Whenever we throw a large party, this Garlic-Tomato Rasam (Soup) is a must-make. Not because we want to make it, but it is because our guests ask for it! I love that this rasam can be made in a jiffy. I am serious. All it needs is 20 minutes of your time. There are several ways you can consume this rasam. The traditional way is to eat it with rice, ghee and curry. I’ve become quite creative, and we have this as a thick, chunky soup with a sliced of buttered sourdough bread. Or, like in the picture, pour out the rasam piping hot into a stainless steel tumbler (called lota), add a tiny dollop of homemade ghee and slurp it down with relish. If you have never heard of delicata squash, I don't blame you. It is not part of the Indian cuisine, so this squash was unfamiliar to me as well. After I came to the United States, I used to see them in stores. Since I didn't know how to cook them, and for fear of spending too much time removing the hard peel, I never bothered trying them. A few years back, I was trying to introduce new veggies and fruits into my diet, and delicata squash came into my kitchen. I Googled a few recipes and decided to add this and that to make it my own recipe. Since then, this squash has become a regular on our plates. The most wonderful thing about this squash is that it doesn't need to be peeled. If you have peeled butternut squash, you know how arduous of a task it can be. The delicata can be roasted as is, and best yet, the skin can be consumed. The squash has a lovely nutty savory-sweet flavor, which, I am sure, you will fall in love with. For this super delicious Purple Cauliflower and Purple Sweet Potato Soup, I’ve used purple cauliflower, purple sweet potato, purple onions and beets, which are…purple! I have added a little bit of color contrast with the white in freshly minced garlic and coconut milk. A bit of green comes in with jalapeños and the sunflower and pumpkin seeds. Growing up, my mom used to ferment large quantities of batter so we could all enjoy crispy dosas! Oh, we enjoyed them so much. She would stuff the dosas with delicious Aloo (potato) Curry and serve it with either Sambar, Chutney Powder or different kinds of Chutneys. Every week brought a new masala dosa combination, depending on what was available in her pantry and what the local produce was. However, all good things come to a brief end, especially as children. After a day or two, my sister and I would grow tired of repeatedly eating dosas. But of course, nothing went to waste at home.
