Chicken Soup
First step is making the stock. It could not be simpler!!
Take one whole organic chicken and put it in a large pot. Then ➕
🔆 2 teaspoons of salt
🔆 1 teaspoon of ground pepper
🔆 2 bay leaves
🔆 1 yellow onion cut into quarters
🔆 2 celery stalks with the leaves
🔆 2 carrots cut into large chunks
Fill pot with water and bring to a boil. Turn heat down to medium low and simmer for one hour until chicken is falling apart. Let chicken sit in broth for 1/2 hour once done.
Remove chicken pieces to separate bowl and strain broth with fine mesh sieve.
This broth can be used for so many recipes!!! Any type of soup you can think up, rissotto, rice pilaf, stuffing, sauces or just on its own to sip. This can also be made in an instant pot if u r short on time in about 20 minutes or in your crock pot on low for 4 hours 🤗
Depending on the size of your chicken there is enough meat for two meals, I typically use 2/3 for this chicken soup recipe and 1/3 for a quick next day meal like:
🌿chicken salad
🌿chicken nachos
🌿chicken tacos
🌿 shredded chicken rice bowl
To make chicken soup:
Small dice of:
🔆 1 yellow onion
🔆 2 stalks celery with leaves
🔆 2 carrots
Heat a heavy bottom pan (I use my dutch oven) over medium high heat. Add 2 tablespoons of unsalted butter and one tablespoon of EVOO. Add your diced veggies and season with a good pinch of salt. Sauté until softened, about 5/7 minutes.
Then ➕
🔆 1 heaping tblsp better than bouillon
🔆 1 tsp garlic powder
🔆 1 tsp onion powder
Stir to combine and let cook one minute
Add your homemade stock and bring to a simmer. Simmer for 10 minutes then turn off heat. Add your chicken back in with some fresh chopped parsley and stir to heat thru.
Serve with your favorite pasta, noodle or rice! I always cook separately then spoon soup over the top. This ensures noodles/rice don’t over cook and soak up all your stock. My go-to is ditalini. Top with freshly grated parmesan. I usually serve with some type of bread for dipping. Lately my kiddos are obsessed with kings hawaiian rolls so this week I split them in half and buttered them to make them extra yummy 🤤

Between Anthony and Luna, and for a while after, Daniel apparently becomes this angel of an omega in looks and temperament. Was he simply not ever sassy or angry or even his fiery, saucy self during this period? Was he only ever docile and gentle and sweeter by the day or something? He comes off as extra darling and cuddly during this time! Did Terry miss his bold and sometimes bratty mate or did he enjoy not having Daniel sass him, or be bitter towards him for once?
Touch his pups and you can get a dose of ItalianMama!Daniel, and that goes for his other pups pestering their siblings, too, but as I've said before recently, puppies grow on love, and with Luna as an infant, there's Anthony, 3, Gianni, just turned 5, Robby, 6, Eli, just about 7/8, Yasmin 9, Samantha, 10/11, so Daniel is constantly cooking and playing and cuddling and entertaining Terry's people who 'protect' him but mostly help him clean and mind the pups, and he loves it. There's always at least three pups wanting morning cuddles, so this is when Terry mostly comes home for some lovin' during the day because he doesn't want to shut his puppies out in the morning but he can order his people to take them out and not come back for two hours. Unless it's wee hours of the morning sex when he comes back from a big operation, then Daniel usually sleeps with his pups a few hours beforehand and sneaks out in the morning to tend to them. And sometimes he simply asks someone to come over the following day for the ones not in school because he needs a nap. Terry will have slept in and not have time in the afternoons on those days. Is it a bit weird to schedule your day around your Alpha's sex drive? His auntie Lisa would say so, Apollonia would give him the side eye, but Daniel loves it, all of it, it's all love to him and there his omega side blossoms. Again, betas would be stressed, Alphas would collapse, but this is where omega instinct kicks in, and with Daniel and his big heart he's just thriving.
Terry's in awe, this is not his turf, but he can feel it and it warms his soul too. It's what he wanted, so much love, but to see his darling mate and all his pups and Jaysis, he taught himself to be hard, and here he's is turning into a huge sap! But when they're all a bit older and dealing with teenagers and some of Daniel's teasing and sass returns, with the pups too, he enjoys that. Plus he also feels more comfortable telling his pups what to do, challenging them a little.
Still in those ten years, with that beauty of a mate and all the pups he's bred - huge status symbol - this oasis of affection where he can come home to after dealing with business, he's a happy man. A, let's not forget this, dangerously lethal man, who likes coming home to some hot sex after breaking someone's jaw kind of man, but he's feeling great about his life.
And he can have that because Daniel decided to put his bitterness aside. If he was not going to have his mate whacked, he had to make it work. And it did for a good seven years until Terry's earlier cheating came to light. That really made Daniel think Madonna mi, what else am I supposed to do?!? That was a less angelic time that also made Sammy try to confront her Daddy. Though Terry clashes more with Eli, that's because the boy feels he has to live up to him. Sammy's more critical. Yasmin is freaked out when the marriage seems rocky. Robby tries to take care of Mama but also goes off alone or with Tory. Gianni will usually find some hyperfixation and hangs out with his Italian family a lot. Anthony and Luna mostly want more cuddles, and that's fine with Daniel because he wants them too.

she is kosmo, her name is because she is constantly wallowing in the dirty things that dirty her bathes in. it's a neighbor's cat, but it feels safe with me. there is a reason why.⬆️

Yesterday I took the time to sit down, all alone in my childhood home and #play. I need to get back into the habit of playing every other day because I'm rusty. This song is composed by #LARRYDUNN (my uncle and original #keyboardist from #EarthWindAndFire) called #ItalianMama. He sat down on #christmas and taught me how to play the whole song. I was nervous because my hands are half the size of his but that was at least 15 years ago and it has never left my muscle memory. Thank God! Its one of my #favorite things to play. Classic Red Sauce
🍅 Pastate (recipe to follow)
🍅 Two large jars tomatoes (fresh from garden will take your sauce to another level!! In a pinch I use glass jarred tomatoes and WF 365 organic tomatoes. I like to use one tomato purée and one tomato chopped)
🍅 one can tomato paste
🍅dried herbs (parsley+ oregano)
🍅Salt to taste ( I give one good pinch into the pastate and another small one before I set sauce to simmer.
Pastate
🧅 one medium onion
🌱one stalk of celery with leaves
🥕one orange carrot
🧄 two cloves garlic
🤏 Salt
drizzle of EVOO (1/4 cup)
Roughly cut all ingredients and put into food processor. Turn on and drizzle in olive oil. Turn off and scrape sides down with rubber spatula. Turn back on and process for 30 more seconds
Turn heat on heavy bottom pot to medium. Once pan is hot add your pastate mixture and turn heat down to med-low.
Sweat your pastate for about 5-7 minutes. The goal here is to steam mixture, not brown.
Add one can tomato paste and 1/2 teaspoon of sugar.
cook down for 2/3 minutes
Add your canned tomatoes slosh jars with water to add extra liquid about 3/4 cup.
Add dried parsley and dried oregano. Stir everything together and taste for seasoning.
Bring mixture to a simmer.Put lid on then turn down heat to low. Cook 20/25 minutes
You can use an emulsion blender to achieve a thinner sauce.
Serve with
-pasta
-meatballs
-chicken cutlets
-eggplant parm
