Homemade Pizza Dough
Store bought baked goods can be expensive.  Add to that the general fact about processed foods that you don’t really know what’s in them and the desire to make your own baked goods seems a no-brainer.  This pizza dough recipe, based on one in Bea Johnson’s Zero Waste Home, is super easy to make (even for someone, like me, who’s always been intimidated by using yeast in the kitchen) and costs less than a dollar to whip up.
What you need:
- 2 cups of flour
- 2 teaspoons of yeast
- 1 teaspoon of sugar
- 1/2 teaspoon of salt
- 2 tablespoons of olive oil (or avocado oil)
- 3/4 cup warm water
- (optional) a pinch or two of dried spices for added flavor - I sprinkled in a bit of dried garlic and oregano
1. Mix the ingredients together then knead to combine and gather into a ball. 
2. Transfer dough into a covered bowl and allow to rise for 45 minutes in a warm place (at Bea’s recommendation I warmed my oven on the lowest setting while I made the dough, turned it off and placed the dough inside to rise.) 
3. With floured fingers, transfer the dough to a greased baking sheet or pizza stone and form your crust.
4. Add your toppings and bake at 400F for 15 minutes.  (Bea’s recipe called for 25 minutes but I thought my crust ended up a bit too dry, so start with 15 and bake longer if necessary).

This recipe could easily be made gluten-free as well.  Considering that I was spending about $7 for a pre-made pizza crust, this homemade one is huge savings, even when all of the ingredients were organic.  Win-win!

Pesto Chicken Pizza 🍕! This is homemade crust and is my first attempt at making my own pizza crust. I made two cast iron pan pizzas this weekend but forgot to take photos of them. They were so delicious 😋! I had one more piece of dough left and let it ferment for 2 days longer. Letting the dough sit for 72 hours instead of 24 hours made a huge difference in taste and texture. I didn’t melt the cheese on this one because I didn’t have a lot left and I wanted to taste the cheese as is since it’s a smoked veggie provolone. The chicken is @quornusa veggie chicken pieces. My daughter has a condition of her rare disorder that doesn’t allow her to have tomatoes or a lot cheese even tho she loves both. So I decided it was time for me, as a New Yorker, to make my own pizza. Here is a picture of my finished pizza. I used my pizza stone which helped give it a lovely and crispy base. There is nothing worse than a pizza with a soggy base! I just put up a video on how to make Pizza on YouTube. Just click the link in my Bio and it will take you straight to it! To make the pizza in a standard oven, put it to the highest temperature and bake until the topping has melted and the pizza is cooked. Gluten free, egg free, yeast free calzones. Looks delicious. Smells delicious. Tastes, pretty good. Things we would do different next time: 1. Roll the dough thinner. This would probably help the dough cook all the way especially because we are folding it creating two layer. 2. Cut dough in half or 4ths. Cook for maybe 5-10min. Then top and put 2 of the 4 pieces on top of the other 2. This eliminates folding and risk of breaking. 3. Thicker sauce. Michael thinks our sauce was too liquid-y causing it to run out like crazy while eating the calzone. 4. Put tin foil over the top after a while to let the bottom crust get crisp but keep the top from burning. . .
