This is my attempt to import the Summoner class from Pathfinder into D&D 5e as a sorcerer variant/subclass. Much of it remains the same as the sorcerer, but the focus is on summoning and controling a bonded extraplanar entity, called an eidolon, which the Summoner controls in combat and shares a special bond. Customization of the eidolon is part of the fun, and the type of eidolon, relationship to your Summoner, and way of roleplaying the two of them is limited only by your imagination!
Because this is a variant class, metamagic is replaced by eidolon evolutions, though the mechanics are almost exactly the same. As a variant class, one is free to determine if charisma, wisdom, or intelligence is the best spellcasting ability that one has in mind for their character and eidolon.

Here she is! A new Variant Class, the sha'ir! The sha'ir is my second favourite class in older dnd (first place going to the binder) because of the interesting gameplay in its design.
In gameplay, it's a Variant wizard with vancian-esque casting with you calling upon individual spells throughout the day, while also being aided by your gen Familiar.
And in flavour, it's a fun mix of the elemental planes alongside some historical influences from Arabia
I'm a big fan of how it turned out. I think I got a good mix of taking what I liked from 3.5, while making it work in 5e, while adding a whole new layer of gameplay.
A fun developer note was turning the historically classic "tech" of the sha'ir shuffle into a true and proper game mechanic.
And yeah, the gens are a good bit stronger in this, turning the class into a companion/summoner archetype of sorts.

🔥🗻Elemental Summoner🌪🌊
This is a Wizard/Sorceror specialised in the summoning and binding of elementals. This character is capable of summoning and binding at 9th level Wizard, but adding 3 levels of sorceror and the metamagic adept to get 5 sorcery points potentially allows for double-bindings and making them harder to resist.
The preferred sorcerous origin is storm sorcery as it unlocks the primordial language to ensure communication with the summons, and the tempestuous magic is useful for getting out of tricky situations.
My preferred Wizard school is Evocation as it is useful to keep active without endangering allies, though Conjuration makes for undoubtedly stronger summoner at high levels, and Divination can help with binding thanks to portent.
Binding Elementals
A problem with Planar Binding your own Conjured Elementals is that they'll rage when you start casting Planar Binding as casting a spell over more than 1 action uses concentration (PHB, pg. 202). The conjured Elemental will remain hostile when bound causing minor disobedience and potential danger. To circumvent this it would be best to get another wizard or druid to cast Conjure Elemental so they can concentrate while Planar Binding is cast and that way the elemental shouldn't become hostile, though it still is DM interpetation as to whether or not Planar Binding extending the summoning spell to be a non-concentration duration is brraking concentration. Unfortunately you cannot chain Planar Bindings on a conjured elemental, unless you cast it at a higher level each time, as it only extends the duration of the original spell and doesn't resest it.
The two main metamagics this character uses are Heightened Spell which gives binding targets disadvantage on their saving throw, and Twinned Spell which allows for Planar Binding to target 2 elementals at a time saving greatly on costs. Though when using Twinned Spell and upcasting Planar Binding for longer durations more sorcery points may be needed, I am unsure if there's a clear rule on if upcast spells are higher level spells, if they are then more sorceror levels would be needed to take full advantage of Planar Binding. Unfortunately, Extended Spell can't be used as it can only extend spells to a maximum of 1 day.
Interesting Possibilities
A really interesting possibility with a bound earth elemental is to use the Fabricate spell to construct a palisade on top of it, like a battle talus from LoZ: ToaK. This works best with a small race though as you want to really avoid encumbering the elemental. The palisade provides cover from attacks and dex saving throw spells, so playing a rock gnome would protect from most other dangers. Unfortunately there are no rules for such a structure in dnd 5e so you would need to homebrew it's AC and HP with your DM.
Also you can play this character as a druid instead of a wizard with the Mark of Warding Dwarf, as it provides magic circle and the Druid spell list has Planar Binding and Conjure Elemental.

My dnd character, Eleanora De Albiana and her design!
Since Eleanora’s face is heavily scarred after her family is murdered, and those scars trigger flashbacks in Ellie, Ramiel (her Eidolon) gifts her a mask similar to his own.
Bonus size comparison between the two.
I did change their designs a bit, so as you can see, Ramiel gets these big ol antlers and Eleanora wears a simple dress
