Many people find cooking at home to be intimidating. But that's precisely why I enjoy searching for and utilizing all of these shortcut ideas to make amazing renditions of traditional recipes. A beautiful dinner that will wow your special dinner guest, made much better if it comes together quickly.
The green garnish on top of this meal is called Gremolata. Garlic, lemon zest, and chopped parsley are the ingredients of gremolata. This dish was transformed into an incredible, incredibly delicious stew with a simple addition.

Day 6 of getting my sh!t together!
Hello! Today was a productive day, even though it started late. I managed to sneak in a quick workout after having my morning coffee and burn the calories from yesterday's celebratory food fest. I told you I skip workout with any VALID excuse, but I make sure to do it on days that I am well and there's no excuse. The first meal of the day was my late brunch, and it was good. I managed to finish work early as well. Dinner was light and fulfilling.
Here's the menu for today:

My Recipe Book: Wild Mushroom Chowder

Serving size: 3 cups (meal), 1.5 cups (side)
Season: Autumn/Winter

Prep time: 20 minutes
Cook time: 25 minutes
Ingredients:
Vegetables
8 oz. Portobello mushrooms, chopped
8 oz. White button mushrooms, chopped
8 oz. Baby bella mushrooms, chopped
6-8 oz. Oyster mushrooms, chopped
4 oz. Shiitake mushrooms, chopped
2 oz. King oyster mushrooms, chopped
0.5 oz. Chanterelle mushrooms, dried and crushed
2.5 lbs. Yukon gold potatoes, cubed
4 oz. Carrot, sliced or shredded
2 green onions stalks, snipped
Dairy
1/4 cup Unsalted Butter
8 oz. Cream cheese pkg, cubed
2 oz. Parmesan, shredded or grated
2 oz. Cheddar, shredded
Seasonings
1/4 cup Seasoned Salt
1 tbsp. Trader Joe's Umami Blend (optional)
4 tsp. Chicken Better-Than-Bouillon, or 4 tsp. Chicken Bouillon
5 cups Water
2 tsp. Cayenne Pepper
2 tsp. Smoked Paprika
2 tsp. Ground Black Pepper
2 tsp. Celery Salt
1 tsp. Powdered Lion's Mane Mushroom (optional)
1.5 oz. Chopped Bacon/Bacon Bits (optional)
Tools
8 qt. Stockpot with Lid
Non-Serrated Kitchen Knife
Cheese Grater
Stirring implement
Potato Masher
Ladle
Instructions
Place the butter in the bottom of the stockpot and rough-chop all of your mushrooms. Toss the mushrooms into the pot on top of the butter, then add the green onions, carrots, and all seasonings on top. Cover and simmer on low for about 5 minutes.
While your mushrooms are simmering, cube your potatoes. When the 5 minutes are up, dump the potatoes on top of the mushrooms and add the water. Stir the mixture so that the potatoes sink to the bottom and the mushrooms rise to the top. Cover and bring to a rolling boil.
When the water reaches a high bowl, reduce the heat to medium and keep covered for 20 minutes or until potatoes are softened.
While the vegetables and seasonings cook, cube your cream cheese and shred your parmesan and cheddar. Set them aside.
After the 20 minutes is up, remove the pot from heat and let contents stand uncovered for at least 5 minutes before adding the cheeses. The pot must cool somewhat or it will break the cream cheese and ruin your meal. There is no saving the meal if that happens. If the pot becomes too cool and you find the cheeses aren't blending, you can put it back on the burner covered on low to reheat it slowly.
With everything now in the pot, grab your potato masher and start smashing the potatoes and cream cheese cubes. When the potatoes are mashed and the soup thickens, use the masher and just stir the soup until the cream cheese is thoroughly blended.
Some notes:
I don't bother to peel the potatoes because the skins are nutritious and relatively thin on Yukon golds, but you're obviously welcome to do so if you prefer.
Wearing a mask when snipping the green onions will keep you from tearing up!
The soup keeps in the refrigerator for about a week and a half. Add 1/2 cup of milk when reheating.
This is my own recipe, which actually grew out of my potato soup recipe. It's one of my favorite meals when I feel sick and it makes a ton. Outside of chopping veggies, it's not very intensive either. You can easily halve the recipe as well.
When I started doing nature photography, I wanted to identify and learn about my subjects. I found edible plants and mushrooms fascinating because I'm a pretty adventurous eater, so I started looking for ways to implement the stuff I found. Mushrooms, in particular, have a lot of health benefits that scientists are just discovering and different varieties are entering the broader consumer market. Safeway only just began carrying shiitake, oysters, and chanterelles in the last couple of years. Private grow kits are also available for people who like to grow their own food.
Try this recipe with your own regional mushroom varieties and experiment with the seasonings a little.

Beef Stew

Chicken Tortilla Soup (Crockpot)

Ingredients: 2 chicken breasts (1-1.5 lbs.)
1 medium onion, diced
2-3 cloves garlic, minced
15 oz. chicken broth
1 c. water
15 oz. can corn, drained
15 oz. can Rotel, undrained
10 oz. can enchilada sauce
1 packet taco seasoning
to taste: salt, pepper, chili powder, garlic powder, onion powder
optional garnishes: shredded cheese, tortilla strips, sour cream, avocado, jalapeño, lime, cilantro
(Yield: 6 servings)
Instructions:
Place chicken breasts in bottom of crock pot. Season with salt and pepper. 
Add diced onion and minced garlic. 
Pour over the top: chicken broth, water, corn, Rotel, enchilada sauce.
Sprinkle in taco seasoning and chili powder. Stir everything together. 
Cover and cook on high for 4 hours or low for 6-8 hours. 
Remove chicken, shred with forks and return to crockpot. Stir together. 
Let cook for another 10-30 minutes, pour into bowls, garnish and serve. Enjoy!

Day 2 of getting my sh!t together!
It is the second day of getting my life together, and although it wasn't perfect, it was still consistent. I am an insomniac, so sleep doesn't come easily to me without any help. I did not take my supplements or drink chamomile tea last night, which generally helped me to sleep. The supplements are usually made up of lavender and other herbs that help relax your nerves.
It works for me. So, I tossed and turned till 4 in the morning, as a result of which I could not go for a walk in the morning. But, I woke up just in time for my yoga class and joined it. I don't really enjoy it, but doing yoga makes me feel better throughout the day. It also helps me with sore muscles and body aches. I also feel very calm and at peace while doing it.
However, unlike yesterday, work was good. I managed to get a lot done and also binged on a couple of episodes from Queen of Tears. I'm so hooked on it. But, I can't watch anything at a stretch so I take breaks in between. It was a decent day but I wasn't feeling my best. I can't figure out why.
Anyways, now let's come to food. Since I woke up late, I wasn't in the mood for breakfast but I still ate something and lunch was a fulfilling Bengali meal, it was so yummy. Dinner was light and hearty. Also, I drank chamomile tea now, so hopefully I can sleep.
Breakfast:
1) Ice cream sandwich (I know not the healthiest option but I love it)

Morning Snack: I got snacky right before heading to shower and that's when I had some leftover white potato curry aka shada alur torkari! It's so yummy. There are days when I eat this for dinner by itself.

Dinner:
I had some chicken ham so I boiled some corn and stirred it with the ham in some butter and pepper. I then put together a salad with the buttered corn and ham, cucumbers, onions, and green chilies, sprinkled some garlic salt, pepper, and chat masala. Served with a spoonful of relish on top. This really put my day together. It was so comforting.
