Mai headcanon time.
I think Mai knows about the asylum Azula went to. Not necessarily the details, but enough to know that it is a very bad place. Ukano and Michi probably told her that's where she would get sent if she acted up. After all, they're the reasons she bottled up all of her emotions and was unable to express herself. So it's not that big of a stretch if the place's reputation for troubled Fire Nation girls is well known to people like Azula.
All the more reason for Mai to clam up and be as stoic as she is. After all, being quiet and sitting still is good behavior. And Azula in the Spirit Temple is pretty blatant about what happens to girls that don't show good behavior...

So I was thinking about how ATLA inverted the favored sibling trope -if u can call it a trope-. Like usually in fiction, it's the older sibling that is the favorite and the younger one is kind of the underdog. And then I realized that they didn't only invert it they also subtly executed the classic version of it. It's never said explicitly but in the one scene, where we see Ozai and Azulon interact with each other, it is abundantly clear that Azulon favors Iroh - his older son- and completely dismisses Ozai. Ozai is the one lacking, Ozai can't do anything right in his father's eyes.
And now we go one generation further, Ozai is now an admittedly terrible father to two children. Zuko and Azula, and who does he favor?!
THE YOUNGER ONE
AZULA
Of course he does, Ozai heavily projects on both of his kids. He goes the extreme other way and puts the same abusive pattern on his own children, just reversed.
- Iroh himself btw never has the opportunity to develop that pattern, first of all because he only had one child, and second of all because he was the one who got the at least somewhat "healthier" dynamic with his father and probably his mother, if we go with the theory that Ilah died in childbirth.-
Because he sees the exceptional prodigy of Azula as himself, the second child, who in his narcissism is the better option. Who he can form to be the perfect successor of his legacy.
And in that way of thinking he treats Zuko, his older child with the same neglect and dismissal as he was treated as a child. He himself does not realise it, but he creates in that way in Zuko a kind of distorted mirror image of himself.
With one difference. Zuko has his mother and his uncle to teach him compassion. Not only that but Zuko himself is someone who as a person has a strict honor code he follows. (See 41st division).
Zuko is with that in mind, not just a reflection of Ozai but also a WEAK reflection from his perspective.
Which puts us back to the reason of, why he burned the face.
So in conclusion did ATLA not only invert a trope, it also used it to develop a unhealthy family dynamic and create a realistic picture of the cycle of generational trauma.

mai and ty-lee have kissed because they both probably have genuine, vaguely deep rooted romantic feelings for each other
mai and azula have kissed to purely spite zuko (and yknow what ty-lee too)
HOWEVER A KEY ASPECT TO THIS DYNAMIC: azula is completely unaware about the ty-lee and mai thing. it’s uh… better off that way.

I have seen a few takes lately that describe Azula lighting the apple on Mai's head on fire as this unprecedented dangerous prank. And while i think it was a somewhat mean-spirited prank, i don't think it was something that out of the ordinary in the Fire Nation.
In Season 3 we see Aang with his school friends, who are areound 12 year olds, play a game named "Hide and Explode". This is how Aang looks after playing it:

He is covered in soot, so the explode-part of the game is very literal. And Aang hadn't learned firebending at the time, meaning that non-benders also participated in this game.
This means that in the Fire Nation, kids, even non-bender kids, throwing fire at each other for fun is not an unusual activity. So the prank Azula played on Mai was not something considered out of the ordinary in the Fire Nation, which tracks with Mai's, Ty Lee's and Zuko's reaction to the prank.

You know what I rarely see being touched upon in stories? It’s Azula’s time at the academy which I think has potential to be exploited, since thanks to other official sources we know that the academy was not a normal school like in "the headband" but a brutal one where girls went through survival training and Agni Kai’s happened, some ending with fatalities. I bet the dangerous ladies have some interesting stories to share.

royal fire nation family headcanons
Firelady Ilah edition!
-I hc that Firelady Ilah was from the southern water tribe (angsty and unrealistic I know).
- She was plus sized and dark skinned (katara's complexion)
- She had feathery, wavy hair that was frequently worn in a messy bun when she had nothing to do
-she was pretty much always known to be in a good mood and always light up every room she walked into
-had a beautiful smile and infectious laugh
-always slept late into the day
-she treated the palace staff and her ladies in waiting like her friends and loved being around them
-the palace staff, ladies in waiting, and whole fire country in general loved her (kinda like how everyone loved Princess Diana)
-she was not afraid to put Azulon in his place if he was being rude or snappy
-was a buffer between Azulon's attitude and other people
-was an amazing mother and is the reason Iroh has the emotional intelligence he has
-loved being pampered and was a huge foodie
-also loved doing tea parties and get togethers with her ladies in waiting and other noble women
-frequently went out to support local restaurants, plays, and other things in the fire nation
-was very generous and did a lot of philanthropy
-died having ozai but was excited to be pregnant with him
-she had an amazing relationship with lo and li
-was heavily mourned in the fire nation
-tried to push Azulon to be more progressive and peaceful w other nation (slowly but surely was working)
-azulon and her were deeply in love (sunshine girl + grumpy guy dynamic)
-she had a deep sultry singing and talking voice (think In the mood for love by Julie London) and had a wide singing range
-had an amazing sense of humor and always made people laugh
-very good at diffusing situations and did it a lot during meetings Azulon had
-amazing cook and loved singing and sewing
-her and azula look and act alike (before azula was groomed by ozai) and so many people see it
-loved mochi
-is regarded as the best Firelady post sozin era
-was short (min 5'0 max 5'4)
-mai takes a lot of notes of how Ilah was with others and tries to be like her

a really interesting interpretation of azula, ty lee, and mai's dynamic and their characterization to me is:
Mai loved Zuko more than she feared Azula, thus she betrayed Azula to save him. (Nothing here says she didn't love Azula too...)
Ty Lee loved Azula more than she feared her, but she betrayed her to save Mai anyway.
Azula loved them both but did not know how to express that love in any other way except violently.

I was thinking so much on those characters that just get to mention one time and never show them in Atla. So I drew my version of Firelady Ilah and some of the personal headcanons I have for her:
• She has a strong character, difficult to intimidate. She is a nonbender but it is enough to know how to defend herself. She would also have a great talent for being a de-escalator like Iroh could.
• She is involved in politics, refuses to be a simple wife for the fire lord and would be aware of the situation of the town. She would be involved in war meetings with her husband, sometimes giving input/advice to Azulon.
• Ilah would be in her 30s or 40s
• A strict woman who loved order. Despite these qualities, he could be gentle with his family.
I really believe she was very beautiful and dangerous. We love that in this account.
