Had such a FFF (fun & fitness filled!) weekend with the ladiess! What I absolutely love about vegan cooking is that you’re prompted to think outside the box. You learn all the cool functions of plant-based ingredients that can suffice or even exceed the original properties of non-vegan recipes! 🧀🍗🥚👍 One prime example is this plethora of vegan pastas made by the kitchen team of the @cpfoodscienceclub: here we have vegan mac n’ cheese and vegan and gluten free kale pesto pasta with sun-dried tomatoes and olives! Both of these dishes were superb and I can’t really decide which one I liked better! 😋🥗🍅💛❤️💚 Personally, I haven’t been too crazy about pasta, but now I want to explore all kinds of pasta dishes! It’s been a hot minute since I’ve had pizza...but can you really resist pizza? While the red marinara pizza is the only explicitly vegan option at the @midici restaurant near me, it’s absolutely fantastic. 😍🍕❤️ There was also a house salad of mixed greens and cherry tomatoes in a balsamic vinaigrette (sans cheese), because health, you know? 🥗 Also, I’ve been taking the most days off of the gym in the longest time. So far it’s been two days without working out and I haven’t noticed a huge difference in energy levels and physical composition. Today, I decided to go makeup free, both because I had no time to do so and there’s really no point in applying makeup to go out only once for a final exam and then come home to remove it all. 👁💄 I was curious to see if people would treat me differently, especially those I don’t see very often. Somewhat surprisingly, everybody treated me the same way. 🤷🏻‍♀️ I’m really grateful to be surrounded by people who look beyond the surface and don’t think twice about judging someone based on exterior. Sure, I might not have looked as presentable, but I realize that it’s absolutely fine to choose to be a little lazy with your appearance! Ultimately, you have to dress to impress YOURSELF and not others. 👍💃🏻 I personally think I look better with makeup, but there’s not such a huge difference. I still try to love myself either way, and if you wear makeup regularly, you should too! ☺️💞 Pictured is a bowl of cauliflower spinach rice with a @boca.burger vegan veggie patty: basically how I make vegetables taste good! I like to season my vegetables with tons of spices, a little salt, Sriracha, and sometimes I get fancy and use lemon juice, tamari, or nutritional yeast! 🍚🥗🌿 Lately I’ve been eating this for dinner every night and it seriously hits the spot. In general, I’m not super hungry at night so my dinners aren’t that big, but I always save room for dessert.
