Made myself a batch of red-lentil mash today. It's not the least time-consuming recipe I have, mostly because of the onion, but it's pretty simple and foolproof and delicious. Great comfort food on a grey day as we head into fall.
One cup red lentils, boiled in three cups of water and a bit of salt for 20 minutes, then drained.
One large sweet onion (e.g. Vidalia), chopped and thoroughly cooked. This is a great thing to do while the lentils boil.
Quarter teaspoon of smoked paprika.
Half teaspoon of Trader Joe "umami powder" which has some mushroom and pepper flavors.
Tablespoon of honey. As with many of my recipes, this really brings out the other flavors.
Half pound of kielbasa, cut up small.
Combine. Eat. That's it. 😋
