Easy and slow warm, gooey soft Molasses Cookies

Blend in a glass :
1 egg
1/2 tsp vanilla extract
4 Tbs vegetable oil ( light olive is best)
2 Tbs molasses
2 Tbs white sugar
In a separate bowl, mix:
1/4 tsp salt
1/4 tsp baking soda
1/2 tsp baking powder
1 Tbs Mochiko rice flour
1 tsp cinnamon
10 Tbs all purpose flour (that's a level half cup, plus 2 Tbs, which is an unusual measure, but the exact right amount.)
Then add the wet to the dry and stir until combined
Stir in 1/2 cup chopped dates.
Mixture should be just a little too gooey to handle. This is good. Cover the bowl, put it in the refrigerator and let it rest several hours.
Next day, make a small container of powdered sugar with some cinnamon. Drop a half Tbs spoonful of dough into the mixture, put on a tight fitting lid and shake the container until the dough ball is all covered in sugar and nice and round. Put the ball on a cookie sheet pan, then repeat until you have a pan full of dough balls. Bake in preheated 350°F oven for 8 min, and watch them carefully. They should spread a little, then just start to puff up and crack a little. If you leave them in until they fully puff up and dome they will be cakey instead of gooey inside. Still good, but I prefer them moister inside. Watch the last 30 seconds carefully.

Let it cool at least a little-- the molten dates stay hotter than the cookie part.

Baking therapy on a budget Ft. Genshin Characters: Baizou - Almond Milk

Hello, every birdie. I am so glad to be back, writing these posts again. I did do some baking posts over the summer, but for some reason, it just doesn’t feel the same. It feels good to be posting these posts again.

The character in question for this post is Baizou. (Bye-shoe). The doctor of Liyue and the caretaker of Qiqi. His goal in life is to achieve immortality.  He also has a contract with a very sassy white snake named Changsheng.

Now on to the recipe: Almond Milk. Every recipe for almond milk is the same, it really doesn’t matter which recipe you go to, they are all basically the same. But I do have a recipe that you can follow down below.

The flavoring is whatever your preference is. I usually make vanilla almond milk.

You will want: 
1 Cup of Almonds 
5 Cups filtered water
2 teaspoons of sugar (or 2 whole dates) 
1 teaspoon of vanilla or 2 tbsps cocoa powder or ½ cup berries

Place your almonds in an air-tight container and cover them with water. Place them in the fridge overnight.

Drain the almonds.

Add your almonds and 5 cups of water into a blender.

Now you can add your flavoring now or later, but I prefer putting the flavoring in at the same time as the almonds.

I have an Instant Pot Blender that comes with a nut milk function. And for someone who does not have an intelligent blender, it takes more than five minutes.

Once you have the desired thickness, grab your cheesecloth, a thin dishcloth, or a nut milk bag and squeeze the almond pulp out of the milk. Save them in a different container and place them in the fridge. We will use those in an upcoming recipe.

And now that you have milked your almonds, you are going to place it in a container big enough to fit in the fridge.

This has become one of my favorite recipes. Honestly, I thought that almond milk would be a lot harder, but it is just soaking them in water, overnight. Where is my daisy free crew?
Before I went dairy free I liked a scoop of ice cream in my coffee as an occasional treat. I tried it with Oatly vanilla today and it was not great. I would preferably be using vanilla because it is only in the house when there is cobbler in the house, which is rare, but I have cobbler in the house right now…but Kind has pistachio and that would be delicious in coffee and I’m not above getting a pint…if it’s good).
Also, if there is a company doing weird, borderline, or evil stuff please add it to the post to keep everyone informed. I usually don’t buy much non dairy dairy, I make it….but I can not be trusted with an ice cream maker…again.

Mugshot Monday - "Blue-Black Ice Cream Mug" by Bigboxcar Ceramics with Chocolate Dairy Free Frozen Dessert by Frönen
This mug was a lovely accident.
I challenged myself by taking a wheel throwing class at Northern Clay Center after taking a year off from making pots. I wanted to make some mugs out of porcelain clay.
Porcelain is insane to work with because it's super smooshy. Some say it's like trying to make something out of cream cheese. They're not wrong!
This cup turned out short and wide so it's not ideal for coffee. But it's perfect for ice cream!

I'm enjoying some delicious Frönen Chocolate ice cream (non dairy, no cane sugar, only 4 ingredients).
My body doesn't like cane sugar or dairy so Frönen is pretty much the only option for me. Yum!
I'm going to keep practicing with porcelain and see if I can make a few respectable coffee mugs. So far, I'm pleased with my progress.
Maybe I'll even intentionally make more ice cream mugs. 😂

🌺🎃🗿 HAPPY HALLOWEEN 🗿🎃🌺
Here’s my spooky season-inspired cocktail & it’s one that I’ve always wanted to make — a version of Moloko Plus from the cult movie “A Clockwork Orange”.
It seems like the drink in the movie/book is some sort or readymade White Russian or at least a combination of milk, cream and some sort of synthetic alcohol.
I decided I’d try a combination of non-dairy beverage, lemon juice, silver rum and a homemade chai syrup.
For my version I tried both store bought oat milk and homemade cashew milk but otherwise both had the same contents.
I flash blended for 5 seconds and strained into a tall glass, as seen in the film.
I very much see this as a sort of “first draft” and plan on tinkering with it in the future🍻

I’m so proud of myself and my journey so I want to share it.
October 13th 2021 I decided that I was tired. I was tired of feeling bad all of the time, I was tired at the lack of confidence I had in myself, and I was tired of always being tired.
Thus I began my journey to a better happier me. I got on the proper medications that I needed for my health conditions and I cut out the foods I was intolerant too. I cut out dairy, gluten, most sugar and a lot of caffeine. It hasn’t been easy, I have had some very hard days where I am just mad at the world, but in the end these changes have been so good for me. I don’t have exact weightloss figures to share or anything, but I did want to make this post to express how proud I am of myself, to express how strong I feel for taking control of my health physically and mentally.
