“It says we could use banana as a substitute for egg, did you know?”
You shuffle to James’ side as he pauses in the baking aisle, craning your neck to see his phone over the bulky shoulder blocking it.
“Oh yeah,” you hum, “I’ve seen that.”
James turns his wrinkled nose your way, a wink of amusement in his eyes.
“That cannot be good.”
Scanning the row of mixes beside the cart, you palm his side, his shirt soft and thin under your fingers.
“No, it’s kind of alright, actually.”
You blink back up at him, smiling, even when his big eyes bug even further under his glasses.
“You’ve tried it?”
Laughing, you encourage the cart forward again, and James with it.
“Can you see what we need next, please?” You croon. James’ eyes soften, and he looks back to the recipe page as he walks.
“Er, do we have baking powder?”
“Yes.”
He scrolls an inch further.
“Lemons?”
“I was thinking we’d just use that lemon juice in the fridge,” you say, shrugging.
“What?” James stops walking. “Baby, no.”
He steers the cart around, making a break for the produce section. “We are making these cupcakes right, my darling. I need all the best ingredients.”
You just laugh and trail after him. “It really won’t make a difference…”
As you catch up to him, James is hoisting a full netted pouch of lemons out of its sales basket.
“Jamie, we only need one,” you say, a bemused smile pulling at your lips. He looks to you, still holding the lemons up like a fresh catch.
“That’s quitter’s talk. We just need to make more cupcakes, s’all.”
He drops them in the cart, and then creeps toward you.
“Whatever you say, baby,” you tease.
James freezes before he can reach you. A slippery grin parts his lips, creasing around his eyes.
“What’d you call me?”
Flipping back through your words, you realize what you’ve said too late. In your mind, James and baby have been synonymous for a good few weeks now, you’ve just been trying to play it cool, and for good reason.
James will never let this go.
“I—” You huff, relenting. “Baby.”
In a split second James is around you, lemons forgotten in exchange for a snug embrace that warms your cheeks.
“James, we’re in public.”
“Who?” He asks, a grin pressed against your temple, and a strong hand between your shoulder blades.
Cushioning your chin on his chest, you look up at him. James has bigger heart eyes now than he did on your first date, which is saying a lot.
You know the two of you look painfully smitten, and that any passersby might be bothered by the PDA, but it’s hard to stifle your affection for James.
“Can you call me that more often?” He asks gently, so lovelorn that it nips your heart a little. “I really liked it.”
And how can you say no to that?

G'morning all! Its nice to get back things,. Theres been some roadblocks with med shortages and life, and also with the material for these recipes. So far we've covered a lot of pastries, not because theyre mentioned more often in the series, but because being mentioned lends them more specificity in flavor than things like gravy, peas, or various meats. The latter can be prepped, seasoned, and served in so many different ways that it feels harder to make them 'faithfully' because a packet of instant potato mash is just as faithful as a pot of buttered potato mash. Baked goods tend towards 1, maybe 2, 'base' recipes that get altered and added to. 
 Today, we'll be making Beorn's Honey Cakes! A dish from one of my partners favorite characters- a delectable little treat befitting the… warm personality of the character.

SO, “what goes in to Beorn's Honey Cakes?” YOU MIGHT ASKSimple stuff! Simple sweet stuff!
All-purpose flour
Baking powder
Salt
Ground nutmeg
Unsalted butter
Whole milk
2 eggs

Vanilla extract
The veins of honey cakes ancestry can be traced back to any moment where people began baking bread. Honey is a natural preservative, and sweeter still on its lonesome.

Tastes like a honey graham cracker
But the texture is softer, wetter- somewhat like banana bread
Oh, and this will make your house smell So So Good
If you can resist the temptation of eating them immediately, they taste even richer the day after baking
Would pair well with milk green tea
Would also pair well with fresh orange slices (or those chocolate 'orange slices' candy)
Genuinely don't forget to flip them upside down when they go to bake the second time, not sure what it is but i was curious and did a test where i flipped half of the batch upside down and kept the other half of the batch right-side up like they cooked in the muffin tin. The ones i flipped upside down universally had a more consistent texture and the honey was able to permeate further.

From start to finish this recipe takes about an hour of work, give or take some negligible time for prep.
The batter is perhaps the babybird of all cake batters. The gloopy, protruding crumbs of butter, not unlike a squabs beady pupils visibly dark under its skin, break up the mass of sickly smooth and reassuringly sweet-smelling oak-colored liquid. You can feel the confusion of bees outside your home, wondering if this your attempt at making royal jelly.
Just like a babybird, it becomes more than the sum of its parts. Layer on that honey drizzle, layer it on thick, theres no risk of drowning subtle flavors. Its crisp edges will keep its form, springy and warm, inviting you as if you're not the one who crafted it (food you didn't cook always tastes better). The bees are sooooooooooooooo jealous of your opposable thumbs and muscular strength.
If you dont have eggs you could try substituting with apple mash. I can't vouch for it in this recipe but replacing eggs with mashed up apples for pancakes gives it adds a nice fruity flavor without changing the texture, and in theory should work here as well.
I give this recipe a solid 10/10 (with 1 being food that makes one physically sick and 10 being food that gives one a lust for life again.) 
🐁 ORIGINAL RESIPPY TEXT BELOW 🐁
Ingredients:
270 grams all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
1/4 tsp freshly ground nutmeg
1 stick unsalted butter
160 grams milk
2 eggs
110 grams your favorite honey
1 tsp vanilla extract
Muffin tray and parchment paper
Method:
Preheat oven to 350f
In a medium bowl, whisk together the flour, baking powder, salt, and nutmeg.
 Add the butter and rub it into the flour with your fingers until the mixture resembles coarse crumbs. 
In a small bowl beat the eggs until just combined. Pour in milk and then vanilla extract while stirring.  Keep stirring vigorously while slowly pouring in honey.
Stir until the mixture is consistent in color.
Pour the liquids over the dry mixture and stir until just combined.
Pour the batter into a greased muffin tray, don't use any muffin paper/lining/cups.
Bake for 16 minutes, or until they reach their full height.
Carefully remove from the muffin pan and place the muffins upside down on a parchment lined tray.
Using a silicone pastry brush, generously cover the tops of the cakes with honey. Allow to sit for about 5 minutes to let the honey soak into the cakes.
Bake for an additional 8-10 minutes, or until the cakes are golden brown.
Remove from the oven and allow to cool.

how to make pancakes more filling and taste better
so pancakes are actually way way easier than everyone thinks they are and they are very very easy to change up as long as you know how to
the things that you don't fuck with are the amount of flour, oil, egg, milk and baking powder/soda. as long as you stick to that on any recipe you can change pretty much anything else or substitute.
generally recipes are 1 egg to 1 cup of flour. a 1 cup flour 1 egg recipe usually serves 2 and you can double the recipe for 4, etc.
you can also substitute up to half of the four in a recipe for whole wheat flour without changing the leavening measurements. you can do the same for adding in protein powder, just adjust the sugar accordingly if its sweetened protein powder.
so, this is my favorite basic buttermilk pancake recipe, it makes about 10 pancakes:
1 1/4 cups flour 1/2 cup old fashioned oats 1-1 1/2 tbsp some kind of sweetener (brown/white sugar or maple syrup/agave syrup all work well but there's other options) 1/2 tsp baking soda 1 egg 1 1/4 cup buttermilk 1 tbsp oil of choice (butter or coconut oil generally) 1/2 tsp salt
this is the bones of the recipe. the sweetener is adjustable based on how sweet you like your pancakes but the rest of it should all stay the same. double this if you want to make pancakes to serve 4 people (about 20 pancakes)
to this, i add:
as much vanilla extract as my heart desires (within reason, i see you tumblr) some cinnamon/pumpkin pie spice/whatever you want lemon zest from 1 lemon (or orange zest) blueberries fresh or frozen (but you can use any mix in like bananas or nuts or whatever)
one very important note: you don't need buttermilk to make this recipe. you can substitute buttermilk by combining 1 teaspoon of lemon juice or white vinegar for every 1 cup of milk (its supposed to be regular milk but you can use plant or nut milk too) and letting it stand for 10 minutes.
the instructions:
zest your citrus and add it to your sugar. mush it together until you get a paste or sorts. add to that your oats, vanilla and buttermilk and stir them together. let the oats soak in the mixture for 10 minutes.
combine your flour, baking soda, salt and cinnamon or spices.
after your oats are done soaking add in the oil and the egg (make sure the egg is beaten well)
add the wet into the dry and combine. make sure that all the flour is mixed in. there will be lumps. we want the lumps. then add your mix ins.
grease a pan. this can be a regular frying pan an electric griddle or a stovetop griddle. let the oil sit on the pan on medium heat for a few minutes or until you throw a few water drops on the pan and they crackle and jump.
use a 1/3 measuring cup and scoop your batter onto the pan, space them out a little but not ridiculously. flip them with a plastic spatula (ideal) 2-3 times or until they're fully cooked. (you tell if they're cooked if there's no wet batter on the sides)
voila. pancakes.
use this recipe or use the bare bones version to make your own thing.

Post the fig cake/banana bread recipe please?
I used this banana bread recipe as a base with some adjustments, but since it's in finnish I'll write out the whole fig cake recipe here, as I made it:
240 grams of fig jam
150 grams of melted butter
2 dl of brown sugar
2 eggs
3 dl of wheat flour
2 dl of rolled oats/oat flakes
1 dl of crushed nuts (I used a mixture of pistachios and almonds, but either just almonds or just pistachios is probably fine too)
1 dl of raisins
2 teaspoons of vanilla sugar (vanillin sugar works just fine)
1 teaspoon of cinnamon
1 teaspoon of cardamom
1 teaspoon of baking soda
1 teaspoon of salt
(here, "teaspoon" is about 5 millilitres. For other measures and their imperial translations, you're on your own)
Mix the butter, fig jam, sugar and eggs together in a bowl until you reach an even consistency. It's going to be pretty solid, but don't be alarmed.
Mix the rest of the ingredients together in a separate bowl. Make sure that the raisins aren't all clumped together. I recommend mixing everything but the flour together first before finally adding in the flour, to ensure that it's all even.
Gradually mix the dry ingredients into the wet ingredient bowl, mixing the batter between each helping of flour mixture. I used a ladle for this.
Grease a caking pan/oven dish/whatever you are using with butter. You can use whatever oven-safe baking dish you want, for as long as it can handle 1 litre of cake. You should probably measure your baking dish before making the batter, to see if it fits.
Pour/ladle the batter into the greased baking dish. It's going to be pretty firm and solid at this point, not foamy or runny, and it will expand to roughly twice the size it is now as it bakes.
Heat the oven to 175 degrees celsius (you should probably have done that earlier, too, so that it would already be hot by the time the batter is in the pan), and put the cake in the oven for 55 minutes.
Let the cake cool before pouring it out of the dish. It should come out easily and just fall right off. Have a serving dish already ready and try to aim there - it's going to be a bitch to get the cake off the floor if you miss. (And if you have dogs, you will no longer have cake. Or a dog. Raisins are toxic to dogs and there's raisins in the cake. Do not drop the cake on the floor.)
Conclusion: Cake. If you want to try making a vegan, no-egg, no-dairy or gluten-free version, feel free to fuck around and let me know what you found out, substitutions of this sort are not my expertise. For a nut-free version, simply leave out the nuts.

how to replace eggs in cooking and baking

There are three basic categories for replacing eggs in a recipe: eggs used for leavening, eggs used for binding and eggs used for moisture. Knowing the right reason for eggs in the recipe is the first step to mastering egg substitution.
 each of the following substitute one egg in a recipe:
 binding
 Eggs used for binding are found in recipes like burger patties and drop cookies. The egg is used to hold the mixture together, but the recipe doesn’t need to rise.
 -    ¼ cup (2 ounces) of soft tofu blended with the liquid ingredients of the recipe
-    1 small banana, mashed
-    ¼ cup applesauce
-   2 Tbsp. of corn-starch and 3 Tbsp. of water
-    ¼ cup of avocado, mashed.
-     2 Tbsp. of corn-starch mixed with 3 tablespoons water.
-     3 Tbsp. of peanut butter or other nut butter.
-     Aquafaba is probably the most versatile egg replacer and can be obtained from plain chickpea brine (or from several other legumes). It can be used in a variety of dishes such as baking, macarons, meringue, nougat, marshmallows, ice cream mousses and even cheese and butter.
-    A commercial egg replacer, eg. Ener-G Egg Replacer or The
Vegg.
 leavening
 Leavening is the act of fermentation of the dough, which causes a baked good to rise. Leavening is needed in recipes such as cakes, cookies, muffins and breads. A rule of thumb to determine whether the eggs are leavening agents: if the batch requires three or more eggs, the eggs are used for leavening.
 Leavening eggs are the most difficult egg replacement, but there are a few options.
 -    1 Tbsp. of ground flax seeds mixed with 3 Tbs. of hot water, set aside for 3 minutes to thicken. Add ¼ tsp. of baking powder for leavening. This recipe can also be used without the baking powder for recipes needing binding and moisture.
-    Mix 1 Tbsp. of apple cider vinegar, plus 1 tsp. of baking soda.
-    Mix 2 Tbsp. plus 2 tsp. of full fat coconut milk, plus 1 tsp. of baking powder.
-    Replace ¼ cup of carbonated water for each egg removed.
-    1 ½ Tbsp. of oil, 1 ½ Tbsp. of water and 1 tsp. of baking powder.
-     Aquafaba is probably the most versatile egg replacer and can be obtained from plain chickpea brine (or from several other legumes). It can be used in a variety of dishes such as baking, macarons, meringue, nougat, marshmallows, ice cream mousses and even cheese and butter.

 Eggs needed for moisture are the easiest to replace. You can use just about any fruit or vegetable puree as long as the flavour meshes well with your dish.
 -    1 Tbsp. of ground chia seed mixed with 1/3 cup of water. Allow to stand for 15 minutes. As with flax seed, you can add ¼ tsp. of baking powder to allow for leavening.
-    Puree ¼ cup of cooked fruit. Options include apples, pears and prunes.
-    Puree ¼ cup of cooked vegetables. Use cooked or canned pumpkin, sweet potato or beets. Vegetable purees work best in dishes that will cover the flavour, like chocolate or spice cake.
-    ¼ cup of silken tofu.
-    Aquafaba is probably the most versatile egg replacer and can be obtained from plain chickpea brine (or from several other legumes). It can be used in a variety of dishes such as baking, macarons, meringue, nougat, marshmallows, ice cream mousses and even cheese and butter.

-    The Vegg is a vegan liquid egg yolk replacer, suitable in any recipe that one would alternatively use egg yolk. Scrambles, baking, French toast and even lemon curd - it comes in the following varieties; Vegan Egg Yolk Mix, Vegan French Toast Mix, Vegan Egg Baking Mix, Vegan Vegg Scramble Mix.
-    Beyond Eggs is a binder and leavener and can be used in baking, mayonnaise & scrambles.
-    Orgran No Egg – Baking.
-    Besan Chick Pea Flour – scrambles, quiches, fritattas & in baking.
-    Vegan Egg scrambled egg substitute that can also be used for waffles and savoury dishes.
-    Bob's Red Mill Egg Replacer – used as a binding and leavening agent in baking.
-    Neat Egg – used as a binder in recipes.
-    Namaste Raw Goods Egg Replacer
-     Just Egg (previously known as Just Scramble. Tastes like scrambled eggs and is also suitable for omelettes.

Vegan Kin Food Ideas
S'up! So, we've been seeing a lot of kin food posts, but the focus is always on meat. Then when vegan or vegetarian options are listed it's like salad + fruit and that's it. We've been vegan for some years now so here's a list of things we eat that we think others might enjoy too!
A piece of advice we found helpful is to think about the food item you miss and break it down into what exactly you miss. If you miss eating gems, is it the appearance? The crunch? Gritty texture or dry taste? In that spirit of that, our list will be largely broken up by texture/experience.
Crunch Crunch Snacks
This includes snacks/sides that get your jaws working or have a satisfying "snap" to them.
Roasted chickpeas
Kale chips
Ants on a log (celery, peanut butter and raisins)
Hummus + baby bell peppers/sugar snap peas/carrots
Granola / cereals (a lot of types are vegan, read the ingredients before purchasing)
Banana chips
Nuts + seeds
Popcorn (avoid "buttery" packages, buy plain or kettle corn)
Peanut butter pretzels (crunchy outside, delicious soft inside)
Smartie candies
Keep your cookies/chocolate bars in the fridge or freezer
Also, load cookies up with extra nuts/seeds/choco chips
Soft, but with some crunch
This section is for dishes/sides that are overall easier on the teeth, but with elements that still crunch or snap. If you're looking for recipes that combine different texture elements check these out.
Lentil nachos + nacho cheese sauce
"Crunchwrap" (quesadilla made with refried beans and homemade cheese sauce that we open and place tortilla chips and lettuce inside after grilling)
Tempeh bacon (we like this on a BLT or grilled cheese sandwich)
Crispy tofu sandwiches
Grilled asparagus
Apple slices with nut butter
Pickles
Apple turnovers
Vegan sushi (there's a ton of recipes, check out these two collections to get started X, X)
Falafel (can be used a hundred different ways, sandwiches, wraps, on it's own, etc.)
Roasted chickpeas again, but with a caveat**: You can roast them at 350 F for 30 mins and they'll be cooked enough to pop between your teeth, but soft in the center. We like to either eat them as-is or top our salads with them. (We season with salt/pepper before going into the oven, nothing else) **Must be eaten after baking, they will not keep
For the foragers in the crowd
These dishes focus more on having either multiple different foods in a visible way or a tactile element to how you eat them.

Pumpkin bars (We replace the egg with a flax egg and use vegan butter)

Chewy Foods
This section is for foods that work your jaw, but more in a "needing to chew" way.
Potato gnocchi
Dried fruit (comes in all different flavors, not just raisins)
Swedish fish, red vines, skittles or sour patch kids
Granola bars (a lot of types are vegan, read the ingredients before purchasing)
Thick bread-y pizza (our favorite dough recipe)
Pancakes
Chewy chocolate chip cookies
Peanut butter cookies

Meat Substitutes
The most obvious way to make a dish vegan is to sub in the appropriate mock meat. We've eaten quite a few and we won't sugar-coat it: a lot of them are either going to match the taste, texture, OR look. It's hard for mock meats to copy meat 1:1, some get way closer than others, but if you go into this expecting no difference you will be disappointed.
Our two favorite brands are Impossible and Gardein. We've tried a lot of their products and have yet to eat one we don't like.
These aren't your only options though!
Beans
Falafel (deep-fried balls of ground chickpea)
Tofu
Tempeh (fermented soybeans)
Seitan (made from wheat gluten)
Jack fruit
You might have guessed based on the recipes shared, but we usually opt for beans. We haven't eaten much seitan or jack fruit, but they are options. At our local grocery stores they're sold in the "free from" section and can be brought pre-seasoned and ready to cook with. Jack fruit in particular is a popular replacement for shredded pork.
The trick with a lot of these is to marinate them. Tofu in particular so you can infuse it with flavor. Here's a few recipes we love:
Lentil and sweet potato loaf ("Neat"loaf)
Marinated tofu
Crispy tofu sandwiches
Tempeh bacon
Chili (our mom's recipe that we modified)
Soft / Squish
For things that are soft or squishy and you can slurp up.
Seaweed salad

"Nice" cream

Applesauce
Brownie batter hummus
Chia seed jam
Lavender syrup (to flavor other drinks, we use it in coffee)

Non-dairy mac and cheese (our favorite brand is the upton's)
Smoothies (if you're looking for a protein powder to include, we recommend Vega)
**Just a reminder to supplement for B12 if you're consuming a vegan diet. There are some foods that are fortified with it; however, a supplement is cheap, easy to find and all-around a more reliable way to ensure you are getting enough.

Deliciously Moist Banana Bread
Recipe by me, Lottie!
Just before we get on to the ingredients and whatnot, I just wanted to preface this recipe by saying:
Sorry for the long wait, folks!
I'm not sure why, but I must've forgotten all about my blog during the panic - for those who don't know, Manhattan was taken over by this virus for a few weeks, but not to fret, I feel fine! (Although my memory must have gotten worse as I must have forgotten that I changed my blog's design, LOL!)
I feel great otherwise... almost like I've gotten taller and my joints just don't hurt like they used to. My senses have changed too, but strangely I'm not entirely sure if it's gotten better or worse, ha ha! I can feel people's body heat and, swear to God, I think I can hear them talking to me! Must be the heat this week, lots of people have been going a little heat-crazy.
I'm currently staying over at this wonderfully kind young lady's apartment, and she just seems so cheery watching me talk about baking and crocheting. She did request that the location stay private for job reasons, so no "vacation" photos, LOL.
Now, if you've been like me for the past few hours, you're positively starving! Let's get into the recipe.
Lottie's Banana Bread
Makes 2 loaves.
Prep. Time: 20 mins
Baking Time: 1 hour to 1 & 1/2 hours
INGREDIENTS:
2 cups of white flour
1 cup of golden sugar, lightly packed
1/2 teaspoon of table salt
2 teaspoons of baking powder
1 teaspoon of baking soda
1/2 teaspoon of cinnamon powder
a pinch of cardamom
3 thoroughly mashed, ripe bananas
1 banana, cut or gently ripped into small cubes
3 eggs
1 stick of butter (quarter-pound size) or 1/2 cup of your choice of oil
1/3 cup of buttermilk or buttermilk substitute
1 to 2 teaspoons of vanilla extract
chocolate chips if desired, amount to taste (this recipe does not need any chocolate chips, but if you want, you can start with a 1/2 cup of chips!)
MIXING & BAKING:
Preheat your oven to 375f.
Either grease and flour your bread tins, or use parchment paper and oil.
Combine wet ingredients in one large bowl, and dry ingredients in another separate bowl.
Add your dry ingredients into the wet ingredient bowl, all at once (yes, trust me on this!).
Start whisking gently at first, then as more gets incorporated, whisk normally. Do NOT whisk until clumps disappear, as you do not want to over-mix this batter - the bread will turn out to be tough and dry.
Pour batter into tins, then place into the oven.
Let bake for an hour, or until a toothpick, when inserted into the loaf, comes out clean.
Let the bread cool on a rack for at least 10 minutes, then slice and enjoy! Best served warm.

Mashed bananas are a real egg substitute that works in baking. The problem is, eggs have multiple different functions that they are used for. You can't use bananas for custard, but they're amazing in coffee cake. You have to learn what the eggs do in each recipe and use a substitute with the correct properties. Or you know, just use vegan recipes from the start.
Yeah, I could definitely see banana cream working as an egg substitute for some things, but a custard has to set. You'd need something that would react the same way.
