It’s another sheet pan chicken recipe. I had to switch things up a bit as I didn’t read the recipe well and didn’t realize I should have bought boneless skinless chicken to cut up into chunks. I had skin on bone in chicken thighs. So instead of cutting it up I made them whole and cooked them on the stove top for 5 minutes on each side before I added the broccoli and the sauce. Then I baked them at 400 degrees for about 25 minutes and then under the broiler for about 5 minutes. I also added some onion and red pepper with the broccoli. It was delicious but a little sweet for my taste, so I would cut back on the honey and ketchup next time. Will definitely make it again though, so tasty!

Saw a recipe by Half Baked Harvest for Blackberry Peach Galette and gave it a shot. Also made some vanilla ice cream this morning to go with it. Really happy with how it turned out.
I’ve been having trouble with store bought puff pastry though. Last time i used it the bottom turned out too tough, this time it was kinda soggy. I probably could have left it in longer but I was too anxious to try it out 🤷🏻‍♀️
