Whey Blintzes with Ricotta filling

After last week's experiment making ricotta and cannoli filling (link in comments) , I had whey leftover in the fridge.

Today I had time to experiment with it.

1 cup all purpose flour

1 cup whey

1/4 cup brown sugar (loose,not packed)

1/2 Tbs oil

1/2 tsp salt

Mix together until smooth, let sit about 10 minutes, then use to make thin crepes in hot, well-oiled skillet. Fry just until slightly crispy around edges.

Taste test the first one and adjust sugar/salt to taste.

Put a dollop of whole fat basket ricotta on each crepe, a sprinkle of brown sugar (or use last week's cannoli filling)

and roll up.

Delicious.
