In autumn, it's very popular to eat soups like this. Here I'm calling this a soup because it's what it's called in English, but in Catalan we usually make a difference between a soup / sopa (broth with things in it, usually pasta and can also have vegetables and sometimes some meat) and what we see in this video which we'd call a cream / crema. A "cream" is made of vegetables and is made into a homogeneous creamy liquid.
In this case, La Sofregida is making one of the most common "creams" for autumn: squash "cream".

Squash cream (crema de carbassa):
Ingredients:
Squash
Leek
Scallion
Water
A sprinkle of olive oil
Salt
You can also add carrots or a potato and some cheese that melts easily, and mix it all in like the other ingredients.
Preparation:
Place the vegetables in a pan and add a sprinkle of olive oil and salt, then slightly stir-fry the vegetables to bring out the taste.
Add water to boil them for 30-40 minutes more or less, until the vegetables are cooked.
Mix it all with a blender to make a homogenous soup, and serve!
When you serve it, you can add a bit of Iberian ham or bacon on top. Enjoy!
Fall Chopped Salad with Spinach, Butternut Squash, Apples & Cheddar. - 185 kcal/5g protein
Servings: 8 - 185 kcal/5g protein per 1.25 cup serving
1聽small聽(1 1/2 pounds) butternut squash, peeled and cut into 1/2-inch dice (about 4 cups)
2聽cloves聽garlic, minced
3聽tablespoons聽extra-virgin olive oil, divided
陆聽teaspoon聽salt, divided
陆聽teaspoon聽ground pepper, divided
2聽tablespoons聽balsamic vinegar
1聽teaspoon聽maple syrup
2聽teaspoons聽Dijon mustard
8聽cups聽packed baby spinach, roughly chopped
1聽medium聽Honeycrisp apple, diced
陆聽cup聽diced sharp Cheddar cheese
陆聽cup聽toasted chopped pecans
Stir squash, garlic, 1 tablespoon oil, 1/4 teaspoon salt and 1/4 teaspoon pepper together in a large bowl. Spread on a large rimmed baking sheet and roast, stirring once, until tender, about 20 minutes.
Meanwhile, whisk the remaining 2 tablespoons oil, vinegar, maple syrup, mustard and the remaining 1/4 teaspoon each salt and pepper in the large bowl. Add spinach, the roasted squash, apples, cheese and pecans. Toss to coat.
Food for the Catalan festivity of Castanyada (October 31st): panellets (little marzipan balls coated in pine nuts, almond or others), roasted chestnuts, baked sweet potatoes, and moscatell (sweet wine).
