007 Fest - Felix Friday Cocktail
The Jamaica Contact with a Side of Danger
1 1/4 oz lightly aged Jamaican rum
2 oz crème de banane
1/2 oz lime juice
1/2 oz demerara syrup
+
1 oz Jamaican overproof rum, served separately
Combine the first 4 ingredients with ice in a rocks glass. Serve with a shot of overproof rum on the side, to be poured in to taste.
The original film version of Felix Leiter, as introduced in the movie Dr. No, blends in while undercover by imbibing the local beverages. This simple and well-balanced cocktail features a smooth blended Jamaican rum (I recommend Appleton Signature Blend for delicious caramel notes) balanced with a quality crème de banane and fresh lime juice. Amp up the complexity with a demerara sugar syrup, and you have a handsome 4-ingredient taste of the tropics that’s fine on its own…but it’s better with a side of danger!
The Jamaican classic overproof white rum by Wray & Nephew (126 proof) brings a bright, grassy freshness to the drink…and packs one hell of a punch! Float as much or as little of the overproof rum shot atop the cocktail as you like, but be sure to keep your wits about you; you can’t afford to get so soused you miss your contact!
Note: Not all banana liqueurs are created equal, and this drink really exposes the quality of its ingredients. The pall of cloying, artificial ‘banana flavoring’ from a cheap label will murder this drink, and not in a sexy Bond Girl way (more like an eaten by sharks way). Your best selections for naturally made banana liqueurs are Giffards’ Banane du Brésil or Tempus Fugit’s Crème de Banane.

Star Wars Cocktails: the Pabu Colada
Far, far away from your DNA template's piña colada! This version is less sweet, more tart, and the cachaça provides a distinctive funk worthy of Clone Force 99.

Cocktail masterlist
Ingredients
1/2 oz/15 ml lemon juice
2 oz/60 ml Jumex coconut pineapple juice*
1/2 oz/15 ml Cointreau or triple sec
1-1/2 oz/45 ml cachaça
Ice
Dragon fruit for garnish (optional, but this is what creates the gradient effect)
Methods
Shake together all ingredients except dragon fruit; strain into cocktail glass. Garnish with several small cubes of dragon fruit on a cocktail skewer.
*If you can't find the Jumex version, you could try substituting half pineapple juice and half coconut milk.

Pimm's Cups
Ava and I are loving our new flat in Tāmaki Makaurau, so even if we're only here for a few days, we are taking the time to lounge in the sun on the balcony, with beautifully refreshing Pimm's Cups --a classic of Summer cocktails for almost two centuries!-- at arm's length! Cheers!
Ingredients (serves 2):
3 medium Garden Strawberries
1/3 cucumber
1 orange
about 2 or 3 dozens small ice cubes
1/2 large lemon
120 millilitres/4 fluid ounces Pimm's No. 1
chilled Ginger Ale (like Bundaberg's), to top
2 sprigs fresh mint
Rinse the Strawberries, cucumber and orange under cold water. Then, pat them dry.
Halve two of the Strawberries, and cut six thin slices cucumber and two slices orange. Set aside.
Fill two Whisky or Collins glasses to three-quarters with ice cubes.
Thoroughly squeeze lemon juice, and divide between both glasses. Pour Pimm's No. 1 over the ice and lemon juice in each glass, and add an orange slice in each. Top with chilled ginger ale.
Garnish with reserved cucumber slices, Strawberries and mint sprigs.
Enjoy Pimm's Cups immediately, preferably in good company...
