The touch-me-not (Mimosa pudica) folds its leaves in when touched or exposed to really any mechanical stimulus: heat, electricity, etc. It shows a simple form of learning where repeatedly being exposed to a stimulus that doesn’t hurt will cause it to stop reacting, which lasts for at least 28 days. Plants raised in low light, because they have less energy and a greater need to reduce unnecessary movement, learn faster.

My dad knew a man with a fruit-bearing tree (I think a date palm but I'm not sure), he wouldn't allow my dad to eat of the dates he gave to him near it--he insisted he go out of earshot or it won't bear fruit.
Plants can feel things like fear, we just still don't understand how, aside from using scents (the freshly-mowed gras smell people enjoy is a distress signal! ... plants produce it if you play the sound of a catterpillar munching leaves! They can hear and feel fear and warn other plants about it!).
The old theory that the mimosa pudica's receptors get overwhelmed if you stroke its leaves too many times and that's why it stops closing its leaves, so don't do it or you'll hinder it from being able to protect itself... turned out to be false! it simply becomes aware that you are not a threat and stops closing its leaves for you, but if subjected to another, new/unfamiliar sensation, it closes its leaves again!
They tested this by having some kind of robotic arm drop a potted plant briefly, then stopping it. It panicked at first, then, once it realized it would safely stop falling after a few goes, it stopped reacting.
Plants are alive. Every creature around us is alive. We are all capable of feeling. All life feeds on other life. We might not understand, right now, how a plant feels or learns, because they are so different from us humans and from animals, which are much more alike, but they too feel.

Ridia Pokedex #015 - Mimovis Shy Plant Pokemon Grass Type Height: 1"00' It is thought that Mimovis can see the future, but is too shy to share its visions. When it is startled, it folds the leaves on its head in to hide its face.

Mimovis = Mimosa pudica + novice
Mimosa pudica is also known as the shy, shame, or sensitive plant because its leaves, when touched, begins to fold inward and close.

I decided to give it a small, chibi-reptilian form as to mimic the axolotl; I thought the animal would pair best with the plant's leaf and stem shape.

The green and pink coloration ad patterns comes from the mimosa plant itself, since the flowers are pink and fuzzy. It just happens to be a bonus that Axolotls are pink too <3

And lastly, the style of coloring was inspired Sugimori's old art style for Pokemon.
The Pokedex entry mentioning visions is tied to its oracle evolution, which as of posting this has yet to be revealed, but ties into why "novice" was decided to be a part of Mimovis' name.
