Was bored tonight so I made myself this recipe card for the empty recipe box sitting in my kitchen that I got at the start of the pandemic. I’ve been trying to collect recipes from my family members and lately I have been going to the library a lot so I’ve been flipping through a lot of cook books and stuff for inspiration! Maybe I could make some to sell at my table?
Also I call different types of food genres, it’s a thing with me and @ferncomics for example Chinese, Italian, Irish or sometimes it’s even simpler and genres can just mean soup, chicken, pasta, ect.

Chocolate and Cocoa Recipes
Home-Made Candy Recipes
Ingredient
1• 600ml thickened cream
2• 150g (1/2 cupchocolateat hazelnut spread
3• 45g (1/4 cup) icing sugar
4• 2 x 2petspkts choc chip cookies
5• Cocoa, sifted, to serve
6• 2 tbsp roasted hazelnuts, chopped, to serve
7• Ferrero Rocher chocolates, to serve

Step by Step
Step 1
Release the base from a 20cm springform pan. Invert the base and secure it back in the pan. Spray pan lightly with oil and line base and side with baking paper, smooutsideut side as much as possible.
Step 2
Use electric beaters to beat the cream, hazelnut spread and icing sugar until firm peaks form. Layer a quarter of the cookies in the use of the prepared pan (you may need to break a couple to fill the big spaces). Spread over a quarter of the cream mixture. Repeat with the remaining cookies and cream mixture, finishing with a cream layer. Smooth the top and cover firmly with plastic wrap. Refrigerate overnight.
Step 3
To serve, remove the side of the cake pan and carefully peel the l away the paper. the Slide cake onto a serving plate, gently pulling paper out the t from the base as you go. Use a spatula to gently the smooth sides.
Step 4
Dethe creates cake with a dusting of hazelnuts and chocolates. Drizzle over chocolate sauce to serve.

Italian Sausage Ravioli With Capsicum Sauce
Ingredient:
2 Italian sausages, casings removed
50g baby spinach, shredded
100g fresh ricotta
1 egg
30g finely grated parmesan
100g butter
1/2 bunch fresh sage leavesPasta
250g (1 2/3 cups) fine Italian ‘00’ flour
1 1/2 tbsp extra virgin olive oil
2 eggs
1/2 tsp sea salt

Capsicum sauce:
4 capsicums, roasted, peeled, deseeded, coarsely chopped
1 1/2 tbsp olive oil
1 brown onion, finely chopped
2 garlic cloves
1-2 tbsp white wine vinegar
60-100ml Massel chicken style liquid stock
DIRECTION:
Step 1
For the pasta, process the flour, oil, egg and salt in a food processor until the mixture forms a ball of dough, adding a little water if necessary. Transfer to a lightly floured surface and knead for 3-5 minutes or until smooth and elastic. Wrap in plastic wrap and set aside for 30 minutes to rest.
Step 2:
Meanwhile, place a large frying pan over high heat. Add the sausage meat and cook, stirring often, for 3-5 minutes or until golden. Add the spinach and stir for 1-2 minutes or until wilted. Transfer to a bowl. Set aside to cool slightly, then stir in the ricotta, egg and parmesan until well combined. Season.
Step 3:
Divide the pasta dough into 4-6 portions. Cover loosely with a damp tea towel to prevent drying out. Set the pasta machine to the widest setting. Lightly flour a piece of dough and the rollers. Flatten the dough into a rectangle with the palm of your hand and feed through the machine. Fold each end into the middle, turn 90 degrees and feed through again. Repeat this 4-5 times on the widest setting. Continue to feed the dough through the machine, narrowing the machine settings 1 notch at a time, until you reach the second or third thinnest setting. (The sheet of pasta should be 6-8cm wide.) Feed the sheet through twice on your chosen final setting, lightly dusting with flour in between, if necessary, to avoid sticking. Place on a floured surface. Repeat with the remaining portions of dough, stacking as you go.
Step 4:
Place a pasta sheet lengthways on a lightly floured surface. Place heaped tablespoons of filling at 4cm intervals on the sheet, running lengthways along one half of the sheet. Lightly brush around the filling with water, then fold the opposite side over so it covers the filling. Working carefully, use your fingers to seal the edges around each mound of filling, so no air is trapped in the pockets. Cut around filling into roughly 8cm squares or use a cookie cutter to cut into rounds. Place on a lightly floured tray. Repeat with remaining pasta and filling.
Step 5:
For the sauce, process the capsicum until smooth. Heat the oil in a large frying pan over medium heat. Add the onion and garlic. Cook, stirring often, for 6-8 minutes or until soft and golden. Add to the processor along with the vinegar and stock. Puree until very smooth, adding more stock if necessary. Transfer to a saucepan and bring to a simmer over low heat.
Step 6:
Cook half the ravioli in a large saucepan of salted boiling water for 2-3 minutes or until they float on the surface and are al dente. Use a slotted spoon to transfer to a bowl. Repeat with remaining ravioli.
Step 7:
Heat the butter in a clean frying pan over medium heat until foaming. Add sage and cook for 2-3 minutes or until deep green and crisp. Remove pan from heat.Step 8Place a generous spoonful of capsicum sauce in each serving bowl and top with 3-5 ravioli each. Drizzle with sage butter and sprinkle with crispy sage leaves.
