Mason Jar Instant Noodle Soup - 229 kcal/8g protein

Servings: 1 serving. 229 kcal / 8g protein
Ingredients
1 1/2 tsp. vegetable bouillon base (we used Better Than Bouillon)
1/4 tsp. grated fresh ginger
1 tbsp. warm water
1 bundle (about 11/2 ounces) instant rice vermicelli
1/4 c. kimchi, roughly chopped
1/4 c. shelled edamame, thawed if frozen
1 c. baby spinach
2 cremini mushrooms, very thinly sliced
1 scallion, thinly sliced
2 1/2 c. boiling water
Instructions
In 32-ounce wide-mouth mason jar or other heatproof jar, combine bouillon base and ginger. Stir in warm water. Add noodles and carefully cut in half with kitchen shears. Add to jar in following order: kimchi, edamame, spinach, mushrooms, and scallion; screw on lid. Refrigerate overnight if desired.
If refrigerated, let jar sit 20 minutes at room temperature. When ready to serve, pour boiling water over ingredients and cover with lid. Let sit until noodles are tender, 3 to 4 minutes, then stir to combine.
Pump Up the Protein: Add 1/2 cup shredded rotisserie chicken and replace the vegetable bouillon base with chicken bouillon base, or pop in 6 to 8 frozen cooked small shrimp (they’ll thaw overnight in the refrigerator).

hey Sci, recently got diagnosed as violently celiac but I still have a love for noodles, been struggling trying to find quick alternates that I can make in my bedroom cause I'm in medical school and don't have a lot of time for actual meals. My boyfriend has enlightened me to.. Ham noodles. It's just... Ham cut into tiny long strips, it's genuinely nice and you'd literally just need the ham and knife. You can use all sorts of sandwich meats and It's a good alternative for celiacs who still love noodles. Just thought I'd share because I feel like a lot of your fans probably don't have a lot of time to make full meals either.

Brought mum to try the Japanese foods at Tokyo Shokudo (東京食堂) located in Northpoint City. This restaurant chain is halal certified so all the pork ingredients had been replaced with chicken. Browsing through the menu, I picked their recommended tempura rice dish while I chose ramen for mum.

The Signature Tendon (特製天丼) priced at S$13.90++ came piled with an assortment of fried battered prawn, fish, vegetables and a sheet of nori or seaweed. As I lifted out some of the crispy tempura items to get to the rice below, there it is, a hidden fried egg still warm with oozing egg yolk! Mixed the yolk into the rice and proceeded to devour the donburi.

The portion in mum’s Chicken Cha Shu Yuzu Ramen (鶏チャーシューラーメン) seems underwhelming considering it cost the same S$13.90++. Unfortunately, mum didn’t take to the ramen with modern twist. She found the yuzu and ramen combination flavours strange so she didn’t finish her meal. :(
