I made sugar-free gluten-free pancakes with blueberries and maple syrup as toppings. After I was done making the pancakes I added the blueberries to the pan with a small very small amount of water to heat them up a bit so they would be soft and explode over the pancakes when I cut into them.They’re sugar-free and I used flaxseed to replace the egg.

Almond and Seed Overnight Oats

Mondays are not always easy; but they are made that much better when all you have to do is open the fridge and find these simple yet tasty Almond and Seed Overnight Oats for brekkie! Have a good one!
Ingredients (serves 1):
1/3 cup whole rolled oats
1/2 teaspoon flax seeds
1/2 teaspoon chia seeds
1 1/2 teaspoon demerara sugar
8 almonds +  more for sprinkling
1/2 cup goat’s milk, plain or soya yoghurt
In serving bowl, combine whole rolled oats, flax seeds, chia seeds and demerara sugar.
Roughly chop almonds, and add to the bowl; give a good stir.
Then stir in goat’s milk yoghurt until well-combined. Cover with cling film, and place in the refrigerator overnight.
The next morning, roughly chop a few almonds, if desired, and sprinkle them on top of Almond and Seed Overnight Oats. Enjoy with a cup of tea or coffee!

Flaxseeds can be ground into powder and added to any food. 1 to 2 tablespoons a day, flaxseed powder will not change the taste of food.
