So delicious!! This is mine and my boyfriend’s new favourite dessert!
Recipe below ⬇️
Raspberry Cloud Dessert - 103cals (Eat as is, or as a delicious fruit dip!)
Sugar free raspberry jell-o mix - 5g - 8c
Boiling water - 125ml
Cold water - 125ml
Co-op brand Light whipped topping ( or light Cool Whip) - 85g - 198c
Mix jell-o powder with boiling water and whisk until dissolved. Add cold water and whisk well. Add in cool whip and whisk until well combined. Pour mixture equally into two dishes (should be 165g in each serving) and cover. Refrigerate for a few hours to set, & enjoy!! 😊
*This recipe is 206cals total, but I split it into 2 servings, each being 103cals*
*You can make any flavour of this dessert, use any flavour of sugar free jell-o mix that you like! Use the same amount (5g)*

Burrata tomato salad 298kcal 12g protein
For this Italian bruschetta inspired goodness u need:
250g tomatoes 38kcal
1 burrata ~260kcal (best cheese ever)
chives, garlic, salt, pepper
1.) cut up ur tomatoes & chives
2.) press the garlic into a bowl
3.) mix tomatoes, chives, garlic and herbs
4.) add Burrata on top and enjoyyyyyyyyy

tomatoes are so good for ur health and skin! they contain a lot of water, as well as a lot of vitamin c and potassium.
burrata is the best cheese ever (in my opinion). it’s creamy and delicious. it contains 12g of protein which makes this meal satisfying and filling.

Big Lots Haul
Some shit I bought at Big Lots this weekend:
Individual packs of snacks of popcorn, fruit & bars.
I like these. I am trying to include fruits and snacks in my eating plan. Keto doesn't allow for either of these...and that made me go a little nutz when trying to smash myself into a keto box.
Calorie counts on the bars. Because honestly sometimes I don't know why I buy these, it seems disingenuous.... because they are super processed and that is something I am trying to avoid for the most part. Obviously not going to avoid them if I bought them.
At least I stopped myself from buying shit I already had/have. And some things that the price point just wasn't good on.
They had Lankato products, yay! But I still have some from the last time I bought it.
$9 & change for 4 Quest cookies? No thanks.
Maybe I will do a post to figure out how to pair these in a satisfying way.
I feel like I eat ALOT. Or have the urge to eat alot. 🤔 It Is maddening. Sometimes it is just out of habit, & sometimes I am legitimately not hungry- like I just ate something.
Alot of that comes from being poor as a child and not knowing where my next meal would come from. Obviously I overdid it when food became available.
