I like the idea of Lance being a farmer but not in the "my girlfriend died and instead of getting over her, I'll devote my life to planting her little invasive flowers :(" way.
I believe that Lance would take Kaltenecker because nobody else would. He likes to joke that Keith should go back to his roots and become a cowboy (take Kaltenecker out to graze). This is just the start.
The (totally legal amount of) chickens come next. He only has hens because he already has Keith and he's the only territorial bird brain with a stupid hairdo that Lance needs (💕). He gets fresh eggs from the chickens and prides himself on being the guy that everyone gets eggs from.
Then comes the garden. Nothing big. Just some tomatoes. And peppers. And maybe some strawberries. If the squirrels don't eat them. He really enjoys being able to use what he makes. He does not enjoy when Keith eats his tomatoes like apples.
When he goes into space, he has Adam, Shiro, or Hunk take care of his animals and plants because she (Pidge) will accidentally kill something if it's made her responsibility.
Pidge: What got into you? We agreed to do James' plan.
Lance: So what! Griffin's not a Paladin, why do you keep siding with him instead of me-? Oh lemme guess, because he was right, the base was attacked and he's perfect?!
Pidge: Wait a minute. Are you jealous of James?
Lance: ...
Pidge: Lance?
Lance: Alright, fine. I didn't want to say anything because that's a gross emotion, but yes: I am a bit jealous of the super smart super model.
Pidge: Lance... You have no reason, at all, to be jealous of him. You know that, right?
Lance: I just... *sighs* I don't want you to wake up one day and wish you were with someone as smart as you are.
Pidge: But I am with someone as smart as i am: you. Lance, you're an amazing Paladin, I love the way you think. That's why I want to marry you.
