Vegan Butter Chicken (With Tofu!)

Fried tofu with peanut sauce and sweet red onion dressing! I almost woke my husband up and sent him to the grocery store because I didn't believe it was possible to make something this good with just tofu and rice. But I grubbed around the fridge and found a chunk of red onion and chili peppers in vinegar and decided to see what happened.
Start rice, and drain and fry your tofu like this. We want the sauce flavors to have time to mix, so get two small bowls, juice half a lemon, chop red onion, and finely mince one clove of garlic. Put maybe 90% of this in the first bowl and maybe 10% in the second. Add a little sugar and a dash of fish sauce to each. To the first bowl, add chili peppers and liquid to taste. To the second bowl, add peanut butter, tahini, and smoked chili flake. When the tofu is done, serve with rice and garnish with toasted sesame.
When I make this again, I want to add crushed peanuts to both and finely chopped cucumbers to the onion mixture (sort of like a Southeast Asian version of Yamagata-dashi). Cilantro would be nice too. But this was delicious and it was satisfying to see what my stupid, lazy, depressed, can't-stand-up-without-pain ass can do with an empty fridge on a Sunday afternoon.
