🥞coffee oat pancakes🥞
(Makes 2 servings)
- 100g oats (~1 cup)
- 1 banana*
- 100ml soy milk
- 100ml coffee*
- 1 tsp baking powder
- 1 tsp cinnamon*
- Pinch of salt
🌟method🌟
1. Blend all the ingredients together until you have a smooth batter.
2. Cook your pancakes on a pan in a little oil on both side! You can pour it on the pan directly from the blender so you don’t have extra dishes to clean😉
3. Add your favorite toppings!
Protein waffles makes an easy, healthy breakfast for everyone. Protein is important, but especially in the AM for those with anxiety. (You can also freeze and re-toast them). We like meals over here that gives everyone (especially the picky eaters) options. Some ways I do this are smoothie/acai bars, taco/nacho/salad bars, build-your-own skewers, and waffle bars (shown). By giving your kids more choices and control, you are encouraging them to take charge of their health. Everyone wins! 🧇

For Ratatouille 1 pound baby eggplant, quartered 2 zucchini squash, medium diced 1 yellow squash, medium diced 1/2 red onion, medium diced 1 1/2 cups baby tomatoes, cut in half 1/4 cup chopped basil salt and pepper to taste
For Chickpea Pancakes
1 cup chickpea flour
1 cup + 2 tablespoons water
1 teaspoon olive oil
1/4 teaspoon cumin
1/2 teaspoon salt

How to Prepare Farmer’s Market Ratatouille With Chickpea Pancakes [Vegan]
Add 2 tablespoons olive oil to a large pan. Cook the eggplant until the flesh is browned and eggplant is soft. Remove to a bowl
Add the zucchini and yellow squash to the pan and cook until they begin to brown. Add the onion and cook until the zucchini are tender. Add to eggplant and let cool
Combine tomatoes and basil with cooked veggies
Combine all pancake ingredients in a bowl and whisk well. Let sit for 1 hour until mixture thickens.
Heat a non stick pan with 1 teaspoon olive oil. Add batter by the 1/4 cup and cook for about 30 seconds to 1 minute on each side until just barely brown. Remove and repeat with the next 1/4 cup batter

All you need to do is mash the banana with a fork, add the egg an the flour. Mix everything together and cook over low heat in a non-stick pan(or put oil or butter in a regular pan). When bubbles form on the pancakes, turn them over and cook them for about 1 minute. You can also add a sweetener in the dough ( like honey or sugar), i don’t do this cause banana is already really sweet and usually i eat them with some jam on the top and other fresh fruits ♡
