🍫MOCHA CHIP SHORTBREAD🍫 Who loves chocolate and coffee? Yesterday, I shared my delicious shortbread recipe with you. Today, I sharing this delicious variation that uses the same basic shortbread recipe, only with a couple of added goodies. Mocha Chip Short Bread 2 cups flour ½ cup plus 2 tbsp. sugar 2 sticks salted butter, softened* 2 tsp instant coffee 1 cup mini chocolate chips Preheat oven to 350 degrees. If butter is not soft, place it in the microwave in a glass bowl for 15-20 seconds. Line a 9x13 baking dish with no-stick foil. With mixer, cream butter and sugar. Add flour then coffee and chips and mix until combined. Spread mixture into baking dish. It may not cover the entire dish. Bake for 30 minutes or until the center is cooked through. Cool, remove from pan by lifting up foil and slice into inch squares. ITALIAN SPICE COOKIES Like a spicy cookie? This one is for you! Several years ago, a friend of mine asked me to revamp a family cookie recipe that was missing ingredients. And here it is! Apparently, the spice cookies were popular in many Italian families because years later, I found an almost identical recipe tucked away in my families recipe collection! Thank you, Kathy for bringing this amazing recipe to light! Italian Spice Cookies 2 cups flour 1 cup sugar 1/4 cup cocoa 1 tsp baking powder 1 tsp Allspice 1 tsp cinnamon 1/2 tsp baking soda 1/2 tsp ground cloves 1/2 cup shortening 1/2 cup milk 1/4 cup ground pine nuts 1 egg Preheat oven to 350 degrees. Line 2 baking (cookie) sheets with no-stick foil. Grind nuts in a food processor (or coffee bean grinder). Nuts will be sticky after they are ground. Whisk together: flour, baking powder and soda, sugar, cloves, Allspice, cinnamon and cocoa. Pour dry mixture into bowl for stand mixer. Add shortening and nuts to four mixture and mix on low (#2) speed. Add egg. Pour milk in slowly. Allow mixture to form into a large ball. Roll into 1 inch balls and place on prepared cookie sheets. You should get about 12 cookies per sheet. Bake for about 9 minutes. Allow cookies to cool on cookie sheets for 2-3 minutes before removing them. Cookies are soft and will break apart if moved while they are still hot. ✍️🏽 Handwritten Crescent Tart Recipe ✍️🏽 Thankfully, I inherited my moms hand written recipes! I remember the day I received them in the mail...I was like a kid at Christmastime. I couldn't flip through them fast enough. The anticipation of what I was going to see written next was almost too much to handle. Reading what she wrote and knowing that I was holding the paper that she once touched made not only my mouth smile, but my heart too! Here is a recipe for crescent tarts that she had written on a scratch piece of paper... 🍫BROWNIE TRIFLE RECIPE 🍫 This is such a decadent dessert! If you layer your ingredients in a glass bowl, it looks very pretty. A little bit of this treat goes a long way and it always tastes better the day after it is made. So, if you can refrigerate overnight that would be best. Brownie Trifle 1 package of brownie mix 1 box of instant chocolate pudding, plus milk 1 tub of cool whip (8 ounce tub) 1 package of toffee bits* Prepare brownies as directed on package. Prepare pudding as directed on box. Layer your ingredients, starting with the brownies. Crumble ½ of your brownies up into little pieces on the bottom of a glass or crystal bowl (this is your 1st layer). Next, place ½ of your chocolate pudding on top of the brownies. Next, place ½ of the cool whip tub on top of the pudding. Next, place ½ of the toffee package on top of the cool whip. Repeat each layer one more time. You will finish with the toffee pieces on top. Refrigerate for at least 4 hours, overnight is best. Tips: * You can also use crushed up chocolate cream filled cookies * I often will use evaporated milk in my pudding. 🍌BANANA BREAD OVERNIGHT OATMEAL 🍌 I'm not sure about you, but during the week, the last thing I feel like doing is cooking a healthy breakfast! Shoot...I don't feel like cooking breakfast period...let a lone a healthy one. BUT...I do know that it benefits my body to eat healthy. Sooooo....I decided to give one of these "overnight oatmeal" recipes a try. As usual, I have to make it my own. So, I created a banana bread flavored overnight oatmeal recipe. What you're supposed to do, is make it at night and have it ready to chow down on in the morning. But, to make life even easier, I make 3 or 4 at a time and have them for the week! Cause that's how I roll. Give this super healthy and super tasty breakfast recipe a try as it is perfect for school mornings. And yes, you eat it cold. And yes, my 8 year old LOVES this stuff...has since she was 3! Banana Bread Overnight Oatmeal Recipe 1 banana, medium to large 1/3 cup oats 1/2 cup cashew milk, unsweetened 1 tablespoon chia seeds 1/2 teaspoon cinnamon 1 teaspoon honey 1 tablespoon pecans or walnuts, chopped Mash banana in a bowl. Add oats, milk, seeds, cinnamon and honey. Mix together well. Add to a mason jar or other type of glass jar with an air tight lid. 🍫 7 LAYER BARS 🍫 My "7 layer bars" have also been called "magic bars". I'm thinking they can also be called "dump bars" as you simply dump in most of the ingredients. They may be on the pricier side to make, but they are worth every bite! 7 Layer Bar ½ cup salted butter 1 cup graham crumbs 1 ½ cups chocolate chips 1 ½ cups white chocolate chips 1 ½ cups butterscotch chips 1 ½ cups coconut, flaked 1 can sweetened condensed milk Pre-heat oven to 350 degrees. Line 9x13 pan with no-stick foil. Place butter in 9x13 pan and place in oven until melted. When melted, remove from oven and sprinkle graham crumbs over butter. Next, layer chips then coconut. Pour on milk as evenly as you can. Bake for 30 minutes. Cool. Remove by lifting foil out of dish and slice into bars. 🍪 MOLASSES COOKIES 🍪 Here is a delicious cookie recipe that is ideal to prepare with the kids. Give them the glass (although you may want to choose a plastic variety) and let them flatten away! The molasses in the cookies makes the texture rich and chewy. Easy molasses cookie recipe 1 cup salted butter, softened 1 cup sugar (plus extra for rolling) 2 tbsp. molasses 1 tsp. baking soda, dissolved in 1 egg yolk 2 tbsp. cinnamon ½ cup brown sugar 2 ½ cups flour Pre-heat oven to 350 degrees. Line 2 cookie sheets with parchment paper or no-stick foil. Cream butter, sugars, molasses, egg mixture and cinnamon. Add flour. Mix well. Roll dough into small balls. Dip in sugar and flatten slightly with the bottom of a glass. ✨️CREATED FOR HODGSON MILL ✨️ Add some whole wheat to your diet with these Crunchy Cappuccino Bars that use Hodgson Mill whole wheat flour! I created this recipe for Hodgson Mill...they asked me to create something delicious using their whole wheat flour...so, for all the whole wheat flour lovers (and even those who are not), here you go! Crunchy Cappuccino Bars 1 cup Hodgson Mill Whole Wheat Flour, sifted 3/4 cups white flour, sifted 1 tsp baking soda 1 tsp salt 1/2 tsp cinnamon 1 cup butter, soft 1 1/2 cups brown sugar, packed 1/2 cup sugar 2 eggs 3 tsp instant coffee, dissolved in 1 3/4 tbsp hot water 1 tsp vanilla 1 cup white chocolate chips 3/4 cups toffee bits 3/4 cup cookie dough candy pieces, optional  Preheat oven to 350 degrees.  Line 13x9 baking dish with non-stick foil.  Combine flour, baking soda, salt and cinnamon in a bowl and set aside.  Beat butter and sugars with mixer, until fluffy.  Add eggs and beat well.  Add coffee mixture and vanilla.  Add chips, bits and candies.  Pour into prepared pan.  Bake for 25-35 minutes. SMOOTHIE GONE BAD 👎🏼 WHAT WAS I THINKING??? One night a while back, I tried a new smoothie recipe and it was not good at all! I had a brilliant idea (which I soon learned was not so brilliant) to make a coffee and cream smoothie. Now, this would not have been such a bad idea if I had used pumpkin puree with the coffee, but I used cherries and a dab of pineapple juice b/c there was no sugar in the coffee. It would have been good if it did not have the coffee in it. Here is what I did (I do not recommend you try this recipe): 1 cup coffee, prepared with milk 1/4 cup pineapple juice 10 frozen dark cherries 3 frozen strawberries 1 banana 3 ice cubes I blended everything together. The coffee left a bitter taste in my mouth. 😜 We all makes mistakes, right? 🤣 Here is a recipe I DO recommend: Fruit and spinach protein smoothie 1 cup pineapple juice 5 frozen dark cherries 3 frozen strawberries ½ cup frozen blueberries 1 banana 1 handful of fresh spinach 1 scoop of your favorite protein powder (I prefer vanilla) Blend everything in your blender. FROZEN COOKIE DOUGH & PEANUT BUTTER CHOCOLATE CHIP COOKIE RECIPE 🍪 The last time I made my: peanut butter chocolate chip cookies, I had more dough than I needed. So, I decided to freeze the remainder of the dough and bake it another time.  Yesterday, was my, "another time". I removed the dough from the freezer and took it out of the plastic zip top bag. I placed it on a cutting board and proceeded to slice off chunks with a knife. I squeezed the small chunks together to make one cookie. In all, I baked up about 20 cookies. I have to say, I think they tasted better than when I made them the last time. Something about freezing the dough and baking the cookies from the dough that came straight out of the freezer made a difference! The cookies were lumpier (making them look more like homemade), richer and moister. I WILL be freezing more cookie dough to make my cookies...this is ideal for Holiday cookie baking too! Make the dough now, freeze and bake cookies for the Holidays!  Peanut butter chocolate chip cookie recipe • 1 cup butter or margarine • 1/4 cup sugar • 1 cup brown sugar • 2 teaspoons vanilla • 2 eggs • 1 pack of vanilla instant pudding • 2 1/2 cups flour • 1 teaspoon baking soda • 2 heaping tablespoons of crunchy peanut butter • 2 cups of semi sweet chocolate chips Pre-heat oven to 375 degrees. Line 2 cookie sheets with no-stick foil. Cream together butter, sugar, vanilla and pudding. Add peanut butter. Beat in your eggs and then add your dry ingredients (batter will be stiff). Drop by teaspoonfuls onto prepared cookie sheets. CREATING A FAMILY COOKBOOK 📙 In 2005, I composed a family cookbook that I gave away for Christmas. I added recipes from family as well as close family friends. I thought it was a special gift... I know I'd love to get one! Now would be a great time to begin to prepare one to have ready to give for Christmas this year! Here is what I did: 1. I emailed friends and family and asked them for one of their most special recipes. I did not tell them what it would be for! 2. After I got them all in (which required making a couple of phone calls and sending 2 or 3 emails and some never even responded, but do not let that discourage you), I typed them into Word and added a picture of the person who gave it on the page with the recipe. Then, I composed the book in alphabetical order by recipe. 3. Next, I printed out the pages on my printer (4x6 pages), created a cute cover, printed it on a glossy cover stock and then hole punched them and bound the books with plastic ring binding. * You can buy a hole punch/binding machine at a local office supply store. If you have old recipes from your parents/ grandparents (such as the photo above), you can also add those with their picture to the book! I remember watching "The Ultimate Recipe Showdown" on The Food Network many years ago. A woman, and now foodie friend of mine named, Julie Hession, won with her double chocolate malt shop cupcakes with cherry vanilla buttercream! They looked so good to me, I decided I wanted to make them for my birthday that year. I altered the recipe a bit and made a cake instead of cupcakes! I asked Julie if I could post the recipe and she said, "Yes!"  My pictures are years old, so I did my best to restore them for this post. 😊 Here is my recipe: Chocolate Malt Cake with Cherry Vanilla Frosting 1 1/2 cups flour 1/2 cup cocoa powder 1/3 cup sugar (or a bit more) 1 tsp baking soda 1 tsp baking powder 1/2 tsp salt 2/3 cup 2% milk 3/4 cup crushed whopper candies, crush in food processor 2 tbsp chocolate Ovaltine 1/2 tsp instant coffee powder 2/3 cup oil 2 large eggs 2/3 cup sour cream 1 tsp vanilla 1/2 cup chocolate shavings, shaved from a 10 lb. chocolate bar (or mini chocolate chips) Icing 1 cup shortening 2 tsp vanilla 4 cups powdered sugar 4 tbsp milk 2/3 cup cherry preserves Preheat oven to 350 degrees. Line 8x8 square pan with no-stick foil. In large bowl mix flour, cocoa, sugar, baking soda and powder and salt. Whisk until blended. In mixer mix milk, whoppers, Ovaltine and instant coffee. Add oil and eggs. Add flour mixture to milk mixture. Add sour cream and vanilla. Add in chocolate shavings. Pour mix into pan. About 3/4 full. You may have a little left in the bowl. Bake for 40-46 minutes or until center springs back when touched or toothpick in inserted and comes out clean. Cool Beat shortening and vanilla. Add 2 cups powdered sugar. Add 2 Tbsp milk. Add remaining sugar and remaining milk. Add preserves. If it is too thin, add more sugar. If it is too thick, add a bit of milk. Spread frosting over cake when it is cool. Do you drink hot tea? Well, guess what, it could be good for you! Tea can help our bodies in lots of ways. In this article, I am going to touch on just a few types of teas that can be good for us. Green, Oolong, Black Teas Out of these 3 teas, green has the most helpful properties because it is the least fermented out of the three. After green comes Oolong and then black tea. Green tea can help with health and immunity. It can also help keep your gums and teeth healthy! It may also help you breathe easier if you have congestion / asthma. It does contain caffeine, so it can also be a stimulant. Oolong and Black teas are more fermented and may help in the same areas as green, they are just not as strong, medicinally. If you want to have a cup of green tea, it is said that you should not add boiling water to the tea, for you are not cooking it, just steeping it. After you add your hot water, let it steep for about 2 minutes. It is said if you let it sit too long, it may start to get bitter. Green Tea Add your hot water to your tea bag You can drink it plain with nothing added or you can add a bit of honey for sweetness. Often, I like to add milk to my tea. It seems to give it a creamy feel when I drink it. Tea There are 2 main forms that you can buy tea. You can purchase tea bags or you can purchase loose tea. If you decide to go with loose tea, you will need a special tea pot. It looks like a cute little tea pot, however inside, there is a mesh holder for you to place the loose tea. You put your hot water into the pot and then place the holder with the loose tea inside the pot. Let the tea steep for about 2 minutes and then pour it into your mug!
