She's still thinking about that short rib risotto.

If Carmy would have been with her, it would have definitely come up. They need to talk that day out cause I seriously doubt they have, and she needs those ribs on the menu. When she thinks of the short ribs on the boat she then has flashbacks to her past self with food and lingers on an image of what we can assume is her mother in the end.

The risotto was made with the étouffée stock he helped her strain.

Her father had made a joke about her mother being a Southern Belle, even referencing Beauregard, who was Civil War general from Creole Louisiana. Étouffée is a Southern Creole dish from Louisiana, so maybe she really was from the South and this dish really is something from her family. Which makes Carmy rejecting the risotto she made with it so much sadder.

The cola braised ribs that are so Carmy coded, their family tradition was cooking beef every Sunday and we know Carmy (and Mr Adamu) loves his soda (pop).

It's literally their combined family meal.

Sydney makes Carmy nervous. This is after she's been there what, a week or two? He's the boss and the owner, yet his employee makes him nervous. Even when I've had bosses in the wrong they don't usually talk to me about an issue from a place of nervousness. I'm also a boss and even when I'm wrong I'm not nervous.

Carmy is fidgeting. He's hanging on her every expression and word. He came to her from a place of submission. He brought her food. He coaxes her to say more. This from a man who never asks anyone how they are doing. But he asks her.

Yet, he's nervous with her. He's not nervous with anyone else except Cicero who he owes $300k to. But Sydney not being mad at him is priceless. He knows how to fix the dilemma with Cicero. Get the money. He doesn't know how to fix what's wrong between him and Sydney. This is new territory.
