Miner’s Pie
Serves 4-6
Ingredients:
Filling:
1 1/2 tablespoons olive oil
1 yellow onion, chopped
1 large leek, white and light green parts, halved lengthwise and cut into 3/4 - inch pieces
1 bay leaf
Kosher salt
2 pounds ground beef
3 garlic cloves, finely chopped
2 teaspoons finely chopped fresh thyme
4 tablespoons tomato paste
3 tablespoons all purpose flour
1/2 cup ale, such as IPA
1 cup low-sodium chicken broth
3/4 cup frozen corn, thawed
3/4 cup frozen peas, thawed
1/4 cup chopped fresh parsley
Freshly ground black pepper
Topping:
3 pounds russet potatoes, peeled, cut into 1-inch chunks, and rinsed well
3 tablespoons unsalted butter, melted
2/3 cup whole milk (or half-and-half, for a richer taste)
Kosher salt and freshly ground black pepper
1/3 cup freshly grated Parmesan cheese
2 eggs, beaten
3/4 cup coarsely grated Monterey Jack or Colby Cheese
Instructions:
Make the filling:
In a very large skillet over medium heat, warm the olive oil until shimmering.
Add the onion, leek, bay leaf, and 1/2 teaspoon of salt and cook, stirring frequently, until softened, about 4 minutes.
Add the ground beef and cook, stirring and breaking up any clumps, until no longer pink, about 10 minutes.
Add the garlic, thyme, and tomato paste and cook, stirring constantly, until fragrant, about one minute.
Adjust the heat to medium, add the flour, and cook, stirring constantly, for 1 to 2 minutes, until the flour is completely blended in.
Add the Ale, broth, and 3/4 teaspoon of salt.
Adjust the heat to high and bring to a simmer, using a wooden spoon to scrape the bottom of the skillet to loosen and dissolve any browned bits stick to the pan, until the filling is thickened but still saucy, about 15 minutes.
Add the corn and the peas and set the skillet aside, off the heat to cool slightly.
Remove the bay leaf, add most of the parsley, and stir to mix.
Taste and adjust the seasoning with additional salt, if necessary, and pepper to taste.
Scrape the mixture into a broiler-safe 2-quart casserole dish, spread evenly, and set aside.
Preheat the oven to 450* F with a rack in the upper-middle of the oven.
Make the topping:
Put the potatoes in a large pot filled 3/4 of the way with water.
Boil until potatoes come apart easily when poked with a fork, about 20 minutes.
Pour the potatoes into a strainer in the sink, and when the water has been drained completely, put potatoes into a large bowl.
Mash the potatoes with a potato masher thoroughly.
Add the melted butter and stir it into the potatoes.
Add the milk, 1 1/2 teaspoons salt, pepper to taste, and the Parmesan cheese and stir to incorporate.
Taste and adjust the seasoning with additional salt and pepper, if necessary, and set aside to cook for about 20 minutes.
Add the eggs to the potatoes and stir to incorporate.
Spoon the potatoes over the filling, spreading them evenly and making sure they reach to the edges of the casserole dish.
Sprinkle evenly with the Monterey Jack.
Place the dish on a large baking sheet and bake until the filling is heated through and the potatoes are puffed slightly, about 20 minutes.
Take out of the oven, and sprinkle with the remaining parsley and serve hot.

Recipe: Sweet Potato Shepherd’s Pie With Lamb & Bison
Shepherd’s pie is a classic English dish that has all of the meaty, starchy goodness that you can expect from a good British meal. It’s comfort food at its finest and couldn’t be more appropriate for a cold, rainy or snowy winter day. The English really know how to do cold weather food right. This updated version uses a combination of traditional lamb and American bison meat. I really love the flavor of combining these two meats, but any combination of our ground selections would be delicious. Usually shepherd’s pie uses regular russet potatoes, but sweet potatoes give a touch of sweet flavor that blends perfectly with the bison meat. Not to mention, the color turns out beautifully. Fresh rosemary really completes this recipe, so be sure not to leave it out if possible.
Ingredients:

I don't think enough people talk about the physical and mental energy it takes to cook when you weren't raised to cook.
It's not as simple as here are the ingredients and here are the steps. Cooking involves multi-tasking, timing, proportions, prepping, improvising, and more. The more complex the dish, the more juggling it requires.
Oh, and I haven't even mentioned obtaining the ingredients and the cleaning afterwards.
All these "healthy" and "save money" and "live better" motivational speeches to get people to cook more, and I'm over here like Cooking is Fucking Stressful and Incredibly Draining Actually.
I was raised a girl, but I'm entirely self-taught because my mom hated cooking and never bothered to teach me. She was convinced I'll just naturally learn on my own after I got married and was forced to cook for my husband and family 🙃
Anyway, I went through a HelloFresh phase several years ago to try to kick-start myself into a groove, but it never really latched on. I think the only thing I learned is the importance of prepping ingredients in advance so that once I'm bouncing around, things are just ready for me to grab.
This isn't to say I don't cook AT ALL EVER. I can make eggs on a skillet just fine. But it's a one-and-done kind of thing. Much like putting together a cold cut sandwich. But that's not Cooking™.
Turns out this past month I randomly got a hyperfixation to Cook™, so here I am facing the bone-tired aftermath of making meals that'll last more than one day.
After three weekends of going through it, here's how I autistically started handling the stress:
Find a recipe I will follow
Envision myself going through the steps and allocate a certain amount of energy to the task
Compile ingredients I need to obtain (or get my partner to obtain)
(If I have to go shopping myself, do it on a separate day from when I have to cook)
Open a Google Doc and copy/paste the recipe into it
Rewrite the recipe steps based on how I imagine I'll be going through them once I'm in motion
Mentally practice the steps
When it's time to cook, go through steps as I've mentally practiced them, with improvisation when real life takes a different turn
(If a lot of prep work is required, such as peeling and cutting potatoes, sit down to do it with a podcast before starting on anything else)
After cooking is complete, throw out any lingering garbage
My partner does the dishes :)
I'm sure it'll get easier the longer I do it, but this is exactly why I'm 34yo and always hated Cooking™ to the point that I budget for delivery and take-out on nearly a daily basis.
Cooking is hard actually.

Terrible news: since macro-ing my knife for the Knife Guy yesterday I have realized I can use that to evaluate my hand-sharpening technique.
Great news: I have finally figured out the motion to sharpen my cai dao without putting one million different bevels on the edge.

I'm not used to sharpening such a straight blade, you can't cheat and use the curve of the edge to isolate your grinding zone, but I finally figured out a movement that keeps it consistent and even and it's finally able to do this all across the edge. Previously I had a ton of dead spots and waviness.

Steve hesitates a second before sliding closer to Eddie and putting his head on his chest. Eddie’s arms go around Steve immediately.
“You’re safe here,” Eddie tells him softly.
And as Steve’s eyelids get heavy, he thinks he may just believe him.

This is a soft fic. So very soft. I think I came across it when I was looking for another fic but this has become one of my comfort fics. It has very clearly to the reader that Eddie thinks it's a relationship but Steve is pining the whole time, it could have gone angsty but it sit in that perfect place of miscommunication and romantic. There is no "oh this other person is going to win them over" its just soft.
Also the shepherds pie was really good to I made it when I was reading this on my 10th time

They lug their trunks across the Burrow’s yard in sweaty, stony silence. ‘Beautiful evening,’ her mother remarks, as her children clamber back over the threshold of the rickety old house. ‘I do hope we get more of this lovely sunshine.’ 
Stupid thing to say, she thinks, stupid thing to hope for. There's a wishbone out drying on the kitchen window sill. Wonders if her mother plans to waste it wishing for more good weather in the middle of a war.

Dinner is shepherd’s pie - her old favourite, a Molly classic, and yet it tastes like dust, like ash, like nothing. ‘I know you’ve had a tricky time, dear,’ her mother says gently. She stiffens, glares at Ron, traitor, but then - ‘what with your exams being cancelled - and right when you’d done all that work -’ so she's safe, then, goes back to moving mash potato around her plate. ‘Made of real shepherds,’ her dad says, weak smile, trying his best. She gulps down her mouthful and excuses herself, slams the bedroom door shut, finds she's shaking.
Lying on her back on her bed, staring at the sunset’s stains on the ceiling, the only sound the late summer birdsong out of the open window. Quiet, too quiet, for a house this full. Downstairs, the kitchen’s all whispers. Every now and then she hears an unfamiliar footstep creak on the landing, strangers on the staircase. Headquarters, now. The war’s come home, and it’s using their loo.

She’d got her hopes up, that's the thing. First mistake, stupid. He’d been telling the story of Ron’s camp-bed collapsing in on him that time, lying back on his elbows under their tree with his hair ragged, handsome. She’d laughed, see, and said well, maybe this summer we’ll spare you the indignity of the campbed and being dense, he’d said well Fred and George’s room was nice if you don’t mind the smell of soot. She’d rolled her eyes, said Potter can you really not notice when a girl’s trying to get you into her bed. He’d gone red, then, stammered a bit, but it was all over his face: the wonder, the want. Your mum will go ballistic, he’d muttered, but he’d said will not would, and his hand had toyed with her hip, fingertips trailed her thigh. He’d wanted it too. He’d thought they’d have it, thought they'd get the summer, at least. 
We could’ve had ages, he’d said. Months, years, maybe. Stupid, stupidest thing, hope. No use for it.

It’d have been cramped. He’d have had to sneak down from Ron’s room, under the cloak. She’d have shown him her Harpies poster, now this is what a proper team looks like, Potter, worn her nice pyjamas, the ones with the shorts, asked him to take them off. Cleared a space for his glasses on the bedside table. He'd have slept on the right, nearest the door, ever on guard, and stroked her cheek with his knuckles, looked at her that way, like she’s precious. It would have been like that time they’d fallen asleep under their tree, heads together - the time she’d slipped up, let herself imagine it: two bodies in a bed in a house with a garden, laughter, little people running around who’d look a bit like them both. 
Stupid, stupid thing. Grips the bedspread in both fists, banishes it: all of it, all the hope. File away that future, bury it. Kill your darlings, push them out to sea.

Knock at the door. Ron, with two cups of tea and a half-empty box of Caramel Kappas. ‘Thought you might want some company,’ he mutters, sheepish, sitting on the bed. She sighs, no fight in her, and so brother and sister sit, sipping, in birdsonged silence. 
‘How are you doing?’ he asks. She means to snap - how do you think I’m doing - but takes one look at him and finds she’s fresh out of spite. ‘You’re going away with him, aren’t you?’ she says, instead. Ron nods, and it’s awful, all ache, terrible, gaping grief, all this filling in the blanks of everything that she’s losing. 
‘I just hoped,’ she says, eventually, eyes on her knees, ‘we’d have more time. I know - I know it was stupid.’
That’s all of it, really, isn’t it: her great failing, uttered aloud. Crumples, then, beside her big brother, and cries, heaping earth on all the hope as they lower it into the grave. Stupid thing, useless thing.
She thinks about the wishbone downstairs on the window sill. Thinks how stupid, how stupid it is, for something to die, and someone to make wishes out of its bones.

My last farmshare had turnips and a pound of ground beef in it (among other things) and I didn’t know what to do with the turnips so I pan-fried them in small chunks with garlic and onion, but then I didn’t know what to do with that. So I made two mini Shepherd’s Pies with about half the ground beef, the pan-fried turnips, some caramelized onions from the freezer, and some instant mashed potatoes.
