Please STOP - NO Judgement 👐🏻 
Whilst most of you appreciate my vibe, I’ve had some not so appreciative views and comments of late - I understand we are all overwhelmed, worried and concerned, living from fear and not LOVE. 
My purpose here is to bring light, peace and love ❤️
I do this through writing and sharing imagery to inspire you to live with Love & Truth by your side…
Some of you do this through creating epic food, photography and art ✨ 
I share content that I hope can inspire you to live with a focus on #wellness #selflove and #mindfulness 🕉
So I know that today’s #mondaymindfulnessmantra may not sit well with some, but we cannot lose faith, or HOPE, let us continue with our #mantras our #affirmations #meditationpractice and #selfcare now more than ever, please it is what will get us through, sending love, inner peace and health and #vitalityandmore to everyone

Stuffed Zucchini Flowers by @vitalityandmore 💛  Recipe:⠀ 30 zucchini flowers⠀ 2 cups organic white rice ⠀ 2 cups chopped tomatoes organic (fresh or can)⠀ 1 large onion finely chopped⠀ Juice of 1 1/2 lemons⠀ 4 tbsp tomato paste (organic)⠀ 1/4 cup extra virgin olive oil⠀ 1 tbsp salt⠀ 1 tsp cracked black pepper⠀ 1 tbsp dry mintHandful fresh mint leaves chopped (homegrown)⠀ 1/2 bunch chopped flat leaf parsley⠀ ⠀ So basically you just mix all these items together and taste the juice that it has the right flavour, proceed to fill your flowers and fold them into saucepan, carry on until mixture is finished. Drizzle a little more olive oil on the surface and then you're good to cook these little gems. Place a plate over the zucchini flowers and saucepan lid on, cook for 30 min on low-med heat on the stove. #letscookvegan⠀

Then for the filling:  Blend 1 1/2 banana 1 cup fresh lychees (pitted) 1/4 tsp vanilla 1/2 cup soaked cashews 1/4 cup melted coconut oil 2 tbsp. rice malt syrup . Pour into pans and freeze. Decorate with a little vegan chocolate drizzle, chocolate dipped lychees, (make sure you save 2 lychees!!) and some berries. Enjoy! #letscookvegan

Homemade Hazelnut Granola made with oats, nut butter, all organic ingredients served with coconut yoghurt berries, banana & chia 💛
Recipe is here for you to try - so much cheaper, tastier and better for you than store bought granola that can sometimes be full of hidden sugar, preservative and other nasties...
#Vitalityandmore Granola with Hazelnuts & Nut Butter
1/2 cup good olive oil Absolute Organic
1/2 cup maple syrup Pureharvest
3 cups organic oats Kialla Pure Foods
pinch sea salt
1 tbsp ground cinnamon
1 1/4 cups raw hazelnuts chopped roughly
1 1/4 cups raw raw peanuts roughly chopped
1 cup shredded coconut
1/2 cup peanut butter or almond butter
Simply whisk the maple syrup and olive oil in a large bowl adding the nut butter, ensure it’s all broken down together. Then add the oats, nuts, coconut and cinnamon and mix roughly with your hands and evenly spread onto a lined tray with baking paper. Sprinkle a little sea salt and bake in oven (pre-heated 200 degrees) for about 25 min until golden and crunchy - allow it to cool completely and then store in glass jar for up-to 2 weeks.
NOTE: if you don’t like oats or are gluten free then sub with quinoa flakes.

Weekends are for #baking #bananabread right? 🧡 Here’s #myrecipe If you’re interested, it’s really simple and I often change the addition of nuts, sometimes it’s walnuts, sometimes hazelnuts and as pictured here almonds too👋🏼 2 cups organic unbleached self-raising flour @kiallapurefoods (or spelt flour but use 1 tablespoon of baking soda for this option) 1/2 cup coco sugar 1/2 grape seed oil 1/2 cup organic almond milk @goodbetterbruce 3 ripe organic bananas 1 tablespoon ground organic cinnamon 1/2 chopped almonds Basically mix dry ingredients in a bowl and add all wet ingredients including banana into a high speed blender and blitz - I use my @vitamix - pour wet mixture into dry and mix together, adding the chopped nuts at the end and folding through evenly. Bake in pre-heated oven on 180 degrees for 55 min - Enjoy!
