Super Mario Odyssey contains unused files for a scrapped character known as "HomeMechanicNpc".
This would have been a mechanic living on the Odyssey who would be in charge of the ship's operations, and tell Mario about how many Power Moons the Odyssey needs (and presumably repair it during the story events when it crashes). In the finished game, there is no NPC for this and the Power Moon dialogue is seemingly automatic messages from the Odyssey's globe.
Above is the only known image that could be depicting this NPC, shown in extremely low quality at a 2021 Nintendo seminar about the game's development. The speech bubble lines up with unused mechanic dialogue about moons, so the portrait seen on the left of the speech bubble could be the mechanic.
Alternatively, this is merely some extremely old design of Cappy that was changed completely before the finished game, which is also notable even if it is not the lost mechanic NPC.

I was in a post-100% Super Mario Odyssey theme park and had to scan and unlock several Owl House style glyphs that were hiding in turns and corners in order to save this place.
