saw something that unfortunately reminded me how widespread this idea was, so here is a refresher:
masculine sun and feminine moon symbolism is not universal across human cultures, not even within a given continent or subcontinent.
feminine solar* deities or deity-like figures include: Amaterasu (Japanese), Arinniti (Hittite), Eki (Basque), Mārīcī (Buddhism), Saulė (Baltic), Shapash (Canaanite), Siqiniq (Inuit), Sól/Sunna (Norse/Germanic), Tokapcup-kamuy (Ainu), Yhi (Kamilaroi), and in Egypt alone you've got Bastet, Hathor, Raet, Sekhmet....
masculine lunar deities or deity-like figures include: Bahloo (Kamilaroi) Chandra (Hindu), Kunnecup-kamuy (Ainu), Máni (Norse), Mėnulis/Mēness (Baltic), Nanna/Sīn (Mesopotamian), Taqqiq (inuit), Tēcciztēcatl (Aztec), Tsukuyomi (Japan), Yarikh (Amorite/Ugaritic) and again with Egypt there's Iah, Khonsu, Thoth....

So who are Skoll and Hati chasing in Ahsoka?
Shin Hati is in conflict with Sabine Wren in the trailer, and Baylan Skoll seems to be Ahsoka’s foe in the footage we’ve seen so far.

Apparently Skoll chases the sun (Ahsoka) and Hati chases the moon (Sabine). So if they catch them does that mean that Ragnarök, the Twilight of the Gods, will begin?

How I write Máni's name 🌖 ᛘ (with a crescent moon) ᚨ ᚾ ᛁ, mixed Elder and Younger Futhark. I made this under the waning light of the Dandelion Moon. I love the idea of dandelions representing the sun (Sunna/Sól) as they flower, the moon (Máni) as they go to seed and stars (so many deities and parts of deities) as the seeds disperse.    If you use, please tag me...I wanna see~ Buy me a coffee or commission yer own bindrune/sigil here~

is it true that skoll chases the moon and not the sun?
The short answer is that it appears to be "no." As far as we can tell, Skoll/Sköll chases the sun.
Grímnismál says:
Sköll heitir ulfr, er fylgir inu skírleita goði til varna viðar, en annarr Hati, hann er Hróðvitnis sonr, sá skal fyr heiða brúði himins. 'A wolf is named Sköll who follows the bright-faced god to the wood-shelter, but the second is Hati, he is Hróðvitnir's son, that one shall (go) before the bright bride of the sky.'
('Wood-shelter' is taken to mean the trees on the horizon, that is, until setting.)
Snorri restates this in plainer prose language:
Þat eru tveir úlfar, ok heitir sá, er eftir henni ferr, Skoll. Hann hræðist hon, ok hann mun taka hana. En sá heitir Hati Hróðvitnisson, er fyrir henni hleypr, ok vill hann taka tunglit, ok svá mun verða. 'There are two wolves, and the one which goes after [the sun] is called Skoll. She fears him, and he will take her. And the other is called Hati Hróðvitnisson, who runs before her, and he wants to take the moon, and that will happen.'
So strictly speaking, neither of them chase the moon. According to both of these, Sköll follows behind the sun, and though Hati will eventually take the moon, his position is described as being in front of the sun.
It's not clear to me that the Grímnismál stanza couldn't be interpreted such that it skírleita goð could be Máni rather than Sól, though I agree the traditional interpretation is much more likely. The word goð 'god' reveals nothing about gender, as it's neuter in Old Norse. But while the word skírleitr 'bright-faced' could certainly apply to the moon in isolation, if someone says "the bright-faced one" and the sun is an option, we know they're talking about the sun. It would also indicate a situation where, while Sköll is chasing Máni, Sól is chasing Hati.
My interpretation of this is that the sun is flanked by wolves, and that the one following behind her will eventually get her, at which point the one who had been ahead of her will break off and get the moon.
For a long time this has been interpreted as referring to the phenomenon of "sun dogs," a phenomenon where the sun actually does appear to be flanked by two smaller sun-like bodies, caused by refraction of the sun's light. Conditions for sun dogs are not uncommon in Iceland. In Icelandic folklore, when they appear, it's said that "the sun is in úlfakreppa," meaning something like 'wolf-touble' or 'wolf-danger.'
In Vafþrúðnismál, it's Fenrir who gets the sun. Snorri also makes mention of a certain Mánagarmr, whom he calls the mightiest of the entire family of "jötnar in wolves' shape," presumably meaning something like 'moon-dog,' though Garmr is the name of a specific mythological dog and not a normal word for a dog (normally it means 'a tatter, rag'). This Mánagarmr is also supposed to swallow the moon. Since Snorri seems to present Hati and Mánagarmr as different, he may be contradicting himself. But it's also possible that while Hati captures the moon he doesn't eat him, leaving that to Mánagarmr; and it's also possible that they are the same and Snorri phrased it strangely; or else that he had two contradictory pieces of lore that he tried to fuse together.
My suspicion is that the precise identities of who did what here were rather fluid up until a late time.

I'm not sure if you need another summary for this but just to be safe; this one is about a woman desperately trying to leave her past behind but is challenged when said past is quickly catching up to her. someone she thought dead, came back to finish what he started. and her son is unintentionally getting dragged into this whole mess.
I don't have that much to share so I'm adding a little no context bonus sentence :3
The sun had already set, draping the dark veil over the city’s skyline and giving the neon lights their opportunity to bloom. All sorts of different holograms grace the high buildings they pass. Illusions that try to grab one’s attention with pretty colours and exciting images. Bait. Advertisements trying to convince passersby they can’t survive without whatever they’re trying to sell them. Sucking them dry until only bones are left. Wolves in sheep’s clothing.
The predators have always been the city’s biggest issue. After the death of the two most powerful ones, one would think life out here would finally change for the better. It only became less organized. Now, everyone is a target, everyone is in danger. Because they’re everywhere, hiding in plain sight, preying on the weak. Watch out little creature, the wolves are coming for you.
In come the pretty visuals. What exactly are they selling? The illusion of normalcy and safety. People don’t want to be in danger? Then they’ll have to pay to pretend they aren’t.
The lights inside the train are dimmed during the night. You can still see clearly but it isn’t bright enough to burn your eyes. Though one should never mistake it as an invitation to sleep. At least not when you’re on your own. Then again, can you ever put your whole trust in other people? Sól tightens her grip around Toby a little. She had to find out the hard way that she can’t. But, maybe she can prove that her boy can.
It's moments like this when Sól wonders if Toby’s mind asks the same questions. Granted, he is only five years old and has other things on his mind, but does he feel safe? Is he… happy?
Is Sól happy? For now, she and Toby are safe. They are safe with Harrison. With Máni. And yet, she can’t tell if she’s even content.

I’m currently working on doodles for some Tangled inspired oc! They’re inspired/twisted from Mother Gothel, the Sundrop Flower, and the Moon Opal.
Names in progress are
Marius for Mother Gothel. If anyone has any surname suggestions please let me know! I chose Marius I think because I was reading the vampire chronicles again and I just liked the name?? I don’t quite remember 😅
Sunna Blumen for the sundrop flower. Sunna comes from the old high German word for “Sun” and is one name for the Germanic sun goddess (also called “Sól” in Norse mythology). I chose Blumen as the last name because it means flower in German.
Máni Stein for the moon opal. Máni comes from the name of the Germanic moon god by the same name and Stein is the German word for stone so it follows the same pattern as Sunna.
I imagine Sunna and Máni are either step-siblings or adoptive siblings, with Sunna being a “diurnal fae” or a daylight fae while Máni is a nocturnal fae. They seemingly get along with each other, though they don’t work together and don’t often talk about the other. Many don’t know that they’re siblings but it’s more because they don’t feel a need to talk about their personal lives to their students.

Deity Blurb 02 - Máni
Máni is heathen god of the Moon. He is both the personification and charioteer of the Moon. He is the brother of Sól, goddess of the Sun.

Just like Sól, Máni's origins in the myths are disputed. I've already gone over them in the post about Sól, which can be found here.
Máni is said to be chased by the wolf Hati Hrođvitnisson, son of Fenrir. Máni will be consumed at Ragnarök by Hati.
Within my personal experience of working with Máni, he presents himself as a soothing and calm presence. Máni is gentle and kind, but he is not afraid of fighting for things he believes must be fought for. He loves children dearly. I also understand Máni as being a trans man.
Offerings to Máni may include:
marshmallows
beaded jewelry
jangles
jasmine
mugwort
blue sea glass
thyme
moonstone
labradorite
One may decorate an altar to Máni with dark blue, silver, black, or purple ribbons or buttons, Moon imagery, lavender, an open offering bowl, white, black, or blue candles, stone circles, time pieces or calendars.
Some devotional acts to Máni may include volunteer work or donations that benefit the mentally ill or abused children, having patience with small children, shadow work, and spellwork involving increase or decrease, or even healing magick.
Some kennings of Máni include Man of the Moon, Charioteer of the Moon, Son of Mundilfæri, Hati's chase.
