I made this for Christmas brunch and it was a hit! The taste was good, the veggies were nice on a day/in a season full of sweats, and it was easy to make for a crowd.

I baked them for over 15 min bc the white wasn’t setting when I put 2 eggs in a ramekin that is more of a squat cylinder than the thin, flat ones pictured. I read some other recipes and I think next time I need to just do 1 egg in this type of ramekin. The way I did it this time cooked the yolk completely through like a hard boiled egg, so that wasn’t great. Also need to take it out a tiny bit early since it says it keeps cooking outside of the oven.
author answered my Q about advice “take the eggs out when the whites still look a little underdone. They set up more as they cool, and this timing helps preserve the runny yolks.”
