Loaded Vegan Hummus Bowls For the Hummus:
1 cup dried chickpeas (or 2 cups cooked/canned chickpeas)
1/2 teaspoon baking soda (if using dried chickpeas)
1/3 cup tahini (sesame paste)
1/4 cup freshly squeezed lemon juice
2 garlic cloves, minced
1/2 teaspoon salt, or to taste
2-4 tablespoons ice water
2 tablespoons olive oil
For the Bowl:
1 cup quinoa (cooked according to package instructions)
1 cup red cabbage, shredded
1 carrot, grated
1 small cucumber, sliced
1 avocado, sliced
1/2 cup cherry tomatoes, halved
1/4 cup red onion, thinly sliced
1/4 cup olives, sliced
Fresh parsley or cilantro, chopped
Lemon wedges, for serving
Additional olive oil, for drizzling
Salt and pepper, to taste
Instructions:
1. Prepare the Hummus:
If using dried chickpeas: Soak the chickpeas overnight in plenty of water. Drain and rinse, then boil with 1/2 teaspoon baking soda for about 45 minutes or until tender. Drain and cool.

Do you have any recipes for a horsekin that mimics natural diet while being human safe, similar to hay/alfalfa/timothy forage or veggies, or something like hot/warm mash horses get fed? I like sour flavors and mildly-sweet flavors, and I don't mind chewing at all. Stuff with herbal and vegetal flavors like spinach and celery and artichoke are a-ok in my book!
