Made myself something for once, and ended up making a salmon bag, the head and body are two seperate compartments, and has a matching jar of salmon caviar
I’m really proud of how it came out, took me about 4 days in total to complete it.

Japanese Steamed Egg (Chawanmushi) also comes in two flavours, one plain and the other with salmon roe topping. Other than the odd one out, the rest of us all opted for the roe version. Silky smooth steamed egg custard flavoured with broth and orange balls of umami bursting salmon roe is goodness in every mouthful. You also get slice of narutomaki (cured fish surimi), mushroom and chunks of chicken meat in the cup.
The highlight of this ala carte buffet is of course this plate of Sashimi Moriawase or raw fish slices. We have Salmon (Sake), Yellow Tail (Hamachi), Tuna (Maguro), White Tuna (Shiro Maguro), Swordfish (Mekajiki) and Octopus (Tako). I ordered extra portions of the swordfish since this is my favourite. The shiro maguro is actually not a tuna at all but rather the Escolar (Lepidocybium flavobrunneum), a type of snake mackerel. As you can see, all the fishes are sliced thickly which makes eating them such a pleasure. Dip a slice into the wasabi and soy sauce mixture before sending into the mouth. Oishii, the fish is so wonderful sweet and fresh!

Ikura Nigiri (Salmon Roe Sushi with Quail Egg)

I knew I was going to be cheeky one of these days and do something with fish roe. An egg is an egg no matter what it comes out of, and as far as edible eggs go, I love all of them, but especially fish roe. I love that little pop when you bite them. The luxurious texture of a raw yolk on top and the rich fatty flavor is just an amazing bonus! By happenstance, it appears that ikura nigiri is commonly eaten with a raw quail egg yolk on top to enhance the flavor since fish roe of all kinds has such a mild flavor that it tends to get overwhelmed by the usual stuff you enhance sushi with. Since I did both the 16th and 17th today, and since I already decided on tamago nigiri, I figured I’d do both sushi ones back to back!
