Sour Puss (Lemon Poppy Sour) !
Ingredients:
2ounces bourbon, such as Buffalo Trace
1ounce freshly squeezed lemon juice
3/4ounce poppy seed simple syrup
1ounce aquafaba
Preparation:
In a shaker, combine all ingredients over ice. Shake and strain into a Collins glass.

Spicy Sweet Potato, Carrot, and Chicken Soup
I felt like making some sort of sweet potato soup, and I also had some leftovers to use up, namely some chickpeas and a cooked chicken breast. Enter a recipe for Gingered Carrot-Sweet Potato Soup from a magazine called Soups and Stews (Better Homes & Gardens 2016), which I then proceeded to modify here, there, and everywhere. I can’t seem to find the exact version online, but I’ve changed so much that I don’t think it particularly matters beyond identifying my source for a soup centred on sweet potato and chickpeas.  
Recipe:
1 giant sweet potato
1 enormous carrot
-Cut both into chunks. Try to keep the size uniform so that everything will cook through.
-Boil, drain, & mash it all up. Reserve the water for your broth, because it’s full of nutrients and flavour.
Ginger, coriander, cumin, turmeric, chili powder (all amounts according to your taste)
-Mix these spices into your mashed veg.
-Return veg and reserved water to pot, along with the following:
2 cups of No Salt Added chickpeas, drained* and skinned**
1 cooked, chopped, and shredded chicken breast (optional)
1 can coconut milk
More water (how much is up to you and the size of your pot)
2 T lemon juice
1 No Salt Added chicken broth cube (optional; you can use a veggie bouillon cube instead, or even just your boiled veggie water will be fine)
-Bring to a boil, then simmer for another fifteen minutes or so.
*Reserve the chickpea water/ aquafaba if you like. I used an ice cube tray to freeze 2 X 3 tablespoon portions. According to multiple sources on the interwebs, 3 T = 1 whole egg, and 2 T = 1 egg white. I’ve never used aquafaba for anything before, so I’m going to try it out the next time I bake cookies.
**You can leave the skins on if you prefer/ don’t care but I didn’t fancy them floating around in my soup.

Vegan/Aquafaba Meringue Cookies! Considering the price of eggs these days, I made these with aquafaba and Turbinado sugar, vanilla extract and a little cream of tartar. I had no idea that aquafaba whips up almost better and easier than egg whites. The taste is so similar to normal meringue I almost prefer the Vegan version. It also took less time to dry them out in the oven. The peace symbol on these was totally accidental.
