This is a simple recipe for a Spinach and Berry Salad with Cheese and this is my all-time favorite salad recipe that I eat for lunch every single day.
Ingredients:
• 2 cups baby spinach
• 2 cups romaine lettuce, chopped
• 1 cup grape tomatoes, halved
• 1/2 cup blueberries
• 1/2 cup strawberries, sliced
• 1/2 cup carrots, julienned
• 1/2 cup croutons
• 1/2 cup cubed cheese (e.g., feta or cheddar)
Dressing:
• 3 tablespoons olive oil
• 1 tablespoon balsamic vinegar
• 1 teaspoon honey
• Salt and pepper to taste
Instructions:
1. In a large bowl, combine the baby spinach, romaine lettuce, grape tomatoes, blueberries, strawberries, carrots, croutons, and cubed cheese.
2. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper to create the dressing.
3. Drizzle the dressing over the salad and toss gently to coat the ingredients evenly.
4. Serve immediately and enjoy your delicious and nutritious spinach and berry salad!
