Peppernuts: Connecting With the Ancestors... 
On the Mennonite side of my family, the surnames that pop up are largely Belgian, Dutch, and Low German. Peppernuts, or Pfeffernüsse are tiny cookies that are about as old as the spice trade, and would have likely been an ancestral tradition in my family going back as much as 500 years.
My grandmother was always the one to make these for the winter holiday season. If my cousins or I would ask if we can help with the cookies and the zwieback buns, grandma would inevitably tell us to go play and she’d take care of it all. I never realized until she passed away in 2009 that this meant that she wasn’t passing the traditions down at all. When she was in hospice I had asked for her zwieback recipe, and she was happy that I wanted to take on that tradition, but it meant that I can never ask her questions about the confusing details. 
Not only was she the first in our lineage to write the recipe down, but there were notes on the side written in Low German, which is markedly different than modern High German. Low German (AKA Plautdietsch) doesn’t really have much for translation resources, and I only know a Low German a nursery rhyme that doesn’t really even exist anymore. But this isn’t about the zwieback, this is about the peppernuts! My mom rediscovered grandma’s peppernuts recipe about two years ago, so both her, my sister, and I started making them. Although technology has advanced, it still helps me connect with the ancestors.
These little aromatic and spiced cookies are really easy to make if you have one extra helper after the dough is ready. One batch easily makes like 400 cookies, I kid you not – but they’re supposed to be small, coming out like the size of a 4 or 6 notched Lego block. They’re supposed to be hard cookies, at least that’s how grandma liked them. Kept you from eating more than 5 in one sitting because they would make your jaw hurt. Tonight’s batch was too big to fit into a one gallon ice cream bucket, so assuming I’m the only one that made them this year, I’ll be sharing them with the family at their Christmas dinner. Without further ado, here is the recipe:
Ancestral Peppernut (Pfeffernüsse) Recipe
There are so many variants, so substitute* as needed.
PREP: ½ cup coffee 1 tsp baking soda stirred into coffee
MIX: 1 cup butter 1 cup sugar 2 cups brown sugar 2 eggs, beaten 1 tsp anise extract
ADD: 5 & ¼ cups flour
SMALL BOWL: 1 tsp salt 1 tsp fine black or white pepper ½ tsp allspice 1 tsp cinnamon
Add dry spices to batter. Add the soda-coffee after mixing in most of the flour (gives the coffee time to cool so it doesn't cook the eggs). Burn out the motor in your hand mixer and finish mixing the dough by hand. Wrap the dough in plastic wrap or wax paper and chill until the temperature is consistent throughout (at least 30 min). Take small handfuls of dough at a time (no larger than a ping-pong ball) and roll into half-inch thick logs (between the thickness if your little finger but no larger than the thickness of a washable marker). Cut the dough rope into square (or then roll them into round) pieces. If rounded, no wider than a dime. They will expand to about the size of a quarter in diameter. Place pieces on cookie sheet (bakers paper helps) one inch apart.
Bake at 350° for 10-15 minutes or until golden-brown. Once cool, the cookies are supposed to be almost hard like biscotti, which is why it's important to keep them bite-sized in order to break fewer teeth at once. Recipe makes several hundred. Store at room temp for 1 week, then freeze for up to a month. Dip in coffee or tea to soften, or enjoy them as they fossilize with each passing day.
*Other recipes add any combination of the following in ½ or 1 tsp of: nutmeg, ground cloves, ground ginger, and/or vanilla extract.

Cookie #1- Dog Biscuits

This morning started with pulling dough out of the fridge and discovering the dog biscuits dough was just as soft and fluffy as the day prior. Absolutely flabbergasted as to how this is dough meant to be rolled and cut. So I dumped all of it into a bowl and mixed the raisins in (no nuts- dad's allergic).

I continued my improv by borrowing a move I saw in a TikTok for strawberry preserve cookies. I spooned some jelly into my cookie scoop then scooped the dough, leaving it with a little jelly hat once on the pan. The issue was this dough is NOT the dough used in that TikTok recipe and I was greeted by the jelly sliding off the greasy dough and melting into hard candy pools.

Very fun to clean up.
So I nixed the jelly entirely and settled on the cinnamon sugar, topping each cookie generously before baking. I utilized my mini oven and the way these cookies changed appearance so drastically between batches is staggering.

I was honestly feeling pretty hopeless over these but once they cooled, I cut one in half to feed my husband... and what do you know! It had a dry dense inside much like biscotti! Just like my dad described them! I have no idea how I managed that with such an off dough but Jack gave them a vote of approval. Hearty, not to sweet, great with coffee.
No clue if my dad will even recognize them when he gets them but that's alright. His wife's family will devour them regardless.

Fueling those café au’s in my head... Part 2!
This time let’s look at what baked goods they would enjoy. 🫶🏼 (based on what I offer in shop & some new ideas!)
Part One: Drinkies!
Hitoshi S.
Will buy the cute seasonal sugar cookies, especially the cat themed ones during the spring & fall. Otherwise a blueberry muffin will suffice. If he’s really hungry a baked cheese & plant “sausage” turnover.
Denki K.
Frosted muffins, loaves & scones. The frosted matcha & vanilla crème Swiss roll is a favorite of his. But the frosted strawberry scone is a good second choice. Will be the one to order a breakfast bagel when super hungry.
Katsuki B.
He enjoys spice over sweet that much is true. He’s not one to order baked goods often, but there’s a hatch chili bread released during the later fall season that he will buy a slice or two of. If not, a savory maple sausage pull-apart roll every once in a while never hurt.
Izuku M.
Flaky pastries!! Always always. Chocolate croissant? Yes. Spinach feta croissant? Also yes. Spiced ham & pepper Jack cheese blossom? … yes. Quiches with buttery crust. Biggest yes. It’s used in so many dishes and so yummy in his opinion.
Shoto T.
Plain/simple flaky pastry or biscuit. Usually something to go along with his tea. There’s an orange blossom and currant biscotti that he’s grown fond of thanks to midoriya’s suggestion. Will have some quiche if offered. Not the meat heavy ones though.
Eijirou K.
Sweet boy loves some sweet loaf slices. He will indulge in pumpkin spice during the season. Otherwise the spiced loaf or apple crumble loaf are great choices. Will get the warm breakfast sandwiches on fresh bread.
Hanta S.
Contrast to his drinks and similar to bakugo, Sero likes the more savory pastries. The rosemary & tomato tart is the perfect snack. While the chili, egg & spinach blossom is a good breakfast option in his eyes.
Tenya I.
Cinnamon roll, no raisins but yes to cream cheese icing. Only once in a blue moon though. He allows himself to enjoy this with his classmates. Otherwise a buttery croissant will do, there’s no need for the excess sugar all the time.
Dabi
Again this mf doesn’t go to coffee shops… Will take warm bread, he likes the softness of it when it’s freshly baked. The topped toast options are usually what he goes for. The special spices Ogura jam with everything bagel seasoning is a go to.
Hawks
Learned to like the Ogura jam pastries because of Dabi. Will get the baked Ogura & sea salt stuffed rolls. There’s also a seaweed flakes croissant he enjoys with a sweet plum jam.
Mirio T.
Loves to try just the most American sounding baked goods. Apple strudel with cinnamon, strawberry & rhuebarb blossoms, Canadian bacon and cheddar boomerang? All yeses! Tamaki has told him countless times that two of those things are decidedly not American but Mirio is too busy ordering to hear him.
Tamaki A.
Is less shy when it comes to ordering pastries from his favorite bakery. Enjoys trying the new seasonal items. The sweet Sakura dango was a big hit with him. Will also get the milk bread toasted with a semi-runny egg & chives on top.
Shota A.
A bagel. He enjoys trying to different toppings but prefers having something easy to eat between classes and napping. Open to trying different kinds of bagels as well. Hizashi once bought him a breakfast bar and he enjoyed it. Still gets bagels though.
Hizashi Y.
Much like Tamaki, Hizashi likes trying the seasonal pastries. It only makes sense if he’s trying the seasonal drinks too! It’s the full experience. The toasted coconut & pineapple loaf was a surprising new favorite. So was the miso & cucumber tea sandwich.
*based on my view of them & their personalities*
Might do this for JJK or another fandom next. This has also given me new ideas for some trial goods in the bakery next week…

2. Lagana - Clean Monday Bread Lagana is a flatbread eaten on Clean Monday, the first day of Lent in Greece. It is usually made with flour, water, yeast, and salt and is topped with sesame seeds and other herbs. This bread is perfect for dipping in taramasalata or other Greek dips.
3. Koulouri - Although not usually eaten specifically during ceremonies, Koulouri is a popular street food in Greece, typically sold by street vendors. It is a circular bread covered in sesame seeds and often eaten for breakfast or as a snack. This bread is simple but delicious and is perfect for enjoying on the go.

They are made with phyllo pastry filled with almonds, sugar, and cinnamon and are often shaped like fingers or cigars.
11. Lazarakia - Lazarus Bread Lazarakia is a sweet bread baked in honour of Lazarus, who was raised from the dead by Jesus. It is usually made with flour, sugar, and cinnamon and is shaped like a cross or a figure of Lazarus. This bread is often eaten on Lazarus Saturday, the Saturday before Palm Sunday.

Illusen Biscotti

Crispy bread with herbs and and spices baked right in.
I don’t know who in charge of item description picked ‘bread’ over ‘cookie,’ but happy belated Illusen Day/Earth Day
Ingredients
1/2 c butter
3/4 c sugar
herbs! (mint, thyme, fennel leaf, savory, etc)
1/3 c chocolate melted
2 eggs
2 tsp vanilla extract
2 c flour (I used a mix of graham and all-purpose)
1 tsp salt
1 tsp cinnamon
1 1/2 tsp baking powder
3/4 c pistachios
Recipe
In your mixing bowl, rub sugar and herbs between your finger until broken down.
Cream butter and herb sugar.
Mix in extract and cooled chocolate. Add eggs one at a time until blended.
In a separate bowl, sift flour, sugar, cinnamon, salt, and baking powder.
Add dry in 2 additions. Mix in pistachios and chill in fridge for 1 hour.
On a cookie sheet, divide dough into 2 balls, shape into long ‘loafs’ taking up most of the length of your cookie sheet. Give space between both loafs.
Bake at 350*F for 30 minutes, then pull from oven.
Once cool, cut logs into 1/2 in strips, and flip on their sides. Bake for 12 to 15 minutes more.

Un Bois Vanille (Serge Lutens)
In the early days of our marriage, my husband and I worked at adjoining stores in the local shopping mall. Without a car, we were compelled to take the earliest possible bus into town whenever we were both scheduled for an opening shift. Arriving at work hours earlier than necessary sounds like a positive drag-- but an empty mall at seven in the morning is a wonderland of hidden benefits.
My husband labored as a barista at the mall's only high-end coffee shop, which boasted two incredible features: the world's most comfortable carpeted floor, and a bank of counters which concealed said floor from public view. He'd set a digital kitchen timer for one hour, and we'd stretch out on the floor and sleep until the alarm went off. The store was silent except for the hypnotic hum of multiple refrigerators. As we drifted off into slumberland, we breathed in the scent of coffee and tea, cardamom and cinnamon, sugar and steamed milk. It broke every rule, and we couldn't live without it-- the one illicit luxury of our workaday lives.
Un Bois Vanille catapults me back to that moment of precarious safety in the warm, pitch-dark womb of the coffee shop before opening time. It opens with an intense, warm, and savory aroma of dark-roasted coffee, then flits around touching on all of the amenities a coffee drinker might find in their favorite java haunt-- amaretto, anisette, biscotti, cardamom, demerara sugar, loose black tea leaves, chamomile flowers with their prickly, pollen-rich scent. All this winds down to a lovely, peaceable accord of hot milk and honey, such as one might drink in the evening to encourage sleep.
In a way, Un Bois Vanille is a sketch of a "day in the life" -- from stimulating, supercharged morning to the tranquil repose of bedtime -- told through the little consumer pleasures that give our daily grind a touch of human comfort. Christopher Sheldrake, all is forgiven.
