Alfajores with Chocolate Ganache and White Chocolate Caramel Crémeux
These use the same alfajores cookie recipe I used last time I made them, which is here. The only change is that 1/6th of the flour in the recipe is spelt and of course I added 1 pinch of salt (only 1 pinch because I made a 1/2x batch, which makes about 30 cookies if you roll them a just a little thinner than 1/2cm like I did). I used my mooncake mold as the cookie cutter (somewhere between 2.5 and 3 inches in diameter). Baked at 350F for 9ish minutes. The filling uses a dark chocolate ganache made from Valrhona Caraïbe and a white chocolate caramel crémeux made with Valrhoina Waina. Both recipes are from the Essentials section of the Valrhona app (see food folder for images of the recipes). Used a Russian piping tip for the ganache and a round piping tip for the cremeux. The cremeux needs to be cold for it to be thick enough to pipe.
