This salad is one of my faves it’s refreshing and full of flavour and it will make a great addition to any bbq patio party! 🍉 . Ingredients 8 slices watermelon 1 cup chopped fresh mint 2 cups chopped cucumber 1 cup feta cheese 2 tbsp olive oil 2 tbsp balsamic glaze . • grill watermelon on bbq approx 3 mins per side, remove from grill and chop into bite size pieces . • add feta, cucumber and Mint and toss in olive oil, drizzle with the balsamic glaze to finish, serve immediately!! . . If I'm being really honest, coming up with my own recipes has never been easy for me. When I have created a recipe myself, it's been more of a happy accident than anything else. It’s official. I am a Pure Lifestyle Barre member. This is the story... when I took the first barre class, I had doubts of whether or not I would join in. 😂. The workouts are very challenging. I was back the next day to join. This is my 3rd month with 68 barre classes done ✅ so far. The first class starts at 6am, which it’s perfect for my schedule. I am enjoying this journey so much. Check out this #foodiefriday post by @rhythm.and.beet.collective🙋🏼‍♀️ • • • • • "This week's dish was inspired by some of my hometown Sarnia's very own local produce and oils!! This vegan dish is infused with the southwest chilli lime oil from @purelocalorganics. Full of flavour and a hint of heat it was the perfect backdrop to this delicious summer meal! 🌶🌶🌶 . Ingredients 5 sweet peppers (cut lengthwise) 2 cups firm tofu cubed 2 cups cooked quinoa 1 can tomatoes 1/2 cup onion 1 cup corn 1 cup black beans 1 cup green onion Juice from 1 lime 1 tsp cumin 1 tsp chilli powder 2 tbsp hot sauce . •Sauté tofu in southwest oil and onion, add in remaining ingredients and sauté for another 10 mins. Fill peppers with quinoa mixture and bake in the oven for 20-25 mins at 375. . For the cashew queso sauce: 2 cups cashews 1 red pepper juice 1/2 lemon 1 tbsp southwest chilli lime oil 2 tbsp water 1 tsp garlic powder, cayenne, chilli powder, cumin, paprika, pepper 1/2 cup nutritional yeast •blend in food processor until smooth . •Warm the sauce and add to the stuffed peppers, finish with a drizzle of the southwest chilli lime oil to taste and enjoy!!! . . . 🌟What inspires your summer dishes?
