I do think the chef wanted Tyler there for his enjoyment of food. He was perhaps meant to be the one person who would genuinely enjoy the menu that night. One last satisfied customer (he ends up more truly finding that in Margot). I think the chef only embarrassed him the way he did for bringing Margot along despite knowing she would die. That meal was not a planned part of the menu. If Tyler had brought his original guest I think he would have died happily as a smore with everyone else.

His passion for cooking while not being able to cook is fine, artists need people to love the things they create. Chefs need people to eat their food. But he is passionate to a point of leaving behind any sense of ethics. He talks down to Margot because she doesn’t get it (instead of perhaps, explaining it to her or just accepting that she has a different opinion) He’s totally okay with murder/suicide (from the get go!) as part of the theater of it all. He brings Margot along with no thought for her life because they don’t seat people alone and its just TOO IMPORTANT and he can’t apparently, ask the chef he’s in contact with if he can come alone. He is fully willing to die to witness this culinary performance. His passion goes beyond reasonable, healthy boundaries.

It would also be grating as an auteur of your craft to have someone who has never put in the blood, sweat and tears into becoming skilled at it to act like he knows just as much or more than you. And the chef did bring an actor to die just because he was in a shitty movie (and seeing his own reflection as an artist who had lost his way). So idk he’s not picky. And Tyler is also still rich enough to afford a table, which is a big factor in who the chef wants dead is how wealthy they are.
