Spicy Chashu Ramen with Soft Boiled Egg (Serves 2)
Ingredients:
Ramen Broth (store-bought or homemade - chicken or pork recommended)
For the Chashu Pork:
1 lb boneless pork belly
4 cloves garlic, smashed
1 inch ginger, peeled and sliced
½ cup soy sauce
¼ cup mirin
2 tablespoons sake
2 tablespoons brown sugar
4 cups water
Ramen noodles (fresh or dried according to package instructions)
2 large eggs
1 can (14 oz) bamboo shoots, sliced
4 scallions, thinly sliced (separate white and green parts)
2 sheets nori, cut into thin strips
Chili oil (to taste)
Instructions:
Marinate the Chashu Pork: In a large pot, combine garlic, ginger, soy sauce, mirin, sake, brown sugar, and water. Bring to a simmer, then reduce heat and simmer for 5 minutes. Add pork belly and ensure it's submerged in the marinade. Cover and refrigerate for at least 4 hours, or ideally overnight.
Cook the Chashu Pork: Bring the marinade in the pot to a simmer. Cover and simmer for 1.5-2 hours, or until pork is very tender. Remove pork and let cool slightly in the marinade. Once cool enough to handle, thinly slice the pork belly against the grain. Reserve the remaining marinade for later.
Soft Boil the Eggs: Place eggs in a pot and cover with cold water. Bring to a boil, then immediately remove from heat and cover for 7 minutes for a runny yolk, or 9 minutes for a slightly firmer yolk. Drain hot water and run cold water over the eggs to stop the cooking process. Peel and set aside.
Prepare the Ramen: Cook ramen noodles according to package instructions. While noodles are cooking, heat reserved marinade in a saucepan.
Assemble the Ramen: Divide broth between two serving bowls. Add cooked ramen noodles, then top with sliced chashu pork, bamboo shoots, white parts of scallions, and a soft-boiled egg (cut in half if desired). Drizzle with chili oil to taste.
Garnish and Serve: Top each bowl with green parts of scallions and nori strips. Enjoy immediately!
Tips:
Leftover chashu pork can be stored in the marinade in the refrigerator for up to 3 days.
For a richer broth, you can add a tablespoon of butter or sesame oil to each bowl before serving.
Want to make your own chili oil? Simply infuse neutral oil with crushed red pepper flakes for a few days.
Experiment with other toppings! Popular options include corn, bean sprouts, wood ear mushrooms, and seaweed salad.

ghhh... got lost under mexican cooking tutorials...
#they look so yummy....#i've never cooked mexican food so im not very familiar with how it works#like when i cook from scratch it's often japanese food (and sometimes chinese) so im familiar with those condiments/seasonings#and techniques and such#so you could leave me without a recipe and i'd be able to make something decent#i mean im not like super SUPER familiar with it but that's because i dont cook often enough for that. but as far as cooking familiarity goe#japanese is what i'm most familiar with#cannot say the same about mexican#i want to try out some mexican recipes#and also do some more of the chinese ones#also like middle eastern cooking.#also i'd like to figure out how to cook vietnamese food that doesn't just taste like fish sauce#i'll use like a QUARTER of the fish sauce a recipe says. and i can still. only. taste. fish sauce.#and everything smells like it too.#idk how vietnamese places manage to not get that to happen#unityrain.txt#tw food#also. i am very into finding authentic/traditional recipes for things. which is not at all how my mom would do it lol#if i wanted a recipe for dumplings i would either take my time to find chinese cooking blogs and read the “about” section#or find cooking tiktoks/videos where the grandma is helping and cannot speak any english so the granddaughter translates#and then compare like recipes from multiple places#but my mom would just. go to the first mommy blog that comes up where the suburban mom of three running it's entire asian seasoning#consists of soy sauce garlic ginger power and a fuck ton of cornstarch#needless to say. “”ethnic“” dishes my mom would find did NOT taste great.

Come cucinare il riso alla giapponese

Fin dall’alba dei tempi, nell’alimentazione del popolo giapponese, il riso ricopre una parte fondamentale.
Dalla colazione alla cena, una buona ciotola di riso bianco è sempre presente.
Proprio come il pane sulla tavola degli italiani, il riso in Giappone è quella pietanza dal usto neutro che accompagna altre pietanze dal gusto più deciso.
Vi sarete sicuramente chiesti qualche volta, come facciano i giapponesi a mangiare il riso con le bacchette.
Questo perché il riso italiano e quello giapponese sono diversi tra loro.
Il riso giapponese è più piccolo e rotondo e risulta assai più glutinoso e compatto dopo la cottura.
Oggi, per chiunque volesse provarlo, è facilmente reperibile in ogni supermercato o on-line.
Noi voliamo proporvi una ricetta semplice e efficace per cucinarlo a casa vostra con gli utensili di tutti i giorni.
INGREDIENTI per 2 persone
300g di riso giapponese
420g-470g di acqua
PROCEDIMENTO
1 Lavare il riso delicatamente con acqua fredda, cambiando acqua ogni volta fino ad ottenere  l`acqua più limpida possibile
2 Mettere il riso in una pentola capiente con 420g-470g di acqua. E lasciarlo in ammollo per circa 30min-60min
3 Far bollire a fuoco medio tenendo il coperchio chiuso. Quando l`acqua bolle, abbassare la fiamma al minimo e continuare a cuocere a coperchio chiuso per circa 10min-12min. Dopo la cottura non dovrà rimanere acqua
4 Lasciar riposare con il coperchio chiuso per circa 10min
5 Girare il riso delicatamente e servire.

Grandma's Peach Cobbler Recipe
The crust:
1 cup of self-rising flour
1 cup of sugar
1 teaspoon of ginger
1 teaspoon of cloves
1 teaspoon of nutmeg
1 tablespoon of cinnamon
1 cup of milk
1 stick of butter
The filling:
5-6 fresh peaches
2 cups sugar
1 tablespoon of cinnamon
1/4 cup of water
Instructions:
Peel and cut the peaches.
Pre-heat the oven to 350 degrees Fahrenheit.
Grease baking dish and place stick of butter in the dish. Put baking dish in the oven to melt butter.
While butter is melting, mix all of the other ingredients for the crust in a bowl.
Start the filling on the stove top on high heat, if the butter isn'tmelted yet. Stir periodically.
Take the butter out of the oven after it is just completely melted, don't let it burn. Turn the oven to 400 degrees Fahrenheit.
Pour the crust mixture into the dish without doing anything else to the butter. Don't stir.
Not long after the peaches begin to bubble and the liquid becomes syrupy, take the filling mixture off of the stove top, and spoon the peaches on top of the crust and butter mixture. Make sure to add some of the syrup, but not so much that the dish overflows in the oven.
Place the dish into the oven. Bake for 30 minutes or until the crust turns golden brown, whichever happens first.
Best served warm with vanilla ice cream.
Daily update after the cut:
I honestly haven't done much studying or class work lately. I found out my dog has a new medical condition and I've still been dealing with that. I also spent all day yesterday at my grandparents house. But, today I finally got around to making a peach cobbler. I was so excited to use the strawberry baking dish my grandma bought for me from Home Goods. I rarely get to use it. I did end up burning my arm when taking it out of the oven.
I also have done some journaling today. I'm finally going back to therapy this coming week to help with my anxiety about changing my career plans so soon after university and about my upcoming Japan trip. I've never been out of the country and the only time I've flown was a one hour flight. I'm also terrified of heights.
All in all, I haven't been very productive, but I've been doing pretty good in other aspects.

On the eve of Halloween, the smell of sweet sweets drifted in the kitchen of Crown Castle.
Victor: "It's about time to finish baking. Now, take the scones out of the oven."
Ellis: “Miss Kate, let me do it, I don't want you to get burned.”
Kate: "Thank you very much. Ellis, please be careful.”
Ellis: "Hmm. ......Oh, it's baked beautifully."
Victor: "Ahahaha, it’s my secret recipe for scones with extra butter.”

We cheered as we looked at the scones, which were perfectly baked as if they were for sale.
Tomorrow, October 31st, Halloween will come to England, and the city will be bustling.
I was talking with Ellis about whether we could do something for the people of the town.
I decided to hand out scones after learning from Victor.
We don't live in the sunshine, but it shouldn't be a bummer if we do this every now and then.
(.....It's so Ellis to be so friendly and kind to the people of the town that he wants to distribute sweets.)
Victor: "Are you going to distribute this tomorrow?"
Kate: "Yes, I intend to do so."
Victor: "That's very nice. As expected of my kind-hearted Ellis and Kate!"
Ellis: “Victor... You hug is a little bit too strong."
Victor: "Oops, my apologies! My love has overflowed."
Victor: "But be careful of one thing. Tomorrow is 'Night of the Moonbeams'."
Kate: "Night of the Moonbeams…?”
Victor: "Oh, I see. Kate, I haven't told you yet."
Victor explains it to me.
Every few years, when Halloween falls on a full or new moon, it is said that the "sin of the cursed will be intensified".
It is also known as "Night of the Moonbeams" because moon flowers bloom to coincide with the festival.
(...Such strange things happen. Maybe it's because of the phases of the moon?)
Kate: “Thank you for your concise explanation. So, what actually happens when sin intensifies?'
Victor: "As much as i’d like to tell you, I don't really know what will happen!”
Kate: "Eh?"
Victor: "The last time the Moonbeams Night happened was 20 years ago."
Victor: “Twenty years ago...Most of the children of Clowns weren't even aware that they were cursed, were they?"
Kate: “Yes, that's right. Let's see, Ellis, 20 years ago...”
Ellis: "...I wonder if I'm finally able to speak?"
Kate & Victor: ".............Cute"
Ellis: “...Fufu, both of you are sharing the voices of your hearts.”
Kate: "Oh, I'm sorry. I just...”
Victor: “Ahem. So, to sum it up, tomorrow is your first dangerous night in 20 years."
Victor: “You never know what's going to happen. You have to be back before the moon rises in the sky.”
Ellis and I carry the cooled scones and wrap them one by one.
Kate: “By the way, the decorations in this dining room are amazing...”
Ellis: 'It's a tradition. I help Victor every year."
Ellis muttered something in between the casual conversation.
Ellis: "Is it okay if you come with me…..tomorrow?"

Kate: “Eh…..?”
Ellis: “Aren't you afraid of me, Miss Kate?”
Ellis: "If you're even a little scared, I'll stop being with you."
Ellis: ".....I just want to make you happy, but I don't want to scare you."
(Because you never know what might happen on the Moonbeams Night, right?)
To be honest, I don't know what will happen tomorrow, either.
(I only know that Ellis will never do what I don't like.)
(Besides, I don't want to be afraid of Ellis.)
Kate: “I want to be with you. It's our first Halloween together."
Ellis: ".....Thank you, Miss Kate. ...Actually, I also wanted to be with you."
Ellis's sweet smile makes me smile too.
Kate: “Then we're in this together."
Ellis: “…Yes, together.”
Ellis: “But I can't even imagine what a heightened sin of my curse would look like.....”
(Huh? Speaking of which.)
Kate: "I still haven’t known about Ellis's curse."
Ellis: "Oh, is that so?" :0
Ellis: "......Then guess what it is." :D
For example, William is the curse of the king of self-righteousness, so I think sin is self-righteousness and condemnation.
(Ellis comes with Thorn curse. So to think.....)
Kate: “.....Do you stab the other person?"
Ellis: “Fufu, lovely. Slightly incorrect."
Kate: “U-uh, well then—“
Ellis chuckled as he stared at my thinking face.
Ellis: “I think I'll just shut up for a bit because you're so cute looking for answers.”
Ellis: "......If possible, I want you to keep not knowing."
Ellis: "If you know the answer, tell me."
Then, on Halloween day, we headed out into town with our wrapped scones in hand.
It is said that Halloween in the UK lacks excitement, the city is found to be livelier and more buoyant than usual.
An old woman who sells fruit: "Oh, Ellis, little girl. Happy Halloween."
Ellis: "Hello, Anna."
Ellis: "Hey... Trick or Treat?”
An old woman who sells fruit: ".....? Trick or treat?”
Ellis: “Yes, treat. ...Here you go."

An old woman who sells fruit: “Oh my God. ......Are these homemade? Oh roastie, thank you, you two."
Bookshop owner: "Hey, Ellis! Miss Kate! Those are sweeties, aren’t they?"
Bookshop owner: “Well, then, be my guest. Trick or treat!"
Ellis: “Here you go. It's got lots of butter, so it's bound to be good.”
A child dressed as a ghost: "Brother, sister! Trick or Treat!"
Ellis: "Be careful not to fall.... Yes, please."
(Fufu, Ellis is very popular! And everyone seems to be having fun.....)
When the sun began to set, the scones in the basket were empty.
Kate: "Wow... All's gone now. It went by so fast."
Ellis: "Yeah. Oh, that's right."
Ellis: “Miss Kate, do you want to trick-or-treat with…me too?”
(…..With you?)
Kate: “…Trick or Treat?”
Ellis: "Yes, please. I hid the last one for you."
Kate: "B-but if I get it, I'll get Ellis's share...”
Ellis: "I'm fine. .....If you're happy, that's enough."
Ellis: "Or do you want to play a trick on me?"
Kate: 'O-oh, sweets are good. Thank you."
Ellis: "Fufu, you're welcome."

He puts his own desires aside and always puts other people's feelings first, that's Ellis I know.
To give me the last of the sweets without any hesitation.
Every time I see Ellis like that, I admire his kindness, and then I feel a little lonely.
(I wish I could make you happy, Ellis, instead of just having you do things to me.)
Bar owner: “Ellis, missy! Stop by the tavern. I'll buy you a drink for the scones."
Me and Ellis look up at the sky at the same time.
The sun has just started to tilt, and it seems that there will still be time before the moon appears.
Ellis: “Miss Kate, are you leaving now? Or do you want to go to the tavern with me?”
