What I like about stews and soups:
1. economics: take scraps/ left overs and small bits that don’t make up much for one person and create nutritional food for many.
2. put it together and simmer it on the back burner
a. saving time;
b. making the house smell homey;
c. ready at different times for those leaving early or stragglers coming home later;
d. warming on a chilly day/night.
3. can last for more than one night
a. as it ages, it develops richer/better taste.
4. can be served as meal alone or precursor to bigger meal.
5. travels well (in thermos or jar).
6. can be popped in the freezer for another time.

Braised Ox Cheeks With Sherry & Carrots
Heat a layer of rapeseed oil in a large casserole. Gently fry 500 g baby carrots (cut in half lengthwise) until they start to colour. Remove and set aside.
Fry 1.5 kg ox cheeks cut into bite-sized chunks, in batches, till browned all over. Add more oil as required. Remove and set aside.
Add 2 onions and 3 celery sticks finely chopped, and fry on a medium heat till tender.
Add 2 bay leaves, a few sprigs of rosemary, 4 garlic cloves, finely chopped, and 1 tsp whole black peppercorns. And then the ox cheeks. Pour over 500 ml Palo cortado sherry (or manzanilla), bring to a boil, and then let bubble for 5 minutes.
Add 500 ml beef stock and reduce to a simmer. Cover and cook for 2.5 hours until the meat is tender. Return the carrots to the pan and cook gently until the sauce has reduced.
Serves 6 - 8 people

There is this amazing recipe I have found on pickledplum.com. Its worth to be tried for more then one time and I will for sure make this again. The stew is creamy,mushroomy and tastes like heaven even tho I did not liked the smell when my mushrooms been boiling in broth and it's tasty when its ready,after half an hour of boiling.
