Citizen Cooks in the Age of Napoleon

Excerpt about the role of cooks in France after the abolition of culinary guilds, and how they navigated a world which demanded for them to find new ways to stay relevant and prosperous. From Defining Culinary Authority: The Transformation of Cooking in France, 1650-1830 by Jennifer J. Davis:
French cooks sought new sites upon which to rebuild the authority of culinary labor. Throughout the early nineteenth century cooks increasingly adopted scientific terms to demonstrate their reliability and profound knowledge of the culinary arts. Such language communicated the author's education and distinction, just as an appeal to an elite patron had done in the 1660s and referral to a cook's professional expertise had done in the 1760s. The rhetoric and institutions of scientific knowledge also provided a means of distinguishing men's work from women's in the post-revolutionary era. During the early nineteenth century, cooks' claims to scientifically valuable savoir-faire rested on three crucial points of culinary innovation: food preservation, the improved production of bouillon, and gelatin extraction.
As these processes left the realm of traditional knowledge and became sites of scientific inquiry by tradespeople and amateurs alike, cooks sought to maintain authority in this arena by including scientific terms and theories in cookbooks, advertisements, and government petitions.
Two factors encouraged cooks' claims to scientific knowledge during this era. First, when Napoleon Bonaparte took the reins of government as first consul in 1799 and established himself as emperor in 1804, he raised medical doctors and academic scientists, Idéologues, to positions of political prominence. From these posts, the Idéologues subsidized experiments and inventions deemed useful to the nation and encouraged the popularization of science in the public sphere through state sponsorship of exhibitions and print forums. The Idéologues particularly supported research related to food preparation and preservation that might benefit France's armies and navies, with obvious benefits for professional cooks. Many cooks presented their particular techniques to the government during this time, seeking both financial recompense and public acclaim. Second, a voluntary association closely allied with the Idéologues' vision, the Société d'encouragement pour l'industrie nationale (Society for the Encouragement of National Industry), provided a forum in which formally trained scientists, politicians, merchants, artisans, and curious educated men might unite to address questions that inhibited French science and industry.
Together, these men sought to develop a more coherent program for industrial advancement than any one group could achieve independently. The society explicitly sought to join scientific knowledge to artisanal practical expertise, recognizing that each group had strengths that would benefit industrial development. This association invested heavily in three diffuse projects that eventually infused the most basic culinary processes with scientific awareness: new methods of food preservation to benefit the nation's armies and navies, new methods of stock preparation to sustain the nation's poor, and new methods of extracting gelatin from bones to improve hospital and military diets at little added expense.

bc ive been watching the great british baking show recently
ludwig: so i gotta start with the obvious here, hes shown to have quite an interest in baking throughout the series. i love the thought that this intimidating muscular tough-looking guy is actually a big softie who loves baking streuseltaler and torten and krapfen… i would think he would be most either when overwhelmed by work (as a way to chill in his free time) or right before another nation rep visits his capital for a meeting or something. like arthur, kiku, or alfred or whoever travel over to discuss world relations and trade or whatever tf, but before they start talking ludwig offers them a slice of cake and says in his serious business meeting voice that he made it for this occasion
roderich: another obvious one, as he too is seen baking at different points and it seems to be one of his favorite hobbies/activities along with music. he’s not very affectionate to those he cares about, but i would imagine those close to him (erzsi, feli, ludwig, even gilbert) can see his care through the amount of baked goods he offers them when they visit his house. he probably is also one of, if not the best, baker out of all of the nations reps, as austria is known for its incredible pastries and sweets (strudel, kaiserschmarrn, various torten, etc). yeah, so [insert meme about after u visit grandmas house and you’ve gained 10 lbs]
i know this one’s gonna be controversial, but arthur: there’s something alfred mentions in an episode where he says something about arthur serving him scones, so u know what? my hc is that arthur may not be very good at baking, but he still does it, just as a new skill to learn
francis: a country with such delicious and world famous pastries has got to be included on this list. he doesn’t always bake, and its not as important to him as it is to, say, ludwig and roderich, but he still bakes, esp when he knows alfred and matthew are visiting, or when he has foreigner visitors who he wants to impress with his crêpes, macarons, and éclairs. he also esp enjoys baking mille-feuilles (my personal fav french pastry lmao) and at christmas (which he celebrates with arthur, alfred, and matthew) bûche de noël
kiku: in the latest season we saw that kiku likes baking with ludwig. i imagine that he’s only recently been learning to bake as a relaxation technique. he bakes japanese sweets and pastries, like mochi, dango, and those delicious japanese matcha rolls, but bc of his friendships with alfred ludwig and feliciano, he’s also tried backing apple pie, strudel, and tiramisú (and they have all been impressed by his efforts)

I think of it from Arthur's perspective at Francis.
"I wrote a goodbye note in lipstick on your arm When you passed out I couldn't bring myself to call Except to call it quits"
I'm imagining Arthur and Francis in a terrible on-again-off-again situation. It's awkward. Tension is high but they're pulled back to one another continuously. Arthur has a hard time talking about their situationship, and as much as he doesn't want to, he's able to finally say something when it's time to call it quits. Also the idea of Francis owning lipstick is something I hold dear.
"Best friends, ex-friends 'til the end Better off as lovers and not the other way around Racing through the city, windows down In the back of yellow checkered cars"
I think a good way to describe FrUK is "best friends - ex-friends." Ultimately their relationship is one of enemies, frenemies, or what have you, but I like to think that their relationship overall is a rollercoaster ride. They can have good moments of clarity where they're together playing whatever drinking game. However they're also bitter enemies and the two of them are just full of spite. A constant battle of back and forth. However the middle ground is lovers. Is it better to be lovers? Better to be together and crazy for another and not the other way around? While there can be strenuous moments, maybe the good times with Francis are enough for Arthur to have a moment to be carefree.
"This city says, "Come hell or high water" Well, I'm feeling hot and wet I can't commit to a thing Be it heart or hospital"
There's a lot of tension spurred lust in this relationship. That's all I have to say about that. However I think neither of them can really commit to to the relationship, especially Arthur. I think typically he's a man who doesn't know when to give up (in a detrimental way), however with Francis, the uncertainty of allowing himself the vulnerability of being ensnared in a game of hearts is what gets him. I think to a degree, it's hard for Francis to commit in the way that there are people who could treat the both of them better. Both of them are honestly a little lost in the security of someone they've known for so long, they know so well, and who they know will just leave them hurt and broken hearted again. And yet... They're drawn back together.

The tombstone references the end of their relationship. I love graveyard imagery and the notion of mortality, so that's a personal bias. Anyway, going back to the first verse about Arthur being able to call only to call it quits -- I think the uncertainty of their relationship and when this on-again-off-again game will end plays into "what is the final nail in the coffin?" questioning.
"And I cast a spell over the west to make you think of me The same way I think of you This is a love song in my own way Happily ever after below the waist"
I think taking "I cast a spell over the west" literally with the sense that England has... mage or magic abilities is a little silly, but it could work! I think it could also just refer to wit, charm, or manipulation? I like to think that with FrUK, it's a mutually obsessive relationship. Neither of them are particularly healthy about how much they think about the other. Whatever this back and forth game is what Arthur's used to. Bringing Francis down to his level is the love song? Anyway, "happily ever after below the waist" is exactly what it sounds like. Even if Arthur's called it off, they're back together again.
Better off as lovers... not the other way around
