll have. He once had a girlfriend who liked to bake for him, but he gave all the pastries to his elder brother without sparing them a look
HIKARU: HUGE SWEET TOOTH but mostly limited to hard candy. He really likes marzipan, he was permitted to eat the marzipan newlyweds figurines from his moms wedding cake when he was young and it was his best day ever
ARISU: she likes bitter and savory things much more than sweet things. But if she had to pick something on the sweet side she'd have plain puff pastry
ODILE: he doesn't eat sweets and desserts because he's overly disciplined. He tried a bite of sour cherry strudel that Akito made and didn't like it
THE LEADER: he likes Japanese souvenir sweets like daifuku. He also likes turkish delight a lot, and will sometimes frivolously demand his patrons gift it to him

yayaya hello hello thank you for the ask 🫶🫶🫶 i will share about all of my romantics + kirby!!! hopefully that's okay :D
scaramouche makes dolls for each of the noes!! he believes that having a doll of himself is good luck since he's watching over them, and it will keep them from dying. its always well-loved, some carried it on their shoulder and some of them carried it in their own bag!!
ren and i have study dates!! he'll go pick up coffees and pastries and we study japanese together :) he doesn't really remember much besides basic japanese, but his accent is obviously really good!! so he helps me with pronunciation and i help him with grammar and vocabulary x)
starscream doesn't understand nor like my fascination with robots—besides cybertronians, they're all inferior in his eyes. so he discreetly destroys all earth robotics that i own so they stop taking attention away from him. he did "gift" me a minicon one time... it didn't really go over as well as he expected!
sometimes toby and i do arts and crafts together. he doesn't really have strong feelings one way or another (and he kinda gets frustrated) but it's relaxing in the midst of everything. toby keeps all of both of our crafts in a shelf on his room to look at later
yul loves to take me clothes shopping and buy me lots of cute clothes, makeup, etc. he loves getting us matching/complimentary outfits, too. he likes dressing me up and making me feel pretty just in general :)
kirby likes to bake together with me! we tend to bake a lot, so we go around giving everyone in dreamland some of what we bake. sometimes it turns into a dreamland-wide picnic, and it's always really fun!!

Matcha and White Chocolate Chip Shortbread
375g (3¾ cups) plain or all purpose flour (remove a generous tablespoon and replace with equal amount of corn flour)
125g (¾ cup) fine sugar
3 level tsp. matcha (I used bake-able matcha that retains its color and flavor after baking)
generous pinch salt (optional)
250g (1⅔ cups) cold firm butter, cubed then chilled again until firm if it's a warm day
1 tsp. pure vanilla extract (optional)
80g ( ⅔ cup) mini white chocolate chips
Line base and sides of a 30 cm by 20 cm (12 in by 8 in) rectangular baking tray with parchment paper.
Combine flour, sugar, matcha and salt in a large mixing bowl and whisk thoroughly.
Add butter and cut in with a pastry cutter until mixture resembles fine, very damp crumbs.
Add vanilla and chocolate chips and toss lightly until vanilla and chips and well distributed. There shouldn't be any dark, damp patches of vanilla. Do not knead mixture at all.
Transfer the crumbly mixture to the tin and press down quickly and firmly until it looks like a dough. Chill for 15 minutes then press down again until even and compact. Chill a further 20 minutes and preheat oven at 145 C (290 F).
Deeply score dough almost to the bottom, into as many squares or rectangles as you like and prick each piece right through to the base of the tray, with a fork. Bake for 50 minutes or until you can smell a toasty, buttery aroma. Shortbread should be slightly puffed and very lightly colored on top.
Remove from oven and wait 20 minutes before cutting into pieces along the score lines. Leave in tin until just warm before transferring to a cooling rack. If you remove them while hot, they may crumble. Once cold, store in an airtight container and eat within 5 days. Serve these buttery squares with milky black tea, hojicha (Japanese roasted green tea) or vanilla ice cream for dessert.

The people around Trinity should avoid her when she's in one of her moods. Nobody likes Trinity when she's in one of her moods, and she'd prefer it if you… Keep your distance.
One of her ‘moods’ includes being very possessive of the people around her. The environment in which they grew up screwed with their brain, and now everyone else is meant to be the validation Trinity -wants- needs.
Very persistent in spite of their personal hypocrisies. Odd one, Trinity is. Always want to be on the good side of everyone around them to try and trick themselves into thinking they can do no wrong.

Well apparently I can't edit my tags anymore so re: the seven deadly sins thing...
Aoyagi's deadly sin of choice is gluttony. Not committing so much as enabling--he's a trained pastry chef and restaurant manager and he's passionate about food in general and baking and sweets in particular. If you are important to him in any way, he's going to cook for you. He feeds Nishida at least two or three times a week. He bitches and moans when Majima comes over unannounced to steal books about whatever business scheme he's hyperfocusing on this week but if there is food on the stove you bet your ass the boss will be fed. Yes, he's going to make every attempt to get at least one vegetable down your gullet but he's also going to use you as a guinea pig for at least three different recipes for a cookie or pie or cake he's considering for the cafe menu.
Yamaoka's sin is envy, He's guilty of it, yes, but he's also the object. If you ask Aoyagi to describe what gender/transition envy looks like he will tell you it looks like Eiji Fucking Yamaoka. Yamaoka is tall and lanky and looks great in a suit and he has big feet and narrow hips and he's been on T long enough that he has to shave and worst of all he knows how good he looks and he rubs Aoyagi's nose in it every chance he gets. What we don't find out until the very end of the main story is that he has spent the entire plot seething with envy over everything Aoyagi has that he doesn't--mainly, a boss who really and truly sees him as a man. Also Aoyagi got screwed in every other physical department and has to buy his shoes out of the boys' section but he won the lottery on his voice and Yamaoka (who, before T, passed just fine until the second he opened his mouth and who still occasionally gets called "ma'am" on the phone) hates him with the fury of a thousand burning suns for it.
Kuroshi's sin is wrath. There is absolutely a monster lurking beneath his oh-so-proper Japanese and his cold and calculating exterior and it did not die when he finally got his revenge on Murasaki. Of course revenge was his entire life from the age of (mumble)teen to twenty-three, and that kind of beast never really dies, does it? Does it help that he, as a heavily traumatized teenage boy with an unquenchable thirst for vengeance, had Homare Motherfucking Nishitani as a role model? NO SIR IT DID NOT HELP AT ALL. Yes, Nishitani saved him from some awful shit (by *checks notes* doing a murder for unrelated reasons) but when most people would have called the cops and maybe a social worker, Nishitani went "hell yeah let's do some mayhem about it" and put a knife in this (mumble)teen-year-old kid's hand and helped him plan some 5D shogi master bullshit. (to his credit Nishitani did make Kuroshi swear never to kill anyone unless his own life was in danger and Kuroshi has kept that promise, though there is one scene in the main story where you get an idea of what might cause him to break it...)

Chef's Kiss: Old and New Traditions
This past weekend, my friend celebrated her birthday in San Francisco. Since we all live or used to live in the Bay Area, we made a lot of different food memories over the years. While we couldn't make a stop to every eatery we visited in the past, we had a good mix of favorites and new places.
I've decided to memorialize this trip by making a food diary of many things we ate that day. Going to Japantown is one of our favorite activities, so of course we had to hit up some places here!

Udon Mugizo - Salmon Spinach Cream Sauce Udon
This was a delicious start to our food adventure. If you are a fan of pasta and want to find a happy medium between Japanese and Italian food, this is the perfect fusion. The sauce was creamy and tasty, and there was plenty left over even after the udon was long gone. You could take that spinach sauce and dip some toasted bread in it, and it would make a great snack.

Jina Bakes - Assorted goods
This was my first time seeing Jina Bakes open! It was a welcome surprise, and the line to get in didn't take that long. We were too excited to try it that we didn’t mind waiting. Unfortunately, the cream puffs were sold out by the time we were called up to put in an order. I ordered the Muscovado sugar latte, injeolmi croissant, and garlic chive scone. My friend ordered the honeycomb toffee latte, mango panna cotta, and matcha butter mochi. Everything we ordered ended up being tasty!
I enjoyed the matcha butter mochi for its texture and flavor. I prefer less sweet sweets, so this is something that I would recommend for people who don't have a huge sweet tooth.
My top favorite of this bunch is the garlic chive scone. As a longtime garlic girl, I was expecting to savor a light garlic taste, but this pastry had chunks of baked garlic in it, and I fell in love. I wouldn’t mind ordering a whole box of these.

Sushi Shio - Sushi Tasting
I wanted to make my friend's birthday a special occasion, so I booked a reservation for Sushi Shio. It's a nice quiet place to have a meal, and the fish was tasty. My favorite fish to quality test a place is the tuna, so if the tuna can't be done right, then I can't really trust the place. Other people may have different ways of measuring quality, but this is mine. The tuna did not disappoint.
The staff was generous with the helpings of pickled ginger, which I appreciated. The green tea that I ordered also had free refills, so that was also an unexpected treat. As we were getting ready to pay, the staff brought out a cheesecake for my friend's birthday, and that was a lovely way to end the meal!

U:Dessert Story - Dango Combo
This is probably our longest-standing tradition. I don't remember the first time we went to this place, but we always make sure to eat here whenever we can. Our group is self-proclaimed as "the foodie group", so one of the main ways we hang out is by eating out. We wrapped up the day with proper dessert from U:Dessert Story.
I wanted to get the dango combo. In my previous visits, the dango was sold out completely, so I was happy that I could try it this time. Only the mitarashi dango was sold out, so I opted for another black sesame. It was satisfying after a long day of eating. I’ll try you one day, mitarashi dango from U:Dessert Story 😤
I enjoyed my time and my meals on this day, and I hope this post gives some ideas about what to try in the future!

Cultural Cuisine: Kyoshi Island Pt. 1
I feel like it’s been a while since I’ve done one of these. Lets take another trip back to Kyoshi Island~

General
The food offered to Aang when he’s first welcomed by Kyoshi Island are mostly traditional Japanese snacks, which are collectively known as wagashi (和菓子). Fun fact, all of these snacks are vegetarian-friendly. Like my Ember Island posts, each food item will be numbered and described below, along with a link to its recipe or product website in the header.
1. Senbei or Sembei (煎餅)

Senbei are a type of Japanese rice cracker. They are usually savory but sometimes sweet. Senbei are usually cooked by being baked or grilled, traditionally over charcoal. While being prepared they may be brushed with a flavoring sauce, often one made of soy sauce and mirin. Senbei are often eaten with green tea as a casual snack and offered to visiting house guests as a courtesy refreshment.
2. Namagashi (生菓子)

Namagashi, which translates to “raw sweets”, are traditional Japanese sweets typically made from natural ingredients such as fruit jellies, agar, or sweetened bean paste. They are moist and made fresh, designed using seasonal and natural motifs such as leaves and flowers to reflect the various objects of nature in Japan's four seasons. The ones being served to Aang and Katara appear to be spring-themed, judging by the pink coloring.
3. Cinnamon Manju or Gyepi Manju (계피만주)

This one took me months to figure out because of its complicated origins! You see, while manju--- a pastry filled with sweetened bean paste--- is a Japanese dessert, this particular version of manju was invented and popularized in Korea. It’s filled with a creamy white bean paste flavored with sugar and cinnamon. It’s often topped with sesame seeds or nuts.
4. Imagawayaki (今川焼き)

Imagawayaki is a Japanese street snack with a waffle-like texture and traditionally filled with sweet red bean paste.
